NALYSNYKY (UKRAINIAN CREPES)
This is an original Ukrainian recipe for their Nalysnyky - pronounced: Nah-less-knee-key. A very tasty roll up.

- TO MAKE CREPES.
- In a bowl, using a hand held electric mixer, beat eggs until light and fluffy.
- Add milk, water, flour and salt and beat until all ingredients are incorporated and batter is smooth.
- Heat a 6 inch frying pan on medium heat.
- Butter the pan lightly and pour about 1/4 cup of batter into the pan, swirling the pan until the batter spreads evenly in the pan.
- Cook crepes on medium heat for about 1 minute or until lightly browned.
- Bake on 1 side only, do not turn over.
- Continue to cook the crepes, buttering the frying pan each time.
- Place the cooked crepes on a platter and keep warm in the oven at 250°F.
- TO MAKE CHEESE FILLING.
- Place the cottage cheese in a cheese cloth and squeeze out as much moisture as possible.
- Transfer the cheese to a mixing bowl.
- Add egg yolks, cream salt, and dill weed and mix to blend well.
- Remove warmed crepes from the oven and increase oven temperature to 350°F.
- Separate and place 1 crepe with the brown side down on a smooth surface.
- Spoon about 1 heaping tablespoon of cheese filling near one edge of the crepe.
- Start rolling the crepe over the filling, tuck in each side to prevent the filling from falling out, and continue to roll.
- Continue to fill and roll the remaining crepes.
- Place the finished nalysnyky into a lightly buttered 13 inch by 9 inch oven proof casserole dish in layers.
- Dot each layer with some butter.
- Bake in preheated 350 F oven for 20 minutes.
- Serve hot with melted butter, a dollop of sour cream or yogurt.

NALEśNIKI (POLISH SWEET OR SAVORY CREPES)
Steps:
- Gather the ingredients.
- In a blender or food processor , combine flour, milk, water, eggs, butter, and salt and process until smooth.
- Transfer batter to a pitcher. Cover the pitcher with plastic wrap and let rest for 30 minutes so liquid can be absorbed by the flour.
- Heat a crepe pan or small skillet over medium heat and lightly coat with butter. Using a 2-ounce ladle, spoon 1 portion of batter into pan.
- Immediately rotate pan and swirl batter until it covers the entire bottom of the pan. Cook until crepe is lightly brown or spotted brown on underside. Flip and cook second side until it is light brown.
- Remove crepe to waxed paper or parchment paper and repeat with remaining batter. You may need to recoat the pan with butter as you cook crepes.
- Place 2 heaping tablespoons of savory filling or sweet filling on each naleśniki. Fold sides in first and then fold bottom up, rolling away from yourself, similar to an egg roll or burrito.
- Filled naleśniki should then be pan-fried in butter over medium-high heat or baked in a buttered casserole dish at 350 F until the filling is set.

UKRAINIAN NALYSNYKY (SAVORY WITH DILL)
Here is a different way to make the crepes. This crepe uses baking powder. Cook the crepes until top is just dry before you flip over and cook on the other side for a few seconds. Since I did not have cottage cheese I used Ricotta cheese. I did not have sweet cream so I used Carnation Evaporated milk to cover first layer of pancakes.

- TO MAKE THE BATTER, mix eggs, milk, and 1 Tablespoon sugar together.
- Add vanilla and oil.
- Sift flour, baking powder and salt together and add to milk mixture, stirring until smooth.
- Using a greased frying pan, fry the batter into thin pancakes like you would do crepes using 1/4 cup of batter per crepe.
- Use a 7 inch non-stick crepe pan or any non-stick pan of that size.
- Swirl the batter around to cover pan.
- I use a brush to lightly brush pan each time with oil or butter.
- TO MAKE THE FILLING, mix cottage cheese, eggs, salt, 1 Tablespoon sugar and dill.
- Spread over each pancake with filling about 2 tablespoons and roll up like a jelly roll.
- Arrange on a well buttered casserole, and pour sweet cream over nalysnyky.
- Bake at 300 F, for 35 minutes. Uncover towards the end so that they will brown a little. Serve with sour cream. Makes about 12 nalysnyky.
- For dessert Nalysnyky leave out the dill in the cottage cheese and add a bit more sugar to taste if you wish.

Steps:
- For Crepes: 1. Place all ingredients in a blender and mix at high speed. Chill 2 hours 2. Heat pan and lightly oil 3. When hot, pour 1/4 cup batter, roll back and forth to spread thinly. For Spinach mushroom filling: 1. Slice and saute mushrooms in butter 2. melt butter over medium heat and stir in flour, cook slowly, stirring constantly. 3. Remove from heat and whisk in milk and seasoning. 4. Increase heat and return to heat and boil for 1 min. 5. Stir in cream and all but 2 tbsp cheese. 6. Reduce and simmer for 2-3 min 7. Combine 3-4 tbsp sauce with spinach and mushrooms Use remaining sauce to pour over once filling is inside crepes. For Cottage cheese filling. 1. Mix all together and put in crepes. Once crepes have fillings, cook at *425 F for 20 min.

- Beat eggs in a bowl. Add the milk, water, and salt. Mix slowly the flour in while beating constantly to ensure there are no lumps.
- Heat a non-stick pan a bit higher than medium and add 1 tbsp oil. Add 3/4 of a ladle full of batter and swirl around the pan too spread thinny over the whole bottom of the pan. Flip when side is golden brown and cook other side a bit. Oil pan as needed until you have made all your crepes.
- Melt the butter and set aside. In a small bowl mix the Quark, egg yolks, whipping cream, salt and dill. Spread a thin layer of cheese on each crepe evenly and roll up gently. Cut each crepe in three equal pieces.
- Add a bit of butter into the bottom of an oven proof dish that has been lined with aluminium foil. Layer the nalysnyky evenly and make sure to pour butter with a spoon in between each layer, otherwise the piece will stick together. Fold the foil loosely over the top of the dish. Bake at 350 F for 30 minutes.

- Put all of the ingredients for the crepes (in the order that they are listed) 1/2 cup warm water, 1 cup milk, 4 large eggs, 4 Tbsp melted butter, 1 cup flour, 2 Tbsp sugar and a pinch of salt in a blender and blend until well combined.
- In a colander, rinse the cottage cheese with cold water and drain well. Mash the cream cheese, cottage cheese and sugar with a potato masher until well combined and creamy. Cottage cheese will still be a little lumpy.
- Melt about 1 tablespoon of butter in a skillet and sauté the rolled cheese crepes on medium heat until golden brown on both sides. They don't take long to sauté. Be careful not to burn them.

- Boil the eggs in a small pot until fully cooked through. Place in cold water to cool them down, then remove the shells.
