CLASSIC POUND CAKE
This Classic Pound Cake recipe uses only 4 simple ingredients that all weigh in at 1 pound each to create a traditional butter cake that is perfect topped with strawberries and whipped cream!

Steps:
- Preheat oven to 350°F. Coat a 10- cup bundt pan liberally with nonstick spray and set aside.
- In the bowl of your stand mixer fitted with the paddle attachment mix the butter and sugar together for 2 minutes until light and fluffy.
- Add the eggs, one at a time, mixing until combined, scraping the sides as needed.
- Turn the mixer to low and add in the flour slowly until combined, again scraping the sides to ensure everything is combined evenly.
- Spread the batter into the prepared pan and bake for 70-80 minutes, or until a knife inserted comes out clean. If you notice it is browning too much on the top, tent with foil.
- Allow the cake to cool in the pan for about 20 minutes and then release onto a wire rack to cool completely.

NANY'S WHITE CAKE
This is a cake recipe by my beloved Great Grandmother! She was a master in her time. She grew up during the depression and made up lots of recipes cooking for her large family. This cake is wonderful! I serve it with frosting or whip cream and berries. Enjoy!

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8 or 9 inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. Combine the flour, baking powder and salt; stir into the batter alternately with the milk. Stir in vanilla. Distribute batter evenly between the prepared pans.
- Bake for 25 to 30 minutes in the preheated oven, until the cake springs back when pressed gently in the center. Cool in pans over a wire rack. When completely cooled, frost or fill as desired.

- 1. Cream butter and sugar very well - this is the secret to the success of the cake. Then reduce speed on the mixer and add eggs, one at a time. Add flavoring, then flour a little at a time. Put in cold oven; turn on oven to 300 degrees and bake 1 hour or until spaghetti noodle stuck into center of cake comes out clean.
NANNY'S EASY POUND CAKE
Steps:
- Preheat oven to 325 degrees F. Mix all ingredients together in bowl with electric mixer for 2 minutes on medium high.
- Pour into greased bundt pan.
- Bake in oven for 50 minutes to 1 hour. Cake is done when toothpick comes out clean. Invert onto plate, cool slightly. Sprinkle sifted powdered sugar onto top of cake.

She obliged, and to this day, I always use Nannie's recipe because it is a plain and simple butter cake which is just the right size for a small family. - 1. Cream butter together with sugar till light and fluffy.
- 2. Add eggs one at a time and mix well on each addition.
- 3. Add vanilla extract.
- 4. In a separate bowl, sift flour together with salt and baking powder. Add these dry ingredients to the butter/egg mixture alternately with the milk.
- 5. Butter and flour a 9x5x2 1/2 inch loaf pan and bake at 350 degrees F for about 1 hour or until a knife inserted comes out clean. To check your loaf pan size, measure inside side to side. Serve with whipped cream or plain as Nannie did.

- Grease bottom and sides of 3 (9-inch) round cakepans; line bottoms with wax paper. Grease and flour wax paper.
- Drain pineapple, reserving 3/4 cup juice. Remove 1/4 cup reserved juice for Cream Cheese Frosting, and reserve crushed pineapple for Pineapple Filling.
- Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well. Add eggs, 1 at a time, beating until blended after each addition.
- Combine 1/2 cup reserved pineapple juice and soft drink. Add flour to butter mixture alternately with juice mixture, beginning and ending with flour.
- Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Remove from pans immediately; cool on wire racks.
- Spread 3/4 cup Pineapple Filling between cake layers and remaining filling on top of cake. Spread Cream Cheese Frosting on sides of cake; pipe border around top, if desired.
- *For lemon-lime soft drink, we used 7-Up. Its specific level of carbonation makes the layers rise beautifully.
