- In a large bowl, combine the onion, egg, bread crumbs, milk, salt and pepper. Crumble beef over mixture and mix well. Shape into 1-in. meatballs, about 24. , Place in a shallow 1-1/2-qt. microwave-safe dish. Cover and microwave on high until meat is no longer pink, 7-1/2 minutes; drain. , Combine the soup, sour cream, milk, parsley and, if desired, nutmeg; pour over meatballs. Cover and cook on high until heated through, 5-6 minutes. Serve with noodles and, if desired, top with parsley.

- In a bowl combine the panko crumbs with milk. Add remaining ingredients for the meatballs and mix well. Shape into 24 meatballs.
- Add 2 Tbsp oil to a large skillet over medium heat. Once hot, cook meatballs in 2 batches until golden brown and cooked through (6-7 minutes), turning as needed. Add more oil as needed. Remove from the skillet and cover to keep warm.
- In the same skillet, melt the butter. Quickly whisk in the flour and cook until golden.
- Stir in the broth, heavy whipping cream, Dijon and season with salt and pepper to taste. Bring the sauce to a simmer and cook it thickens.
- Add back the meatballs and toss in the gravy sauce. Cook until meatballs are heated through.

- In a large bowl combine ground beef and pork; mix with your fingers, breaking up any lumps. Mix in all the other meatball ingredients (except the olive oil) until combined.
- Using a cookie scoop or your hands, shape the mixture into 1 1/2-inch balls. (Place on a clean platter, cover and refrigerate for about 30 minutes, if possible - this helps them retain their round shape when cooking.)
- In a large nonstick skillet, warm the olive oil over medium-high heat until shimmering. Working in batches to avoid crowding, add the meatballs and cook turning continuously until browned on all sides and cooked through, about 5-6 minutes. Repeat with the remaining meatballs. Transfer to a plate and cover with foil.
- Add the butter to the skillet and once melted, whisk in the flour; stir to combine and cook stirring constantly for about 1 minute until no lumps remain and flour just begins to brown.
- Slowly whisk in the beef broth and then the heavy cream. Whisk in the soy sauce and mustard; bring to a simmer, then turn down the heat to a gentle simmer and let the sauce thicken, stirring constantly, 1 to 2 minutes. Season with salt and pepper to taste.
- Add the meatballs back to the skillet and simmer for another 3 minutes to finish cooking and warm through.
- Serve over cooked egg noodles with a sprinkle of parsley.

- Place all the meatballs ingredients, except the oil, into a mixing bowl. Mix well.
- Roll into balls that are about 2 tablespoons worth of mixture (you can use a cookie scoop to make this step easier). We got 24 meatballs.
- Place a cast-iron skillet over high heat and add the oil.
- Saute the meatballs, adding a few at a time to the skillet, to avoid overcrowding. Turn the meatballs until browned on all sides and cooked through. Spoon onto a plate.
- Keep the skillet on the heat, including all the little bits left by the meatballs in the pan.
- Add the butter, then once melted add the beef stock, cream, mustard powder, salt, pepper, and nutmeg. Whisk together.
- Bring to a simmer then whisk in the xanthan gum. Continue to simmer until thick, about 8-12 minutes.
- Add the meatballs back in and simmer for about 3 minutes, until the meatballs are hot.
- Sprinkle with parsley.
- Serve with Buttery Cauliflower Mash and enjoy!

- Melt butter in a 10-inch skillet over medium-high heat.
- When the foaming subsides, add the flour and cook, whisking constantly, until flour turns light brown, about 30 seconds.
- Slowly whisk in the broth followed by the brown sugar and bring to simmer.
- Reduce the heat to medium and cook until the sauce is reduced to 1 cup, about 5 minutes.
- Stir in the cream and pepper then return to a simmer and let cook for 5 minutes.
- Server over freshly cooked meatballs.
- Refrigerate - Cool for 1 hour then transfer to an airtight container and refrigerate for up to 4 days.
