- In 3 1/2- to 4-quart slow cooker, mix all ingredients except shredded cheese and corn chips.
- Cover and cook on Low heat setting 3 to 4 hours, stirring after 2 hours, until cheese is melted.
- Scrape down side of slow cooker with rubber spatula to help prevent edge of dip from scorching. Sprinkle with shredded cheese. Serve with tortilla chips. Dip will hold on Low heat setting up to 2 hours.

- Combine refried beans, garlic powder, onion powder, and cumin in a bowl; mix well.

- Preheat oven to 375 degrees F.
- Spread chili or beans over bottom of baking dish. Spread softened cream cheese on top. Layer tomatoes, jalapenos, red onion and cheese. Bake for 20 minutes or until bubbly. Top with scallions and serve with chips
BEEF AND BEAN SKILLET NACHO DIP
Steps:
- Preheat the oven to 400 degrees.
- Heat the oil in a large skillet over medium heat. Add the diced onion and jalapeno to the skillet and cook, stirring often, for 2-3 minutes.
- Add the chili powder, cumin, garlic powder, coriander, paprika, oregano, and onion powder. Cook, stirring constantly for 1 minute.
- Add the ground beef and cook while breaking it up into crumbles, for 3-4 minutes.
- Add the minced garlic and cook, stirring constantly, for 1 minute.
- Add the black beans, diced tomatoes, water, and 2 tablespoons of fresh cilantro.
- Season well with sea salt and freshly cracked pepper, to taste. Cook until bubbling.
- Remove from the heat. Add the shredded cheese evenly to the top of the mixture then place it into the oven and bake for 10 minutes until the cheese is melted.
- Remove from the oven and top with tomatoes, avocado, green onions, and the remaining 2 tablespoons of fresh cilantro.
- Serve with tortilla chips, salsa, and sour cream. Serve and enjoy!
BLACK BEAN DIP
Delicious, healthy and easy-to-make black bean dip.

- Heat the olive oil over medium heat in a small saucepan. Add the onions, garlic and jalapeño peppers and cook, stirring occasionally, until very soft, about ten minutes. Do not brown.
- Transfer the cooked onion mixture to a blender or food processor and add the black beans, salt, cumin, lime juice, water and cilantro. Blend until smooth (if you're using a blender, you may need to stop and stir a few times to help it out). If the dip is too thick, add more water or lime juice, little by little, to thin it out. Taste and adjust seasoning, then transfer to a serving bowl. Serve warm, cold or room temperature with tortilla chips.
- *Most of the heat from the jalapeños is in the seeds and ribs, so leave those out. If you like a spicier dip, reserve the seeds and add them little by little when you're blending the dip.

- Preheat broiler.
- Line a cookie sheet with aluminum foil (makes clean-up easier, throw away the foil instead of scrubbing cheese off the cookie sheet).
