NANA'S CHOCOLATE CHIP BRANDY POUND CAKE

My MIL was a caterer for many years--this is one of her best recipes, and one that all 9 of her grandchildren could not wait to devour!!!

Number Of Ingredients 10

1 (8 ounce) package cream cheese, softened
1 cup butter, softened
2 cups superfine sugar
1 tablespoon vanilla extract
2 tablespoons brandy
4 large eggs
2 1/4 cups flour
1 tablespoon cornstarch
1/2 teaspoon baking powder
1 (12 ounce) package mini chocolate chips, at room temp

Steps:

  • Preheat the oven to 325 degrees.
  • Cream the cream cheese and the butter together until light and fluffy.
  • Add the sugar and cream well.
  • Add the vanilla and the brandy, mixing well.
  • Add the eggs one at a time, mixing well each time.
  • Sift the flour, cornstarch and baking powder together, and fold in the chocolate chips.
  • Add the dry ingredients/chips to the egg/sugar mixture gradually, mixing well after each addition.
  • Heavily grease a bundt or a 10 inch tube pan, and pour the cake batter into the pan.
  • Bake at 325 degrees for 30 minutes.
  • Reduce the oven heat to 300 degrees and bake for another 1 hour and 20 minutes.

1 (18 1/4 ounce) box devil's food cake mix (or try Dark Chocolate Fudge cake mix!)
1 (4 ounce) package instant chocolate pudding mix
4 large eggs
1 cup sour cream
1/2 cup warm water
1/2 cup vegetable oil
1 1/2 cups semi-sweet chocolate chips

Steps:

  • Lightly mist a 12 cup Bundt or tube pan with cooking oil spray, then dust with flour. Shake out the excess flour and set pan aside.
  • Place the cake mix, pudding mix, eggs, sour cream, warm water and oil in a large mixing bowl.
  • Blend with an electric mixer on low speed for 1 minute until the batter looks thick and well combined.
  • Fold in the chocolate chips, making sure they are well distributed throughout the batter.
  • Pour the batter into the prepared pan.
  • Bake at 350 degrees in the center of the oven 45 to 50 minutes.
  • Remove pan from the oven and place on a wire rack to cool for 15 minutes. Serve while still warm.

1 1/2 cups butter, softened (no substitutes)
8 ounces cream cheese, softened
3 cups sugar
5 eggs
3 cups flour
1/4 cup milk
1 1/2 cups miniature chocolate chips

Steps:

  • Preheat oven to 325F degrees.
  • Grease and flour a 10-inch tube pan.
  • Combine the butter and cream cheese in a large mixing bowl.
  • Beat until well blended.
  • Add the sugar and beat until smooth and creamy.
  • Add eggs, one at a time, beating well after each addition (This is an important step because the eggs add the leavening to the cake).
  • Add the flour, alternately with the milk, starting and ending with flour.
  • Stir in chocolate chips.
  • Pour into a prepared pan and bake for about 1½ hours, or until a wooden toothpick comes out clean, when inserted near the center of the cake.
  • Remove from pan immediately and turn upright onto a serving plate.
  • Allow cake to cool before slicing.

1/2 cup margarine
3 cups sifted cake flour
1 3/4 cups sugar
1 teaspoon baking soda
3 egg whites
1 whole egg, minus shell
1/4 salt
1 1/2 cups vanilla yogurt
vegetable oil cooking spray, for pan
1/2 cup brandy
1 teaspoon vanilla extract

Steps:

  • Cream margarine; gradually add the sugar, beating well with electric mixer set at medium.
  • Add egg whites 2 at a time, beating well after each addition.
  • Combine yogurt, brandy and vanilla; stir well. Add to creamed mixture beating well.
  • Combine flour, soda, and salt; gradually add to yogurt mixture.
  • Beat and additional minute.
  • Pour batter into a baking pan with high sides or a Bundt pan coated in cooking spray.
  • Bake at 350 degrees for 55 minutes or until a toothpick comes out clean when inserted in cake.
  • Yield 16 serves.

3 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
2 sticks (1 cup) unsalted butter, softened
3 cups sugar
6 large eggs
1 cup sour cream
1 tablespoon vanilla
a 12-ounce package semisweet chocolate chips
2 cups chopped walnuts

Steps:

  • Preheat oven to 350°F. and butter and flour a 3-quart bundt pan, knocking out excess flour.
  • In a bowl whisk together flour, salt, and baking soda.
  • In another bowl with an electric mixer beat together butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition, and beat in sour cream and vanilla until combined well. With mixer on low speed gradually beat in flour mixture until just combined.
  • Pour about half of batter into prepared pan and sprinkle about half of chocolate chips and walnuts over batter. Pour remaining batter over walnut mixture, spreading evenly, and sprinkle with remaining chocolate chips and walnuts. Bake cake in middle of oven 1 hour and 20 minutes, or until a tester comes out clean, and cool in pan on a rack 1 hour. Invert cake onto rack and cool completely.

3 c all purpose flour
1/2 tsp baking powder
3 c sugar
1 stick butter salted
1 stick butter flavor shortening (crisco)
5 eggs
1 c milk
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 325 degrees.
  • 2. Mix sugar, butter, and butter flavor Crisco. Mix till lite and fluffy. Add eggs one at a time. Mix well after each egg is added.
  • 3. Sift together flour and baking powder. Add Flour and milk alternating. Add vanilla.
  • 4. Spray pound cake or bunt cake pan with cooking spray. Then coat with flour. Pour cake batter in pan . Bake at 325 degrees for 1 hour and 30 mins.

  • Cool cake in pan for 15 minutes, then remove to cool completely.
  • Drizzle Glaze atop cake, if desired.
  • For Glaze: Mix powdered sugar and brandy together and drizzle over cake.
