POPPY SEED BREAD
This moist, rich bread is so delicious-it's very popular in our area. It gets golden brown and looks great sliced for a buffet. I also like to make miniature loaves to give as gifts. -Faye Hintz, Springfield, Missouri

NANA'S POPPY SEED BREAD
This recipe is my grandmothers.I don't know where she aquired it but I have always had it at her house. A tried and true favorite in our family. This one doesn't stay around long! Great for gift giving too! This recipe I have found works better if you split the batter into 2 loaf pans. It makes lots of batter so making 2 instead of one seems to be the consensus here.

BANANA POPPY SEED QUICK BREAD
From a Dole pamphlet I've had sitting around since 1986! This is a nice twist on a standard banana bread or poppy seed bread. I love the light hint of lemon in the bread too with the lemon zest.

Steps:
- Mash bananas with a potato masher until all large pieces are broken down (or you can use a blender and puree the bananas) - you should receive about 1 cup of banana total. If not, then add enough banana to equal one cup.
- Cream together the sugar and butter until light and fluffy.
- Beat in eggs and grated lemon peel until blended.
- Combine the flour, baking powder, salt and cinnamon.
- Beat the bananas into the wet ingredients alternately with the dry ingredients -- repeating twice ending with dry ingredients.
- Hand stir in the poppy seeds.
- Pour into a well-greased (or sprayed) 9x5 inch loaf pan.
- Bake at 350* F for 50-60 minutes until pick inserted in center comes out clean. (The original recipe called for 60-70 minutes but mine is usually done before 60 minutes).
- Cool in pan for 10-15 minutes before turning out onto a wire rack to completely cool.

- Mix dry ingredients together, then add eggs, extracts, milk, and oil and stir together just until all ingredients are moistened, scraping down the sides of the bowl once or twice. If you use a mixer, use low speed. You do not want to over-mix. The mixture will have the consistency of cake batter.
- Make the glaze while the bread is baking because you will put it on the bread while it's still pretty warm. I like to put the glaze in a small pitcher for easy, even pouring.

- Preheat oven to 350F, with rack on lower middle. Generously grease and flour bottoms and sides of two glass or foil loaf pans (if using darker metal pan, lessen baking time.)
- In large bowl of stand mixer, combine all bread ingredients. Using paddle attachment, mix at medium speed until batter is fully incorporated. Do not overmix.
- Using a rubber spatula, scrape down the sides of bowl, and evenly distribute batter into prepared pans. Bake for 45-55 minutes, or just until a toothpick inserted into center comes out with a few tender crumbs attached (not completely clean.) Take care not to over bake.
- Meanwhile, combine all glaze ingredients in a bowl and mix in the necessary amount of powder sugar for desired glaze consistency.
