Steps:

  • Whisk 1/4 cup mayonnaise, 1/2 cup chopped cilantro, 1 tablespoon hot sauce and the zest and juice of 1 lime in a bowl; season with salt and pepper.
  • Wrap 8 hot dogs in 1 slice of bacon each; secure with toothpicks and refrigerate 30 minutes. Grill over medium heat, turning, until crispy, 12 to 15 minutes. Split open 8 bolillo or hoagie rolls, spread with butter and grill until toasted.
  • Spread a schmear of warm refried beans in each roll, then add a bacon-wrapped hot dog. Top with diced avocados, plum tomatoes and red onion, sliced pickled jalapenos and a squiggly drizzle of the zesty mayo. Add cilantro and more hot sauce.

1 medium onion, chopped
1 (8 ounce) can tomato sauce
1 tablespoon chili powder
1/2 teaspoon Worcestershire sauce

Steps:

  • In a large skillet, saute ground beef and onion over medium heat, stirring often, until beef is browned. Add tomato sauce, chili powder, and Worcestershire sauce. Bring mixture to a boil, lower heat, and simmer for 10 minutes.
  • NOTE: For a real taste treat, place cooked hot dogs on rolls and top with sauce; you should have enough for about 10. Add your favorite regular toppings, too. To make the sauce taste as if it came from a New York pushcart, add a little cinnamon. Oregano will give it a Greek or Italian flavor and a teaspoon of ground cumin will make it an authentic chili dog.

1/4 cup water
1/4 cup chopped onion
1 garlic clove, minced
1 (8 ounce) can seasoned tomato sauce

  • Brown beef slowly but thoroughly, breaking with a fork until fine.
  • Add remaining ingredients; simmer uncovered 10 minutes. Makes sauce for about 12 coney dogs.

1 cup water
½ cup tomato sauce
⅓ cup ketchup
½ tablespoon salt
½ tablespoon pepper
1 tablespoon white sugar
1 tablespoon chili powder
crushed red pepper flakes to taste

Steps:

  • Crumble ground beef into a Dutch oven over medium heat. Stir in water, and mash ground beef thoroughly with a potato masher. Stir in tomato sauce, ketchup, salt, pepper, sugar, and chili powder; bring to a boil. Reduce heat to low; simmer, 60 to 90 minutes, until the sauce reaches a medium consistency that is not too soupy.

1 pound ground beef chuck
1 onion, finely chopped
3 cloves garlic, minced
½ cup ketchup
¼ cup barbeque sauce
1 tablespoon chili powder
2 tablespoons prepared yellow mustard
½ teaspoon ground black pepper
2 teaspoons salt, or to taste
2 teaspoons ground cumin
1 tablespoon Worcestershire sauce
1 pinch crushed red pepper flakes
1 cup water

Steps:

  • Brown beef and onion in a large skillet over medium-high heat. Drain fat; cool mixture slightly. Place in food processor; pulse until mixture is finely crumbled, about 5 or 6 pulses. Return meat to skillet; stir in garlic. Cook for 3 minutes.
  • Pour the ketchup and barbeque sauce into the skillet. Stir in the chili powder, mustard, pepper, salt, cumin, Worcestershire sauce, red pepper flakes, and water. Cook, uncovered, until most of the liquid has evaporated, about 10 minutes. Season sauce with additional salt, if necessary.

4 cups water
1-1/2 pounds ground beef
1 medium onion, chopped
1 can (28 ounces) tomato sauce
2 tablespoons brown sugar
1-1/2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
Hot dogs, heated
Hot dog buns, split

Steps:

  • In a large saucepan, bring water to a boil. Carefully crumble beef into water. Add onion. Boil until meat is no longer pink; drain. Add the tomato sauce, brown sugar, chili powder, salt and pepper. Simmer, uncovered, for 15 minutes or until heated through. Serve over hot dogs in buns.
