MEAT LOAF
Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Steps:
- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.
THE BEST MEATLOAF
We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

- Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
- Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
- Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
- Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
- Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.
CLASSIC BEEF MEATLOAF

- Preheat oven to 350 degrees F and line a rimmed baking sheet with foil, set aside.
- In a large bowl add ground beef, cubed bread, eggs, milk, chopped onion, chopped celery, Worcestershire sauce, kosher salt, poultry seasoning, and black pepper.
- Using your hands, mix all the ingredients together until well combined. Because the meat is cold I usually have to take a few breaks to warm my hands up while mixing. You can also use a silicone spatula BUT I think it gets better mixed by hand.
- Once your meat is mixed place it on the baking sheet and form into a loaf. I usually make my loaf about 6 inches wide by 12 inches long.
- Add to the preheated oven and bake for 45 minutes.
- While the meatloaf bakes mix together ketchup, dark brown sugar, and light Karo syrup.
- After an hour of baking remove the meatloaf, top with ketchup mixture, and place back into the oven.
- Cook for another 15 minutes or until the meatloaf is fully cooked (it should feel firm) and the ketchup mixture on the top has started to bubble.
- Remove from the oven, let rest for 5 minutes, slice, and enjoy.

NANCY'S MEATLOAF
Steps:
- Preheat the oven to 350 degrees F.
- Mix all ingredients except ketchup together in a large bowl until just combined. With your hands, form 20 individual football-shaped loaves. Place loaves in a large cake pan or baking sheet. Spread a layer of ketchup, as thick as desired, over each loaf. Bake for 45 minutes to 1 hour, until fully cooked through.
MOM'S FAMOUS MEATLOAF
Yeah, I know...there's tons of meatloaf recipes out there, but I bet this is one of the easiest ones with lots of taste out there! I got this from a Kraft recipe booklet I got in the mail that I've tweaked a bit and it's pretty simple yet yummy.

- Heat oven to 375 degrees.
- In bowl, mix all ingredients except for 1/4 cup of the BBQ sauce. I use Sweet Baby Ray's.
- Line glass cake pan with tin foil.
- Put meat mixture into pan and shape into a loaf.
- Cover loaf with rest of BBQ sauce.
- Bake for 1.5 hours or until there's an internal temperature of 160 degrees.
- I usually make this and freeze it for members of my church who are sick and need help with cooking, so if it is frozen, it will need to be put in the oven (about the same temp.) for around 30-40 minute.
BEV'S FAMOUS MEATLOAF
Found this in Southern Living and it was the first meatloaf I ever made that did not fall apart. It makes a huge one so be prepared for many leflovers if you have an average size family.

- Preheat oven to 350 degrees.
- Combine first 7 ingredients and 1/4 cup brown sugar in a medium bowl until just blended.
- Place mixture in lightly greased 11x7 baking dish. Shape into a 10x5 loaf.
- Bake for 1 hour.
- Remove from oven and drain.
- Stir together ketchup and 1/4 cup brown sugar. Pour over meatloaf.
- Bake 15 minutes more or until thermometer reads 160 degrees.

- Mix crumbled bread with milk and let sit till all moisture is absorbed.
- Beat egg and add to bread mixture.
- Mix in minced onion.
- Add ketchup and meat gradually to blend all together. Season with salt and pepper.
- Do not overmix and it will become too dense.
- Lightly mixing keeps it moist and juicey.
- Form into a meatloaf shape and place in 9x13 baking pan. Pour water around meatloaf and bake at 350 degrees for 45 minutes
- The water will cook away and you will have nicely browned and moist meatloaf.
NANNY'S FAMOUS MEATLOAF
