NANA'S OATMEAL PANCAKES

This is my mom's recipe that she always makes for my girls when she comes to visit. My four-year-old loves these and begs me to make them; I finally broke down so that she can have them even when Nana isn't around. The rest of my family loves these, too! Cook time includes time to let batter rest.

1 cup flour
1 cup oatmeal
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups buttermilk
1/2 cup milk
1/4 cup vegetable oil
2 eggs

Steps:

  • Mix all dry ingredients.
  • Mix wet ingredients, then add to dry mixture and mix well. Batter will be thin.
  • Let sit for at least fifteen minutes so the oatmeal softens.
  • Spray a preheated skillet with Pam (or use butter or a small amount of oil), and add 1/4 cup of batter for each pancake.
  • Grill until brown on one side, flip and grill until second side is brown.
  • Serve with yummy syrup!

A warm, filling breakfast cereal with a fruity twist. When my bananas begin to get overly ripe, I peel them and put them in plastic freezer bags. This is a great recipe for using frozen bananas, but you can also use ripe bananas.

¼ cup quick cooking oats
½ cup skim milk
1 teaspoon flax seeds
2 tablespoons chopped walnuts
3 tablespoons honey
1 banana, peeled

Steps:

  • Combine the oats, milk, flax seeds, walnuts, honey, and banana in a microwave-safe bowl. Cook in microwave on High for 2 minutes. Mash the banana with a fork and stir into the mixture. Serve hot.

These oatmeal cookies have been served to us by my mother since I was a child. I can't say it's an original, but no one has ever told me they make the same kind, yet. They hold a special place in my heart and they make me feel like I was a kid again.

3 c shortening, butter flavor
4 c brown sugar, firmly packed
2 c sugar
4 egg
2 bananas, mashed
1 c water
4 tsp vanilla extract
4 c flour
4 tsp salt
2 tsp baking soda
12 c old fashioned oats
1 Tbsp cinnamon
1 tsp nutmeg
nuts
chocolate chips
coconut

Steps:

  • 1. Beat shortening, sugars (brown & granulated), eggs, water, bananas and vanilla together til creamy.
  • 2. Sift together flour, salt, soda, cinnamon and nutmeg. Add to creamed mixture and blend well. Stir in Oats.
  • 3. Add nuts, coconut, chocolate chips to taste. More the merrier.
  • 4. Make mixture rolls about 2" wide by 6" long using waxed paper. You should have enough for 2 or more rolls.
  • 5. Refrigerate overnight. Slice while firm and bake in 350 degree oven for 12 to 15 minutes.
