LIGHTER NACHOS
Slash the fat of this Mexican sharing platter with some simple swaps. Our tortilla chips are topped with beans and salsa

Steps:
- Heat the oven to 190C/170C fan/gas 5. For each tortilla, brush both sides with some of the oil, and cut into 12 wedges. Repeat. Put all the wedges on 2 large baking sheets and bake for about 10 mins or until golden and crisp. Remove and set aside. Turn up the oven to 200C/180C/gas 6.
- For the guacamole, put the chopped avocados in a bowl and roughly mash with a fork, keeping some texture. Stir in the lime juice, spring onions, coriander and season with the Tabasco and seasoning. Set aside.
- For the beans, tip them into a bowl, stir in the garlic, chilli and cumin powders, roughly mash with a fork, then mix in about 2 tbsp of water, or enough to make a rough mash. Season and set aside.
- For the salsa, combine the tomatoes, onion, garlic, lime juice and oil. Season and set aside.
- Ten minutes before you're ready to serve, scatter the tortilla chips over a large baking tray or ovenproof platter. Spoon the beans in little mounds over the chips, then spoon over the salsa (if the salsa has been made ahead, use a slotted spoon so you leave any tomato liquid behind that could soften the chips). Scatter over the jalapeño chilli and mozzarella.
- Bake for 4-5 mins, just long enough to melt the cheese and warm things through, but not over-brown the tortilla chips. Remove and spoon over the crème fraîche and scatter with coriander, and put the guacamole in 1 or 2 small dishes on the side. Serve immediately.

SKINNYLIGHTFUL NACHOS SUPREME
Nachos just might be the king of all party foods! People flip for them. Normally fat-laden, these layered and baked nachos use all skinny ingredients. I'm using reduced-fat ingredients such as tortilla chips, lean taco meat, cheese, and topping with my yummy, skinny ranch dressing. These are fantastic! One skinny serving has 207 calories and 5 grams fat.

- Preheat oven to 350 degrees.
- In a large pan or skillet, cook ground beef with onions and garlic until meat is browned. Stir often. Pour cooked meat into a colander in the sink and drain off all excess fat. Add meat mixture back to the pan.
- Add taco seasoning, water, and mix well. Bring to a boil, turn the heat down to simmer, and cook for 5 minutes.
- Place the tortilla chips evenly on a large ovenproof serving plate or baking sheet coated with a little cooking spray.
- Top the chips with ground beef mixture. Sprinkle beans evenly over the meat. Next, spoon over beans the fire-roasted chilies, and then salsa. Sprinkle the cheese all over the top.
- At this point, you can place it in the fridge until you're ready to serve it.
- When ready to serve, bake in preheated 350 degrees oven for 15 - 20 minutes until the cheese is melted and the nachos are hot.
- Dollop with ranch dressing or sour cream and add a bit more salsa. If you really like food spicy, sprinkle a bit of Tabasco sauce over the top!
- Serve at once.

- Brown meat in a large nonstick skillet. Pour off fat.
- Add tomato puree, chili powder, garlic and onion powders, sugar and black pepper. Mix well.
- Cook uncovered over low heat 20 minutes or until thick, stirring occasionally.
- Heat tortillas in a nonstick skillet over medium-high heat or in a microwave oven.
- Spoon meat mixture onto hot tortillas and top with green pepper, onion, tomatoes and lettuce.

- Preheat oven 200°C.
- On lightly sprayed tray, cut pita bread in triangles, spray top of pita and bake for about 10 minutes until crunchy.
- On plate, arrange Mexibeans, Nacho Toppings Sauce***, cheese.
- Heat in microwave for about 2 minutes until cheese melts.
- Top with salsa, sour cream and jalapenos.
- NOTE: Can heat Mexibeans in pan and Nacho Topping*** in another pan and place under broiler until cheese melts.
- Serve with pita baked triangles.
- Note: Can omit jalapenos.
