NANA'S SLOW COOKED MEATY TOMATO SAUCE
Although my grandma was Danish, she was famous for her slow-cooked Italian tomato sauce. It cooks a long time, but is well worth the wait.

Steps:
- Heat a large skillet over medium-high heat and stir in Italian sausage, ground beef, onion, and garlic. Cook and stir until the meat is crumbly, evenly browned, and no longer pink, about 15 minutes. Use a potato masher to mash and blend the meat mixture every few minutes. Drain and discard any excess grease.
- Stir in diced tomatoes, tomato paste, tomato sauce, chicken broth, red wine, Italian seasoning, basil, salt, and black pepper.
- Transfer the sauce to a slow cooker and cook on low for 6 to 8 hours.

NANNY'S SPAGHETTI SAUCE
This is my Sicilian great-grandmother's recipe. I've never tasted better. Serve with meatballs and Italian sausage; it's also terrific as a marinara sauce.

- In a large skillet combine the crushed tomatoes, tomato paste, tomato sauce, garlic, sugar, vinegar, oregano and red pepper flakes. Stir all together and simmer over low heat for at least 30 minutes (for the best flavor). Stir frequently to prevent burning.

This was my Mom's special "gravy" as we Italians call it Spaghetti Sauce. It has been passed down now for 60 years and is still a favorite among my family.

Steps:
- 1. Prepare hamburg, add chopped Garlic, Parmagian Cheese, Salt, Pepper, 3 eggs, 1/4 cup of Italian bread crumbs and one slice of italian bread dipped in milk (squeeze out excess) and mix in with hamburg. (remove your rings) Mix all together and form medium size balls. Set aside.
- 2. In large non-stick frypan add olive oil to cover bottom of pan and fry meatballs on low heat until both sides are browned. Put meatballs aside, disgard used oil.
- 3. In large non stick pot, put 4 tlbs of oilve oil on bottom of pan and brown garlic on low heat. Add 2 cans of Flotta Paste with equal amounts of water. Stir, cook till smooth. Add 1 can of Kitchen Ready Tomatoes (crushed) and 3/4 can of water. Add Bay leafs and pinch of salt and 1/4 tsp of sugar. Add meatballs gently and Simmer for 1 hour on low heat. You can add fresh chopped Mushrooms if you like. Do not boil.
- 4. Serve with your favorite Pasta! Manga!
NANA'S BEST SPAGHETTI SAUCE
This sauce is my nana's version and the best I have ever tasted! I get quite a few requests to make it from friends and family.

- Brown onion and green pepper in a large skillet in a small amount of oil.
- Add ground beef to the onion and green peppers; cook until brown.
- Carefully drain the hamburger mixture and return to the skillet.
- Add the tomato sauce, onion salt, salt, garlic salt, oregano, ketchup, Worcestershire sauce, Heinz 57 and Italian seasoning.
- Stir well and simmer on low heat for 2-3 hours.
- Serve over your favorite pasta with garlic bread and a salad.

- Heat oil in pot. Add garlic, parsley, basil, oregano, bay leaves. Simmer for a few minutes until fragent. Add crushed tomatoes, tomato paste and 3 cans water (use crushed tomato cans). Stir. Bring to a boil. Add salt, cinnamon and sugar. Add ¾ cup more water and stir. Simmer partially covered 1 hour. Cook until dark red. Add water if to thick. When done, skim all but 1/8" of oil off the surface. Boil spaghetti in salted water until al dente. Serve covered with sauce

- Set a heavy-bottomed 6 quart sauce pot over medium heat. Add the butter and onions. Stir and soften the onions for 5-8 minutes. If they start to brown, turn the heat to medium-low.
- Stir in the garlic and sauté another 2 minutes. Then add in the ground sausage, ground beef, and dried oregano. Cook and break the meat into small pieces with a wooden spoon. Once the meat pieces are well browned, stir in tomato sauce and crushed tomatoes.
- Cover and simmer for 30-60 minutes, stirring occasionally. (As long as it simmer for 30 minutes it’s ready. However, you can let it simmer as long as you like.)
- Stir in the fresh chopped basil. Taste, then salt and pepper as needed. If the meat sauce tastes too acidic, stir in 1-2 tablespoons sugar.

- Bring at least 1 gallon water to a boil in a large pot. Season the water with 2 tablespoons salt. (A large pot with plenty of water helps to keep the pasta from sticking, and the salt helps season the pasta and create a chewy yet tender al dente texture.) Add the pasta to the water, fanning it out. Give it a stir, then return the water to a boil and cook until the pasta is tender yet chewy when you bite into a piece, 8 to 10 minutes. Stir occasionally with tongs to prevent sticking. Strain in a colander. The sauce will cling to the pasta better if you don't rinse it.
- There are two ways to serve spaghetti: Mix the pasta into the sauce in the pan, then transfer to a pasta bowl; or put the pasta in a bowl and pour the sauce on top. Most chefs like the former because you can meld the pasta and sauce together over low heat. But my kids pour their sauce on top because they don't like too much sauce. I'm not going to argue with them. Finish with a sprinkle of chile flakes, basil, and some Parmesan.
