OLD-FASHIONED ICEBOX CAKE
This Old-Fashioned Icebox Cake is a classic no-bake dessert that only requires 5 ingredients!

Steps:
- In a large bowl, use an electric mixer to beat heavy cream, powdered sugar, vanilla and salt until stiff peaks form.
- Spread a very thin layer of the whipped cream in the bottom of a 9 x 13-inch dish.
- Place a layer of the graham crackers or chocolate wafers in the bottom of the dish, breaking them as necessary in order to fit.
- Gently spread ¼ of the whipped cream on top of the crackers. Top with a second layer of crackers and then another layer of whipped cream.
- Repeat the layers until you have used a fourth layer of crackers and the final ¼ of the cream.
- Garnish the cake with crushed chocolate grahams, sprinkles, or grated chocolate.
- Cover loosely and refrigerate for at least 4 hours, or up to overnight.

MAMA'S ICEBOX FRUITCAKE RECIPE
My mother made one of these Icebox Fruitcakes almost every year for us at Christmas. Prepare the dry ingredients first, then melt the marshmallows with milk. Stir everything together, press into a dish and refrigerate overnight. It's easy.

Steps:
- Prepare all the dry ingredients ahead of time as directed.
- Chop the pecans, walnuts, brazil nuts, and raisins as needed.
- Crush or chop the graham crackers.
- Chop the maraschino cherries, saving the juice. Set aside for now.
- Place the chopped nuts in a large mixing pan.
- Add the chopped graham crackers.
- Add the coconut.
- Mix dry ingredients together to fully combine.
- Place the marshmallows in a medium size sauce pot.
- Add the milk.
- Place the pot over Medium Low heat on your stove top.
- Constantly stir this mixture until the marshmallows are fully melted.
- Pour the marshmallow mixture over the crushed nuts and graham crackers.
- Add the chopped cherries with juice.
- Mix well, until fully combined.
- Lightly butter a 9 x 13 x 2 casserole type dish or pan.
- Place the mixture in the dish, spread evenly and press firmly.
- Store in refrigerator until ready to serve.
- Enjoy!
GRAHAM CRACKER CAKE I
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and line with parchment two 9 inch round pans.
- Combine the crumbs, 1/2 cup pecans, flour, baking powder, and salt.
- In a large bowl, cream the butter and the light brown sugar until fluffy. Slowly beat in the egg yolks, one at a time. Stir in the vanilla. Alternately add the milk and the crumb mixture while beating on low.
- Beat the egg whites in a bowl until foamy. Add the sugar slowly, and beat to soft peaks. Fold into the crumb batter, and pour into the pans.
- Bake for 25 minutes, or until a tester comes out clean. Cool in the pans on a rack about 10 minutes, then invert and cool completely.
- To Make Frosting: In a saucepan over medium heat, melt the 2 tablespoon sugar until it turns golden. Remove from heat, and add 4 tablespoons of the butter; swirl. Whisk in the dark brown sugar, and place back on the heat. Bring to a boil, stirring all the time. Add the cream, and bring back to a boil. Boil 1 minute, and remove caramel from heat.
- Place the confectioners' sugar in a large bowl, and mixing on medium speed, slowly drizzle in the caramel. Beat until the bottom of the bowl is just barely warm, about 5 minutes. Add the remaining 1 1/4 cups butter, 1 tablespoon at a time. Beat until smooth, and chill frosting until ready to ice the cake. Frost the cake, and press the pecans into the sides.

GRAHAM CRACKER FRUITCAKE
I like fruitcake as long as it doesn't have a lot of strange fruit in it. I like dates, candied cherries, raisins, and walnuts. So that limits a lot fruitcakes although I have changed recipes to suit my taste. I also like graham crackers, so when I found this on the cracker box years ago, I had to try it. I liked it.

- In a very large bowl combine the first seven ingredients with 1/2 cup flour.
- Mix the remaining flour with the next five ingredients.
- Stir in the graham cracker crumbs.
- In a large mixing bowl beat butter and sugar till creamy.
- Gradually add egg yolks and beat till thick and fluffy.
- Add the graham crumb mixture and blend well.
- Stir into fruit mixture with orange juice.
- In separate bowl, beat egg whites till stiff but not dry; fold into graham cracker mixture.
- Turn into a well-greased 10" tube pan and bake in 325 degree oven for 1 1/4-1 1/2 hours.
- Cool in pan for 30 minutes then take out and put on rack to cool completely.

- Crush the graham crackers into fine crumbs.
- Granmama's recipe calls for "puffed" raisins. To puff them, soak in hot water for 30 minutes.
- Chop the nuts; drain and cut cherries in half (if they are whole).
- Melt marshmallows in milk.

- Pack into regular sized loaf pan.

- Line 8x5-inch loaf pan with foil, with ends of foil extending over sides of pan; set aside. Mix graham crumbs, spices, raisins, dates, candied fruit and walnuts in large bowl. Mix orange juice and corn syrup until well blended. Add to crumb mixture; stir just until crumbs are moistened.
- Press graham mixture firmly into prepared pan; cover tightly. Refrigerate at least 2 days.
