NANCY'S QUICK QUICHE



Nancy's Quick Quiche image

A flexible recipe - you can use with whatever you like or have available. I double the recipe below and freeze (in 2 batches) to pull out for a quick meal during the week. I use a refrigerated 9" pic crust (rolled up)

Number Of Ingredients 7

1 pie crust
1/2 lb turkey sausage
1/2 bell pepper, diced
1/2 small onion, diced
6 large eggs
4 cups cheese
3/4 cup milk

Steps:

  • Preheat oven to 350. Line a cookie sheet with tinfoil (in case it bubbles over when cooking).
  • Line a 10" pie dish with the pie crust. If you prefer - you can use a frozen 9" pie crust but make sure it is "deep dish".
  • Brown sausage and then saute veggies until soft.
  • Whisk eggs and milk then add the meat, veggies and cheese. Pour all into the pie crust.
  • Bake uncovered 60 minutes until it firm in the center. Let it sit/rest 10-15 minutes before serving.

AUNT NANCY'S FAMOUS HOT CHEESE DIP

This has been my go-to potluck recipe for years! I'm not allowed to enter my friend's parties without it! It's always gone by the end of the night. It's super easy to make, and only dirties one dish. The flavor of the onion and green chilies with the cheese is mild yet savory. Serve with tortilla chips or Doritos.

2 cups sharp cheddar cheese, shredded
2 cups mozzarella cheese, shredded
2 cups mayonnaise (can be reduced to 1 cup if desired)
1 medium onion, minced
1 (4 ounce) can diced green chilies, drained
1 (4 ounce) can sliced black olives, drained (optional)
sliced pepperoni

Steps:

  • Preheat oven to 325 degrees.
  • In a casserole dish (you can use 8x8 to 9x13 sizes), mix together cheese, mayonnaise, onion, and green chilies. Spread evenly in dish.
  • Top with sliced pepperoni (I usually place with the edges touching but not overlapping) and sliced black olives (optional).
  • Bake at 325 degrees for 25-30 minutes or until cheese is melted and bubbling around the edges.
  • Serve hot with tortilla chips or your favorite dippers.

NANCY'S CHICKEN IN PUFF PASTRY

Chicken breasts with herbed cream cheese, wrapped in puff pastry and baked. A very easy but delicious dish, good for company! This recipe is derived from a dish my mother-in-law makes.

1 tablespoon vegetable oil
salt and pepper to taste
4 (4 ounce) skinless, boneless chicken breast halves
1 (8 ounce) package cream cheese with chives
4 puff pastry shells

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
  • Heat vegetable oil in a large skillet over medium heat. Sprinkle chicken breasts with salt and pepper, and place in hot oil; cook for 5 minutes, turning to brown evenly. Remove skillet from heat.
  • Roll out pastry shells as thinly as possible so that it is big enough to fit around a chicken breast. Spread 2 ounces of cream cheese on one chicken breast, place in the center of a pastry sheet; fold the pastry around the chicken, and pinch the pastry edges together very tightly to seal. Repeat with remaining ingredients. Place the pastry-wrapped chicken breasts on a greased baking sheet.
  • Bake for 12 to 15 minutes, until golden brown.

2 cups butter flavor shortening
2 cups brown sugar, packed
2 eggs
1 teaspoon vanilla
2 cups flour
2 cups oats
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
2 cups semi-sweet chocolate chips
1 1/3 cups butterscotch chips
2 cups pecan halves

Steps:

  • heat oven to 375. Grease cokie sheets. Cream shortning and sugar. blend in eggs and vanilla. Combine flour, oats, salt and cinnamon. add gradually to creamed mix. Stir in chips and nuts. Drop 3 inches apart on cookie sheets. bake for 12 to 15 minutes. Cool.
