TO DIE FOR FETTUCCINE ALFREDO

To Die For Fettuccine Alfredo image

This is a recipe that I created by modifying my mother's recipe. My boyfriend is a fettuccine Alfredo connoisseur and he scrapes the pan every time! I get nothing but rave reviews when I make this dish. I must warn you, this recipe is not for the health conscious. Enjoy!

Time 30m

Yield 6

Number Of Ingredients 7

24 ounces dry fettuccini pasta
1 cup butter
¾ pint heavy cream
salt and pepper to taste
1 dash garlic salt
¾ cup grated Romano cheese
½ cup grated Parmesan cheese

  • In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
  • Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

CREAMY ALFREDO SAUCE RECIPE

Creamy Alfredo Sauce Recipe image

This Alfredo sauce recipe is one of my favorites. Actually I think it's just about everyone's favorite pasta recipe. For a special treat you can't beat cream, cheese and pasta together!

Provided by Karen Ciancio

Categories     Sauce

Time 25m

Number Of Ingredients 8

2 cups cream (heavy, or 35% cream is best)
1/4 cup butter (cold)
1/4 cup Parmesan cheese (grated)
salt and pepper (ideally white pepper)
pasta (fettucini, penne or tortellini are great, or use a non-wheat pasta for a gluten free recipe)
fresh parsley (chopped for garnish)
1 clove garlic (chopped (optional))
extra parmesan cheese

Steps:

  • Heat a large saucepan over high heat until very hot. Add just enough cold water to cover the bottom of the pan. Let the water evaporate (it will do this quickly) but make sure there are a few drops left in the pan. This will keep the cream from scorching and burning on the bottom of the pan. Remove the pan from the heat.
  • Add the cream to the pan and return it to the heat. When the cream comes to a boil, reduce heat to medium/ medium high and continue to boil until it is reduced by half. During that time, add the garlic.
  • In the meantime, cook pasta in well salted water according to package directions. Drain well when cooked.
  • When the cream is reduced remove it from the heat. Add butter 1 tablespoon at a time and whisk it in. The cream should thicken and turn glossy. Add the cheese and hot pasta to the cream. Season with salt and pepper and garnish with chopped fresh parsley. Serve immediately (with added parmesan cheese for me!).

BEST CHICKEN ALFREDO RECIPE

Best Chicken Alfredo Recipe image

Great simple, basic, but very delicious dinner the whole family will love.

Provided by Jadie012

Categories     Main Dish

Time 45m

Yield 4

Number Of Ingredients 9

2-3 boneless skinless chicken breasts
1 pound dried Penne noodles (fettuccine noodles also work well)
5 tablespoons Butter
1 shallot finely minced
1 3/4 cup heavy cream
1 cup finely grated Parmesan Cheese
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Fresh parsley if desired for garnish

Steps:

  • Preheat oven to 350 degrees Season chicken with salt and pepper and bake in oven about 30 minutes or until done (no longer pink and white all the way through). When chicken is cooked chop into small cubes or strips. While the chicken is cooking cook the penne noodles in a pot of rapidly boiling salted water until al dente. Drain in a colander, reserving 1/2 cup of the pasta cooking liquid. While the pasta is cooking, melt the butter in a medium saucepan over medium-high heat. Add shallots and saute until tender. Add heavy cream and bring to a boil. Cook until sauce has reduced slightly, about 5 minutes. Remove from the heat. Return the pot the pasta was cooked in to the stove and set over medium-high heat along with the reserved cooking liquid. Add the butter-cream mixture and 1 cup of the Parmesan and toss to combine thoroughly. Season with salt and pepper, to taste. Return the pasta to the pot and add cooked chicken. Sprinkle with remaining Parmesan and garnish with parsley, if desired. Serve immediately.

Provided by Kevin and Amanda

Categories     Dinner

Time 40m

Number Of Ingredients 23

1 lb skinless, boneless chicken breasts
1 egg, beaten
1 cup milk
1 tablespoon lemon juice
1 1/2 teaspoons garlic powder
1 cup all-purpose flour
1/3 cup seasoned bread crumbs
1 teaspoon kosher salt
1 teaspoon baking powder
1 tablespoon steak seasoning
2 tablespoon butter
2 tablespoon olive oil
1 lb linguine noodles
1 tablespoon salt
1 cup chicken broth
2 cups heavy whipping cream
1 cup grated parmesan cheese
2-3 cloves minced garlic
2 tablespoon cornstarch
1/2 teaspoon salt
1/2 teaspoon pepper
8 basil leaves, chopped
1 tablespoon fresh parsley, chopped

Steps:

  • Layer chicken between wax paper and pound breasts to even thickness. In a small bowl, mix the egg, milk, lemon juice and garlic powder. Pour mixture into ziploc bag with chicken. Seal and refrigerate 2 to 4 hours.
  • After marinating, whisk together flour, bread crumbs, salt, baking powder, and steak seasoning in a medium bowl. Remove chicken from milk mixture, shake off excess, and coat in flour mixture.
  • Add 1 tablespoon of salt to a large pot of water and bring to boil. Boil noodles according to package.
  • In a medium saucepan, heat chicken broth over medium high heat, bringing to a boil. Reduce heat to medium, and stir in heavy cream, cornstarch, and garlic. Bring to a soft boil and stir for one minute. Reduce heat to low, add parmesan cheese, salt and pepper. Let simmer for about 10 mins to melt cheese, let thicken, and incorporate flavors.
  • Meanwhile, heat butter and olive oil in a large skillet over medium heat. When butter just starts to turn brown, arrange chicken in skillet. Cook 4-5 mins each side until juices run clear and chicken is cooked through. While chicken is cooking, chop fresh herbs and stir into Alfredo sauce right before serving. Serve sauce over pasta and chicken.

EASY, RICH AND YUMMY! I am always disappointed when I order anything Alfredo at a restaurant. I used to work at a restaurant called Bay Street long ago and they made the best and this is based on it. • Add the onion and ONLY 1 cup of the broth to a large pan over medium to medium-high heat. Cook for about 8 minutes until the onion is very tender. (Add a tiny bit more broth if it is cooking too fast or turn the heat down, so the onions don't burn) After 8 minutes, add the garlic and cook a couple of minutes more, stirring often. All of the broth should have evaporated by now. If not, keep letting it cook until the broth is GONE. You don't want any more liquid once it's done cooking, so the end result is thick and creamy.
  • Add the cooked veggies (the onion and garlic) to a blender. Start out by adding JUST 1/2 cup more of the remaining broth and add the remaining ingredients (salt, pepper, cashews, starting with JUST 1/2 tablespoon lemon juice, nutritional yeast-starting with just 2 tablespoons yeast). Blend on high for a couple of minutes until very creamy and smooth. Add any more broth to reach desired consistency, if necessary. I did not. If you don't add more broth, you would likely not need any more yeast. Taste and add any more salt & pepper or lemon, if desired.
  • Serve over preferred pasta. Note: When preparing your pasta, make sure to salt your water well, so your pasta has flavor and isn't bland, which can affect the end flavor result of the dish. I add around a tablespoon to a large pot of boiling water. Garnish with parsley, lemon zest and salt & pepper, if desired. Add any veggies you like. I like to add broccoli or even peas. Store leftovers in the fridge. The sauce will thicken up even more overnight, which you can thin out a little with a touch of broth when reheating, if necessary.
