Quick and Simple Meatballs image

Number Of Ingredients 10

2 large eggs
1/4 cup water
1 small onion, finely chopped
1-1/3 cups soft bread crumbs
2/3 cup grated Parmesan cheese
2 garlic cloves, minced
2 teaspoons Italian seasoning
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 pounds ground beef

Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.

1 1/2 lbs hamburger
1 cup cottage cheese
1/4 cup parmesan cheese
1 cup onion, finely chopped
1 egg
1 (10 ounce) package frozen chopped spinach (thawed & drained)
1 1/2 teaspoons salt
1/4 teaspoon black pepper
4 teaspoons garlic powder
1 (8 ounce) can tomato sauce
1/4 cup dry red wine
2 tablespoons cornstarch
3 cups hot cooked rice

Steps:

  • Combine first 9 ingredients, mix well; form into 18 - 2 in diameter meatballs.
  • Place in lightly greased shallow baking pan. Bake at 450 for 20 minute.
  • In a separate pan, blend broth, tomato sauce, wine & cornstarch. Stirring constantly until thickened over medium heat.
  • Pour over meatballs, stir into pan juices.
  • Reduce heat to 350 & continue baking for 30 min longer.
  • Serve over beds of rice.
