NACHO PASTA BAKE
Steps:
- Boil the pasta according to the instructions on the packet, then drain.
- Meanwhile, heat the oil in a large frying pan, and add the pepper and mushrooms. Cook over a medium heat for 5 minutes, until fairly soft. Add the sweetcorn and black beans, along with the tin of tomatoes, spices, and plenty of salt and pepper. Bring to a simmer and cook for 5 more minutes. Remove the pan from the heat, and add the cream cheese. Stir until the cheese has melted into the sauce.
- When the pasta is cooked, add it to the sauce, and mix well. Transfer to a suitably sized baking dish.
- Sprinkle over about 2/3 of the grated cheese, and top with the slightly broken tortilla chips. Add the remaining cheese, and bake at 180°C (Gas Mark 4 / 350°F) for about 15 minutes, or until the tortilla chips are golden brown and crispy. Serve topped with fresh chopped coriander (cilantro), with guacamole and sour cream on the side.

EASY DOUBLE CHEESY NACHO MACARONI
Here's a quick family favorite the way my grandma always made it!! The secret is in the nacho cheese sauce. She always used the plain nacho cheese soup, so if you cant find the Fiesta style don't worry about it. She'd also use this real fat spaghetti type of noodle but i'm not sure what they're called. Sometimes I'll add a can of chili con carne topped with some pickled jalepenos for a super fast one bowl meal! So yummy!

- Cook pasta til al dente; drain and return to burner on med-low.
- Add remaining ingredients and stir until well combined.
- Pour into a casserole dish and broil for 3 minutes or until the top is brown, bubbly and slightly crunchy at the edges.

- Heat oven to 375°F. Cook pasta according to package directions. Drain. While pasta is cooking, heat oil in skillet over medium heat. Add onion and bell pepper and cook, stirring frequently, until tender, about 5 minutes. Add garlic and cook an additional 30 seconds. In a large bowl, combine pasta, onion mixture, chicken, corn, chilies, ricotta cheese, 1/2 cup Monterey jack and chili powder. Spoon some salsa onto the bottom of a 9x13-inch casserole dish and spread to cover the bottom of the dish. Spoon chicken mixture on top of salsa. Top with remaining salsa and spread evenly with remaining cheese. Bake until mixture is heated through, about 20-25 minutes. Spread chopped green onions over the top of the dish and serve over tortilla chips.

- Heat oven to 400°F. Prepare Kraft Deluxe Velveeta as directed on package. Meanwhile, cook meat with taco seasoning mix as directed on package. Stir sour cream into prepared Kraft Deluxe Velveeta. Spoon half the Kraft Deluxe Velveeta mixture into 8-inch square baking dish; top with layers of meat mixture, half the shredded cheese and remaining Kraft Deluxe Velveeta mixture. Cover. Bake 15 min.; top with salsa, remaining cheese and crushed chips. Bake, uncovered, 5 min.
