2 cans (16 oz each) Old El Paso™ refried beans
2 cans (15 oz each) Progresso™ black beans, rinsed and drained
1 can (4.5 oz) Old El Paso™ chopped green chiles, undrained
1 envelope (1 oz) Old El Paso™ 40%-less-sodium taco seasoning mix
2 loaves (2 16 oz. boxes) VELVEETA™ Jalapeno Cheese, cut into cubes
1 cup finely shredded Mexican cheese blend (4 oz)
Tortilla chips

Steps:

  • In 3 1/2- to 4-quart slow cooker, mix all ingredients except shredded cheese and corn chips.
  • Cover and cook on Low heat setting 3 to 4 hours, stirring after 2 hours, until cheese is melted.
  • Scrape down side of slow cooker with rubber spatula to help prevent edge of dip from scorching. Sprinkle with shredded cheese. Serve with tortilla chips. Dip will hold on Low heat setting up to 2 hours.

2 bunches green onions, chopped (*about 1 and 2/3 cups)
2 cup sharp cheddar cheese (*FINELY grated - make sure you use the smaller grating side on the grater)

  • Beat cream cheese and sour cream together until smooth and spread evenly in bottom of 9X13 baking dish (preferably glass).
  • Spread salsa evenly over sour cream cream cheese layer.
  • Sprinkle on green onions, spreading evenly.
  • Top with grated cheese, spreading evenly over green onion (be sure to grate cheese on smaller grating/shredding)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

½ small sweet yellow onion (diced)
½ jalapeno (seeded & diced finely)
1 tsp chili powder
1 tsp cumin

2 cloves of garlic (minced)

1 can of fire-roasted diced tomatoes
1/3 cup of water

Extra sharp cheddar cheese (to taste)
1/2 cup grape tomatoes (quartered)
1 avocado (diced)
2 green onions (chopped)

Steps:

  • Preheat the oven to 400 degrees.
  • Heat the oil in a large skillet over medium heat. Add the diced onion and jalapeno to the skillet and cook, stirring often, for 2-3 minutes.
  • Add the chili powder, cumin, garlic powder, coriander, paprika, oregano, and onion powder. Cook, stirring constantly for 1 minute.
  • Add the ground beef and cook while breaking it up into crumbles, for 3-4 minutes.
  • Add the minced garlic and cook, stirring constantly, for 1 minute.
  • Add the black beans, diced tomatoes, water, and 2 tablespoons of fresh cilantro.
  • Season well with sea salt and freshly cracked pepper, to taste. Cook until bubbling.
  • Remove from the heat. Add the shredded cheese evenly to the top of the mixture then place it into the oven and bake for 10 minutes until the cheese is melted.
  • Remove from the oven and top with tomatoes, avocado, green onions, and the remaining 2 tablespoons of fresh cilantro.
  • Serve with tortilla chips, salsa, and sour cream. Serve and enjoy!

¼ cup extra virgin olive oil
2 small yellow onions, chopped
4 cloves garlic, peeled and chopped into large chunks
2 jalapeño peppers, seeded and chopped*
2 (15.5 ounce) cans black beans, rinsed and drained
1½ teaspoons salt
½ teaspoon ground cumin
2 tablespoons fresh lime juice, from one lime, plus more if desired
3 tablespoons water
¼ cup fresh chopped cilantro, plus more for garnish (optional)

Steps:

  • Heat the olive oil over medium heat in a small saucepan. Add the onions, garlic and jalapeño peppers and cook, stirring occasionally, until very soft, about ten minutes. Do not brown.
  • Transfer the cooked onion mixture to a blender or food processor and add the black beans, salt, cumin, lime juice, water and cilantro. Blend until smooth (if you're using a blender, you may need to stop and stir a few times to help it out). If the dip is too thick, add more water or lime juice, little by little, to thin it out. Taste and adjust seasoning, then transfer to a serving bowl. Serve warm, cold or room temperature with tortilla chips.
  • *Most of the heat from the jalapeños is in the seeds and ribs, so leave those out. If you like a spicier dip, reserve the seeds and add them little by little when you're blending the dip.

1 bag tortilla chips (round works best for these)
1 can Frito-Lay bean dip
shredded cheddar cheese (, REAL nachos use real cheese, not cheese sauce!)
jalapeno, sliced (optional)

Steps:

  • Preheat broiler.
  • Line a cookie sheet with aluminum foil (makes clean-up easier, throw away the foil instead of scrubbing cheese off the cookie sheet).
  • Spread bean dip on each tortilla chip.
  • Place each chip onto the cookie sheet until the cookie sheet is full.
  • Cover the chips with shredded cheese and jalapeno slices.
  • Place under the broiler until cheese melts.

  • Brown ground beef and drain well.
