FRUITY ICE WREATH



Fruity Ice Wreath image

If you're serving punch for a party, keep it chilled -- and flavorful -- with a fruity ice wreath. The wreath can be stored in the freezer, wrapped in plastic, up to 1 month.

5 oranges, thinly sliced
2 lemons, thinly sliced
1 1/2 cups whole cranberries
1/4 cup fresh rosemary sprigs
3 cups cranberry-juice cocktail

Steps:

  • Overlap oranges, lemons, cranberries, and rosemary sprigs in a 10-inch Bundt pan; add 3 cups water and cranberry-juice cocktail. Freeze overnight. To unmold wreath, dip pan in a bowl of hot water until edges just start to melt. (Don't let the water come up over the top.) Remove and turn out onto a plate.

Steps:

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste. Let cool.
  • Heat 1/2 cup cranberry juice over low heat, then stir in a 1/4-ounce packet gelatin. Puree cooled cranberry sauce with another 1/2 cup cranberry juice, then add the gelatin mixture. Pour into a mold or empty soup cans and refrigerate overnight. Serve with whipped cream.

2 1/4 cups cranberry juice cocktail
1 box (0.6 oz.) sugar-free cranberry gelatin (recommended: Jell-O)
3/4 cup orange flavored vodka
1 (16-ounce) can whole berry cranberry sauce (recommended: Ocean Spray)
2 tablespoons orange zest
1/2 cup chopped pecans
Fresh cranberries and mint sprigs, for garnish

Steps:

  • In a medium saucepan, bring the cranberry juice to a boil. Transfer to a medium mixing bowl and pour in the gelatin. Stir until gelatin is completely dissolved. Stir in vodka. Chill 1 1/2 to 2 hours in the refrigerator until it begins to set. Stir in remaining ingredients. Divide into 12 (4-ounce) molds. Refrigerate at least 4 hours to set.
  • Remove from molds by first running the tip of a sharp knife around the edge of the mold to loosen side. Then dip the bottom of mold in a bowl of warm water. Invert onto a plate. Serve garnished with fresh cranberries and a sprig of fresh mint

My dear longtime friend Betty Rhea shared this recipe with me, and is letting me share it with you all. This was the recipe her Grandmother and her family used. It is easy and delicious.

12 ounce(s) pkg. of fresh cranberries
2 cup(s) water
2 cup(s) sugar

Steps:

  • Bring water to a boil, add cranberries and boil just until the berries start to pop. Turn heat down to a low boil, add sugar, and boil for 20 min. more.
  • Strain through a food mill or seive. Place in mold or jars and refrigerate.

2 cups water
3/4 cup sugar
3 cups fresh or frozen cranberries
1 package (6-serving size) raspberry-flavored gelatin
1 can (8 ounces) crushed pineapple in syrup, undrained
1 medium stalk celery, chopped (1/2 cup), if desired
1/2 cup chopped walnuts, if desired
Salad greens, if desired

Steps:

  • Heat water and sugar to boiling in 2-quart saucepan, stirring occasionally; boil 1 minute. Stir in cranberries. Heat to boiling; boil 5 minutes, stirring occasionally. Stir in gelatin until dissolved. Stir in pineapple, celery and walnuts.
  • Pour into ungreased 6-cup mold, 8 individual molds or stemmed goblets. Cover and refrigerate at least 6 hours until firm. Unmold onto salad greens. Garnish with celery leaves and additional cranberries, if desired.

Nans Cranberry Sauce is a staple on Ree's Thanksgiving table.

Three 3-ounce packets cranberry flavored gelatin
Two 14-ounce cans whole cranberry sauce
One 8-ounce can crushed pineapple, drained
8 ounces cream cheese, at room temperature
1/4 cup powdered sugar
1/4 cup whole milk
1 orange

Steps:

  • Bring 2 cups of water to a boil, then remove from the heat. Stir in the gelatin until completely dissolved, 1 to 2 minutes. Add 1 cup cold water, the cranberry sauce and pineapple. Mix well, ensuring you break apart any large chunks of the cranberry sauce. Pour into a 9-by-13-inch pan. Cover and place in the refrigerator until firm, 3 1/2 to 4 hours.
  • Beat together the cream cheese and powdered sugar with a hand mixer until smooth, about 1 minute. Add the milk and mix until completely combined. The frosting should be thick but still pourable. Carefully spread the cream cheese frosting in a thin layer over the cranberry sauce. Zest the orange directly over the frosting. Serve up in individual squares.
