I don't know who Nancy is, but I have been making this banana bread for about 20 years! I think I got it out of an old cookbook, but it is a super moist banana bread. The key is using bananas that are turning black.

Number Of Ingredients 7

3 bananas, overripe
1/2 cup sugar
1/2 cup butter
1 egg
1 1/2 cups flour
1 teaspoon baking soda
salt

Steps:

  • Mash bananas in a large bowl.
  • Add sugar and mix well.
  • Cut in butter.
  • Add egg and beat slightly.
  • In a separate bowl, mix together flour, baking soda and a dash of salt.
  • Gradually add to banana mixture.
  • Pour into a well-greased loaf pan.
  • Bake in a preheated 350 oven for 45-55 minutes.
  • A toothpick inserted should come out almost clean.

Get ready for the very best banana bread recipe! It's super moist, light and just the perfect amount of sweet. You can make one loaf to eat and one to freeze for later, or give as a gift to a friend.

1 c of butter, softened
1 1/2 c sugar
4 eggs
1 c buttermilk, room temp
2 tsp vanilla extract
8 ripe bananas, mashed
4 1/4 c flour
1 tsp kosher salt
1 tsp baking soda
2 tsp baking powder
1/2 tsp cinnamon

Steps:

  • Preheat the oven to 325
  • Beat the butter and sugar together until light and creamy
  • Add in the eggs, one at a time, blend well
  • Stir in the buttermilk, vanilla and mashed banana
  • In a separate bowl sift together the flour, salt, baking powder, baking soda and cinnamon
  • Add the dry ingredients to the wet ingredients and stir to combine (low speed or use a spoon until just combined)
  • Grab two loaf pans
  • Line them with parchment paper (alternatively you can butter and flour your loaf pans)
  • Pour an even amount in to each pan
  • Bake for 65-75 minutes, turn the pans 180 degrees in the oven half way through cooking (so turn once the first 35 minutes have passed)
  • Use a toothpick to check for doneness, center should come out clean, if it is still gooey continue cooking in 5 minute increments
  • Remove from the oven, rest 10 minutes, transfer to a wire rack to cool
  • Serve with butter, while the banana bread is still warm!

3/4 cup sugar
1/4 cup canola or vegetable oil
3/4 cup buttermilk
2 teaspoons vanilla
1 egg
1 cup mashed very ripe bananas (2 medium)
2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup dried banana chips, chopped
2 cups Oatmeal Crisp® Almond cereal, slightly crushed
1/2 cup Oatmeal Crisp® Almond cereal, crushed
2 teaspoons sugar
2 teaspoons canola or vegetable oil
Reserved 2 tablespoons banana chips

Steps:

  • Heat oven to 350°F. Spray bottom only of 9x5-inch loaf pan with cooking spray. In large bowl, beat 3/4 cup sugar and 1/4 cup oil with electric mixer on low speed until well mixed. Beat in buttermilk, vanilla and egg just until blended; beat in bananas.
  • With spoon, stir in flour, baking soda and salt just until blended. Set aside 2 tablespoons chopped banana chips for topping. Stir remaining banana chips and 2 cups cereal into flour mixture. Spoon into pan; spread evenly. In small bowl, mix topping ingredients until crumbly. Sprinkle over batter in pan; pat lightly onto batter.
  • Bake 1 hour to 1 hour 10 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool completely, about 2 hours, before slicing.

In my opinion, this is the absolute best banana bread out there. I got it through a mail order recipe club called "Grandma's Kitchen". It is so easy to make, and it seems like everyone always has some ripening bananas that they're trying to get rid of!

5 tablespoons butter
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 large egg
2 egg whites
1 teaspoon vanilla extract
2 ripe mashed bananas
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup heavy cream
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees, and spray bottom of a 9 inch round pan with non-stick cooking spray.
  • Beat butter in a large bowl with an electric mixer until light and fluffy.
  • Add granulated Sugar and brown sugar; Beat until well blended.
  • Add egg, egg whites and vanilla; blend.
  • Mix in the mashed bananas, and beat the mixture on high speed for 30 seconds.
  • In a separate bowl, combine flour, baking soda, salt and baking powder.
  • Add flour mixture to butter mixture alternately with the cream, ending with the flour mixture.
  • Mix in the walnuts.
  • Pour batter evenly into prepared 9 inch round pan (or loaf pan).
  • Bake until golden brown, and toothpick inserted near the center comes out clean (About one hour).

Steps:

  • Heat oven to 350°F.

Plus ..I have a freezer full of frozen bananas with the skin on ,for future baking! This is a delicious bread, moist and not to sweet. no frosting but....bursting with banana flavor!
