MY FAVORITE OATMEAL RAISIN COOKIES



My Favorite Oatmeal Raisin Cookies image

Title says it all, lol. YUMMY

Number Of Ingredients 11

2 c all purpose flour
1 c brown sugar, lightly packed
1 c rolled oats
1 tsp baking powder
1/4 tsp cinnamon, ground
1/2 c butter or margarine
1/2 c raisins
1/3 c sour cream or plain yogurt, either one works
1 egg, beaten
3 Tbsp molasses
1 tsp baking soda

Steps:

  • 1. Preheat oven to 375 F. Lightly grease baking sheet(s)
  • 2. In a large bowl, combine flour, brown sugar, oats, baking powder and cinnamon
  • 3. Cut in the butter until mixture is evenly distributed
  • 4. In a food processor, blender, or with a chopper, chop the raisins
  • 5. In a separate bowl, stir together sour cream and egg. In another bowl, mix molasses and baking soda. Stir into the sour cream mixture. Add chopped raisins and stir
  • 6. Add sour cream/molasses mixture to the flour mixture, and stir into a stiff batter
  • 7. Chill in the freezer for about 15 minutes, until easier to handle
  • 8. Shape into walnut-sized balls. This can be easier if your hands are slightly wet
  • 9. Place two inches apart on lightly greased baking sheet. Flatten cookies with the back of a spoon
  • 10. Bake for about 15 minutes until a rich golden brown. Cookies may look done after about 10 minutes, but they are better if cooked 3 to 5 minutes longer

My Favorite Oatmeal Raisin Cookies image

When i made these i was hoping for a round flat cookie. That didn't happen, instead they spread very little, but wow was i suprised by the taste! These cookies don't have brown sugar in them and i think thats why i like them so much. With the white sugar you taste the cinnamon, vanilla and oats. Also i think they taste even better in the freezer! Make sure to soak your raisins in hot water while making cookies so your raisins won't burn in the oven.

2 cups all-purpose flour
1 1/4 cups granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
3 cups rolled oats or 3 cups quick oats
1 cup raisins
1 cup vegetable oil
2 eggs
1/2 cup milk
2 teaspoons vanilla (any amount would be fine)

Steps:

  • Sift together dry ingredients; stir in rolled oats and raisins. Stir in oil, vanilla, eggs, and milk. Beat with a spoon until thoroughly blended. Drop by teaspoonfuls onto an ungreased baking sheet. Bake at 400° for 10 to 12 minutes.
