Adapted from the Homesick Texan blog. I love it!! I skipped the celery seeds as I didn't have any on hand.

Number Of Ingredients 11

1 medium sweet onion, diced
1 tablespoon olive oil
1/4 cup brown sugar
1/2 teaspoon cinnamon
1 teaspoon celery seed (optional)
1 (28 ounce) can whole tomatoes
1/2 cup apple cider vinegar
1 teaspoon molasses
1/2 teaspoon ground cloves
3 chipotle chiles in adobo
salt and pepper, to taste

Steps:

  • Cook onions in oil over medium-low heat until golden. Add tomatoes and juice, crushing with the back of spoon.
  • Stir in remaining ingredients, bring to a boil, reduce heat and simmer for 1 hour.
  • Puree in food processor, then return to pan ( I strained back into pan to remove any remaining small bits of chile or tomato ) and cook over low heat until it reaches your desired consistency.

1 medium sweet onion, diced
1 tablespoon olive oil
28 ounces can whole tomatoes
1/2 cup apple cider vinegar
1/4 cup brown sugar
1 teaspoon molasses
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1 teaspoon celery seed
3 chipotle peppers in adobo seasoning
salt, to taste

Steps:

  • On medium low heat, cook the diced onion in the olive oil in a medium-sized pot just until the onions start to brown a bit on the ends.
  • Add the tomatoes and their juice to the pot, crushing the tomatoes with the back of a spoon.
  • Stir in the rest of the ingredients, bring to a boil and then simmer for an hour, stirring occasionally.
  • After an hour, puree the mixture, and then continue to cook on low heat until it reaches your desired thickness.

Mysterygirl was deserving a recipe in her honor and this is what I came up with. Sassy and spicy, just like her. I served this with seafood but would work well with other meats as well.

2 tablespoons canola oil
2 large red bell peppers, seeded and diced
1 medium onion, chopped
5 garlic cloves, pulverized
5 large roma tomatoes, chopped
1/3 cup wine vinegar, i used champagne vinegar because i had it
1/3 cup sugar
1/4 cup firmly packed chipotle chile in adobo, chilies and sauce included

Steps:

  • Heat canola oil in a 4 quart heavy saucepan over medium high heat.
  • When oil is hot add the bell peppers, onions, garlic and tomatoes.
  • Cook, stirring often, until vegetables are very wilted, about 25 minutes.
  • Add vinegar and sugar and cook, stirring often until sugar has dissolved and liquid is reduced, about 25 minutes.
  • Transfer mixture to a blender.
  • Add chipotle chilies and adobo sauce.
  • Puree until smooth.
  • Return to heat and simmer mixture gently for about 30 minutes, or until thickened and deep red in color.
  • Refrigerate.
