MOCK CHOPPED " LIVER " ( LENTILS )



Mock Chopped

This recipe was given to me by my mother. The kids enjoy it, and it is perfect for serving on crusty bread.The cook time is including the chill time.

1 cup dried lentils
2 cups chicken broth
1 medium yellow onion, chopped
1 tablespoon vegetable oil
1 cup walnuts, lightly toasted
1/4 teaspoon salt
1/2 teaspoon pepper
chopped green onion
baby leaf lettuce

Steps:

  • Bring chicken broth and lentils to a boil in large pan.
  • Cover and reduce heat to simmer.
  • Stir occasionally for 30 minutes or until tender.
  • Drain if necessary.
  • Saute chopped onions in hot vegetable oil over heat for 5 minutes or until tender.
  • Process 1/3 of lentils, 1/3 of onions and 1/3 of walnuts in food processor in 3 batches until mixed smooth.
  • Stir mix with salt and pepper.
  • Line a 3 cup mold with plastic wrap.
  • Put mixture in mold.
  • Chill for 8 hours, unmold onto baby leaf lettuce.
  • Garnish with green onions and serve on crackers and celery sticks.

CHICKEN LIVER MOUSSE MIRABELLE

1 pound chicken livers
Salt and freshly ground black pepper
1 teaspoon Quatre Epices (recipe follows)
1 tablespoon grapeseed oil
4 sage leaves
2 shallots, sliced
1 garlic clove, sliced
1 teaspoon fresh thyme leaves
1 tablespoon Cognac
1/3 cup port
1/3 cup marsala
8 ounces unsalted butter, softened
3 tablespoons black peppercorns
1 tablespoon grated nutmeg
2 tablespoons ground cinnamon
2 teaspoons whole cloves

Steps:

  • Clean the chicken livers of any bile residue, cut out the nerves, and season them with salt and pepper and the quatre epices.
  • Put the grapeseed oil into a large hot skillet and add the livers, sage, shallots, garlic and thyme. Toss the mixture well and cook over moderately high heat until the livers are medium rare. Add the Cognac, flambe the mixture, tossing it well, and transfer it to a sieve set over a bowl and refrigerate the mixture for 1 hour.
  • Add the port and marsala wines to the skillet and deglaze the pan, stirring well. Reduce the liquid by three-fourths and transfer to a small bowl.
  • When the livers are cold, transfer them to a food processor fitted with a steel blade. Add the reduced wine and softened butter and pulse to combine. Taste for seasonings.
  • Force the mixture through a fine mesh sieve, transfer it to a small terrine lined with plastic wrap and refrigerate, covered with plastic wrap. The mousse is ready to serve when it is fully chilled.
  • Serve the mousse with cornichons and toasted sliced French bread. The mousse makes a perfect hor d'oeuvre for cocktails.
  • In a spice or coffee grinder, grind the spices to a powder and store it in a small sealed container.

2 cups water
1 cup lentils
2 cubes chicken bouillon
1 teaspoon extra virgin olive oil
1 large onion, chopped
1 cup walnuts
salt and pepper to taste

Steps:

  • Place water, lentils, and bouillon cubes in a pot. Cover pot and cook about 30 minutes or until tender. Drain well.
  • Heat oil in skillet, saute onion until it becomes translucent.
  • In an electric food processor, grind lentils, onions and walnuts until your desired consistency for the pate is reached. Season to taste with salt and pepper. Chill before serving.

2 medium onions, cut in two and thinly sliced
2 tablespoons extra virgin olive oil or butter, more as needed
Salt
freshly ground black pepper
1 sprig fresh rosemary, finely chopped
1 cup button mushrooms, cleaned, trimmed and sliced
4 uncooked chicken livers (see note)
2 tablespoons sherry vinegar or other, or more to taste
Crusty bread or toast for serving

Steps:

  • Put onions in a large skillet over medium heat. Cover and cook, stirring infrequently, until onions are dry and almost sticking to pan, about 20 minutes.
  • Stir in a tablespoon of oil or butter and a large pinch of salt and a few grindings of black pepper, add rosemary and turn heat down to medium-low. Add mushrooms and cook, stirring occasionally, until mushrooms release their liquid and it evaporates, about 15 minutes more. Remove vegetables from pan; set aside.
  • Wipe pan with a paper towel, put it over medium-high heat and add remaining oil or butter. When oil is hot or foam from butter has subsided, add chicken livers. Keep heat high and cook livers quickly, turning them until brown and crisp on both sides but still pink on inside, about 3 or 4 minutes total. Remove from pan.
  • Return vegetables to pan along with vinegar and 2 or 3 tablespoons water, just enough to deglaze; stir well to combine and serve with livers and crusty bread, or on toast.

2 pounds chicken livers
1 cup rendered chicken fat
2 cups medium-diced yellow onion (2 onions)
1/3 cup Madeira wine
4 extra-large eggs, hard-cooked, peeled, and chunked
1/4 cup minced fresh parsley leaves
2 teaspoons fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Pinch cayenne pepper

Steps:

  • Drain the livers and saute them in 2 batches in 2 tablespoons of the chicken fat over medium-high heat, turning once, for about 5 minutes, or until just barely pink inside. Don't overcook the livers or they will be dry. Transfer them to a large bowl.
  • In the same pan, saute the onions in 3 tablespoons of the chicken fat over medium-high heat for about 10 minutes, or until browned. Add the Madeira and deglaze the pan, scraping the sides, for about 15 seconds. Pour into the bowl with the livers.
  • Add the eggs, parsley, thyme, salt, black pepper, cayenne, and the remaining chicken fat to the bowl. Toss quickly to combine. Transfer half the mixture to the bowl of a food processor fitted with a steel blade. Pulse 6 to 8 times, until coarsely chopped. Repeat with the remaining mixture. Season, to taste, and chill. Serve on crackers or matzo.

Although I love chopped chicken liver, I know it's not good for you. This is a recipe I first had at my friend's house and I did not know it 'wasn't' real chicken liver until I told her how delicious it was and she confessed. Servings are approximate (I could eat 1/2 of it).

2 large sweet onions, chopped
2 tablespoons oil
1 cup walnuts, chopped
1 (15 ounce) can le seuer peas, drained
1 hard-boiled eggs or 2 egg whites
salt and pepper, to taste

Steps:

  • Saute' the onions in the oil till browned, but'not' burned.
  • Put the walnuts in a processor and process till fine.
  • Take the walnuts out of the processor and set aside.
  • To the processor, add the peas, 1/2 of the cooked onions and the egg.
  • Process till smooth.
  • Add the remaining onions and the walnuts and mix well.
  • Add salt and pepper, to taste.
  • Notes:.
  • Better the second day.
  • Freezes well.
