N'AWLINS-STYLE RICE WITH SHRIMP AND SAUSAGE
This hearty flavorful one-dish meal starts by sautéing smoked or andouille sausage with Cajun/Creole "trinity" - onion, celery and bell pepper.

Steps:
- Place the pickling spice in the center of piece of cheesecloth or coffee filter. Tie tightly with long piece of string.
- Cook and stir sausage, celery, onion and bell pepper in large, heavy skillet on medium-high heat about 5 minutes or until sausage begins to brown.
- Add red pepper, thyme, rice, chicken broth and pickling spice bundle. Bring to a boil. Reduce heat to low; cover and simmer 20 minutes. Stir in shrimp and tomatoes. Cover and cook on medium heat 6-7 minutes or just untl shrimp turns pink. Remove pickling spice bundle.

- Season peeled, deveined and rinsed shrimp with kosher salt; set aside. Combine seasoning ingredients; set aside. In a large skillet on medium-high heat, combine 1 stick of butter, Worchestershire sauce and seasoning mix. When butter is melted, add garlic and shrimp. Cook 1 minute, moving skillet back and forth (instead of stirring). Add remaining 5T butter. Cook and shake pan for a minute or so, until melted. Add beer and cook one minute longer. Remove from heat. Immediately pour shrimp and sauce in a large bowl. Garnish with chopped cilantro. Serve with lots of French bread on the side for dipping into the sauce.
CAJUN TOFU
This was inspired by a recent trip to New Orleans. I wanted something vegetarian, but with Cajun taste & this is what I came up with. It's easy enough for a weeknight dinner, but tastes like you've been cooking a while. You can serve it over rice, pasta or, if you want to be really southern, grits.

Steps:
- Mix the first 9 ingredients to make a spice mix. Set aside.
- Heat butter and olive oil in a large pot.
- Add onion and saute until starting to brown.
- Add garlic and 3 Tbsp of the spice mix.
- Stir and cook a couple minutes.
- Add pepper and celery and cook a couple more minutes.
- Add tomato sauce, bay leaf and tofu.
- Mix well.
- Bring to a boil and then simmer 10 minute.
- Add hot sauce to taste.

- In a medium bowl or Ziploc food storage bag, mix the shrimp, the BBQ spice and the lemon wedges.
- Turn on the oven broiler. Melt the two tablespoons of herb butter, brush it on the four slices of sourdough baguette and arrange the bread on a sheet pan that will fit in the broiler. Set the bread aside and do not toast it yet.

- In a small skillet pan over medium heat on the stove, melt the butter. Add the garlic and cook until soft, 2 to 3 minutes, stirring occasionally. Remove from the heat and add the remaining marinade ingredients. Stir and allow to cool to room temperature.
- Place the shrimp in a large, resealable plastic bag and pour in the marinade. Press out the air and seal the bag tightly. Turn the bag to distribute the marinade, place in a bowl and refrigerate for 20 to 30 minutes.
- Remove the shrimp from the bag and grill over direct high heat, with the lid closed, until just opaque in the centre and firm to the touch, 2 to 4 minutes, turning once. Remove from the grill and serve warm or at room temperature.
