- 1. Bake fries in oven according to package directions. Keep warm. Brown and fry beef in skillet, skim off any fat. Add water, taco seasoning mix and salsa. Heat cheese dip in microwave. To serve-plate fries on each plate then top with some beef mixture, cheese sauce , sour cream and diced green onions.
FRENCH FRY NACHOS (AKA FRACHOS)

- Cut potatoes into French fry lengths (a mandoline comes in handy here). Add to a large bowl and fill with enough cold water to cover the fries. Refrigerate for about 30 minutes to 1 hour.
- While the potatoes are soaking, cook the ground beef. Warm a medium skillet over medium-high heat. When the pan is hot, add the ground beef along with the cayenne, paprika, cumin, ¼ tsp salt and ¼ black pepper. Cook, breaking up the meat so it doesn't form large clumps, until browned and cooked through. Keep warm and set aside.
- To make the quick guacamole, smash the avocado in a small bowl with the back of your form until smooth. Stir in jalapeno, red onion, cilantro, salt, pepper and lime juice. Cover and set aside.
- Pour oil into a dutch oven or heavy bottomed pot until it is 3" deep. Heat over medium heat until the temperature reaches 375 degrees. Drain potatoes and dry completely with paper towels. Fry the potatoes, working in small batches, until crisp and golden. Remove to a paper towel lined plate to drain. Season immediately with salt.
- Add the French fries to a cast iron skillet. Top with the cooked ground beef and shredded cheese. Turn on oven broiler to high and broil until the cheese is melted and bubbling, approximately 2 to 3 minutes. Remove from oven, top with chopped tomato, guacamole, and sour cream. Sprinkle with extra fresh cilantro and serve immediately.

SPICY NACHO CHEESE FRENCH FRIES
With a simple mix of seasonings, you can transform your boring french fries into spicy Nacho Fries!

- Wash your potatoes to remove any dirt, then slice into fry shapes. If you need a tutorial on how to do this, YouTube has tons of options! Soak your fries in a large bowl of cold water for 20 minutes.
- If you're in a pinch, you can skip the 20 minute soak, but it really helps the fries crisp up.
- While the fries soak, mix all of your seasoning together to make your Doritos spice. You can leave the cayenne out if you do not like spicy, or cut it down to 1/4 tsp. I used 1/2 tsp and while it tasted pretty spicy, once added to the fries, it was not overly spicy at all.
- After 20 minutes, drain and pat dry the potatoes as much as you can. Add them back to a large bowl with roughly 1 tablespoon of olive oil and toss in your cheese mixture. I used half the mixture for my recipe and saved the other half for another day.
- Note that I wouldn't skip the olive oil. I tried a batch without and the fries don't have nearly as much flavor or crispiness.
- Add your fries to your air fryer in a single thin layer. Don't stack your fries on top of each or they will not crisp up will, so do 2 different batches if you need to. Air fry at 400 degrees F for 12-15 minutes depending on how crispy you'd like them.
- After 8 minutes or so, open the air fryer and give the fries a good shake to move them around, then continue cooking.
- Once done, remove from air fryer and toss in some additional cheese mixture, then enjoy!

- Preheat your oven to whatever the back of the bag of frozen fries says, and cook fries for 10 minutes.
- Turn fries once, and bake for 7 more minutes.
- Take fries out of oven, and turn on your broiler.
- Sprinkle on cheese, followed by green onions and bacon bits. if you have any other toppings you'd like to put on you could do that now too. :).
- Return pan to oven and broil for 2-3 minutes, or until cheese is melted and gooey. (Watch this step though, because you don't want to burn anything).
- Remove from oven and serve on a plate with sour cream. yummy. :).
