This delicious and easy-to-prepare recipe comes from Pam Glynn, the winner of the "Mad Hungry" TV Weeknight Dinner Challenge.

- Preheat oven to 450 degrees.
- Mix the marinade: olive oil, garlic, paprika, cumin, red pepper, cilantro (or parsley), salt, and pepper in a bowl. Using zip-top bags or a large container suitable for marinating, combine marinade, chicken, beans, and tomatoes, ensuring that everything, especially the chicken, is evenly coated with the marinade. Let marinate a few hours, all day, or overnight.
- When ready to cook, dump contents into large roasting pan. Roast 20-30 minutes, or until chicken is cooked through and browned, and tomatoes have burst and caramelized.
MYSTERY PRIZE CHICKEN
This rich, crunchy chicken is both easy and tasty! Serve hot over rice, if desired.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Put sunflower seeds and about 1/4 cup of the flour into a blender or food processor. Blend until some of the seeds are completely pulverized into flour, but some of the pieces are still large enough to be crunchy. Pour this mixture in a shallow dish or bowl and add the remaining 3/4 cup flour and the ground black pepper. Mix together.
- Dredge the chicken in the flour mixture. Heat oil in a large skillet over medium high heat. Add the coated chicken and brown for about 1 to 2 minutes on each side. (Note: You're not cooking the chicken with this step, just 'crunchifying' the flour and sealing in the juices so that the chicken stays tender while cooking). Lay browned chicken pieces in a 9x13 inch baking dish.
- In a medium bowl, mix together sour cream, cream of chicken soup and cream of mushroom soup. Pour this mixture over the chicken, making sure that it gets under and around all of the chicken pieces. Top with any remaining sunflower seed mixture.
- Bake at 350 degrees F (175 degrees C) for 1 hour or until chicken is cooked through and juices run clear.

MURDER MYSTERY CHICKEN
I got this recipe from the owner of Birk's Gasthaus in Hermann, Missouri, USA. They used to have Murder Mystery weekends and they always served this for dinner on Saturday night. I won the weekend we went, plus I came home with some wonderful recipes. I have since been told that this works great for once a month cooking. I have added those directions to the bottom of the recipe.

Steps:
- Grease a baking dish.
- Place chicken breasts in the dish.
- Top with slices of Swiss cheese.
- Combine soup and wine, pour over chicken and cheese.
- Drizzle with melted butter and sprinkle the top with the crushed croutons.
- Bake covered at 350 for 1 hour, then uncovered for 10 minutes.
- Serve over rice.
- For Once a Month Cooking:.
- Put together cheese, chicken soup, wine and put chicken on top.Freeze uncooked. When ready to cook, top with croutons or bread crumbs with butter and cook at temp in recipe.
