My Polish grandmother never used recipes. This so simple dish was the most difficult to duplicate because of it's simplicity. There are versions of this in Polish cookbooks using bread crumbs but they lacked the slightly sweet, butter baked flavor of cracker crumbs that accent the mild taste of the yellow beans. I haven't posted this recipe before because it sounds "too simple" but it's one of my most favorite!

Number Of Ingredients 4

1 1/4 lbs fresh yellow wax beans
2 tablespoons butter
1/4 cup crushed Ritz crackers or 1/4 cup townhouse cracker (about 6 crackers)
salt & freshly ground black pepper

Steps:

  • Cook beans in salted boiling water until soft (not crispy) tender and drain.
  • Add butter and mix until butter melts.
  • Add cracker crumbs, salt and pepper, stir to combine and serve.

Yield 1 side dish, 4 serving(s)

Number Of Ingredients 6

1 teaspoon coarse salt, plus more for seasoning
1 lb string bean, stem ends trimmed
2 teaspoons vegetable oil
1 teaspoon brown mustard seeds
1 small yellow onion, peeled and thinly sliced into rounds (about 4 ounces)
2 teaspoons minced ginger (approx. 1/2-inch piece)

Steps:

  • Fill a large bowl with ice and water.
  • Bring a pot of water to a boil, and add 1 teaspoon salt and string beans. Cook until bright green, about 3 minutes, and drain into a colander.
  • Transfer to ice bath to stop cooking, drain again, and set aside.
  • Place a large skillet over high heat, and add oil.
  • When very hot, add mustard seeds, and cook until seeds begin to pop, about 30 seconds.
  • Add onion, and cook, stirring until they begin to brown, 3 to 4 minutes.
  • Add ginger, and cook 1 minute more.
  • Add reserved string beans, and cook, stirring until hot.
  • Season with salt to taste.

ROASTED STRING BEANS

Here is a delicious side dish that goes great with steak. The shallots and garlic start to caramelize adding a depth to the dish. These green beans certainly are not your typical beans. If you really want to add something to dish roast some cherry tomatoes along with the beans, they add a great burst of flavor. I hope you enjoy!

1 lb string bean, trimmed and washed
2 shallots, sliced
3 garlic cloves, sliced
1/4 cup extra virgin olive oil
3 slices bacon, crisped and crumbled (optional)
salt and pepper, to taste

Steps:

  • Cook bacon.
  • Preheat oven to 350 degrees.
  • Wash and trim string beans.
  • Slice shallot and garlic.
  • Combine all ingredients, except bacon, in a baking dish and toss well. Make sure everything is evenly coated evenly.
  • Place in oven and cook for about 20 minutes, if you like a more tender bean cook for 25 minutes.
  • When beans are done place in serving dish and toss with crumbled bacon.
  • Serve hot.

10 ounces green beans
10 ounces yellow wax beans
2 granny smith apples
1/2 cup walla walla onion, cut into crescents (my addition) (optional)
1/3 cup sliced almonds, toasted
mache or boston lettuce
Belgian endive
1/2 cup grapeseed oil
1 lemon, juice of
1 teaspoon grated fresh ginger
salt
pepper
4 tablespoons lemon juice
1/3 cup grapeseed oil
1 tablespoon sesame oil
2 tablespoons rice vinegar (either regular or seasoned)
2 tablespoons soy sauce
1 tablespoon brown sugar

Steps:

  • In a non-reactive bowl, combine the vinaigrette ingredients of your choice and whisk well. Best prepared 1 hour in advance.
  • In a clean, dry cast iron skillet, lightly toast the almond slices and allow to cool.
  • Cut the tips off both ends of the string beans; cook beans uncovered in boiling lightly salted water until crisp-tender.
  • Once the beans are cooked, drain and immerse immediately in cold water to halt the cooking process. Drain again. Set aside.
  • Peel the apples; seed, core and cut into strips.
  • Combine the vinaigrette, beans, apples, (onions if using) and almonds in a non-reactive salad bowl. Chill until ready to serve.
  • If desired, the salad can be served on a bed of mache or Belgian endive.
