NANA'S OATMEAL PANCAKES
This is my mom's recipe that she always makes for my girls when she comes to visit. My four-year-old loves these and begs me to make them; I finally broke down so that she can have them even when Nana isn't around. The rest of my family loves these, too! Cook time includes time to let batter rest.

Steps:
- Mix all dry ingredients.
- Mix wet ingredients, then add to dry mixture and mix well. Batter will be thin.
- Let sit for at least fifteen minutes so the oatmeal softens.
- Spray a preheated skillet with Pam (or use butter or a small amount of oil), and add 1/4 cup of batter for each pancake.
- Grill until brown on one side, flip and grill until second side is brown.
- Serve with yummy syrup!

BANANA NUT OATMEAL
A warm, filling breakfast cereal with a fruity twist. When my bananas begin to get overly ripe, I peel them and put them in plastic freezer bags. This is a great recipe for using frozen bananas, but you can also use ripe bananas.

- Combine the oats, milk, flax seeds, walnuts, honey, and banana in a microwave-safe bowl. Cook in microwave on High for 2 minutes. Mash the banana with a fork and stir into the mixture. Serve hot.

NANA'S SPECIAL OATMEAL COOKIES
These oatmeal cookies have been served to us by my mother since I was a child. I can't say it's an original, but no one has ever told me they make the same kind, yet. They hold a special place in my heart and they make me feel like I was a kid again.

Steps:
- 1. Beat shortening, sugars (brown & granulated), eggs, water, bananas and vanilla together til creamy.
- 2. Sift together flour, salt, soda, cinnamon and nutmeg. Add to creamed mixture and blend well. Stir in Oats.
- 3. Add nuts, coconut, chocolate chips to taste. More the merrier.
- 4. Make mixture rolls about 2" wide by 6" long using waxed paper. You should have enough for 2 or more rolls.
- 5. Refrigerate overnight. Slice while firm and bake in 350 degree oven for 12 to 15 minutes.
