SWEDISH YELLOW PEA SOUP



Swedish Yellow Pea Soup image

Number Of Ingredients 7

1 pound dried, whole or split yellow peas (see note)
1 large onion, chopped, 1 1/2 to 2 cups
1 pound fresh bacon, in one piece
1 bunch fresh marjoram or thyme
Hot and sweet or hot mustard, to taste
Fine sea salt to taste
Freshly ground black pepper to taste

Steps:

  • Rinse the peas in a colander under cool running water. Put them in a large, nonreactive bowl and cover with water by 2 inches. Let soak uncovered in a cool place overnight.
  • Put the peas and soaking water into a heavy 6-to-8-quart pot. Add water to cover again by 2 inches. Bring to a boil over medium heat, and let boil two minutes. Skim off and discard any foam and skins that rise to the top.
  • Stir in the chopped onion. Cut the piece of bacon crosswise into two pieces, and add to the pot with 3 tablespoons fresh marjoram or thyme leaves, stripped of stems and chopped.
  • Let the soup boil gently for 40 to 90 minutes until it becomes very thick and buttery yellow. Whole peas will take longer and will be soft but still whole when cooked. Split peas will take a shorter time to cook and will almost disintegrate. If the soup becomes too thick, add more water.
  • Remove the pot from the heat. Remove the two pieces of bacon, and cut off and discard the rind. Cut the bacon crosswise into 1/2-inch slices. Reserve.
  • Stir the soup well, and season with 2 to 4 tablespoons mustard. Add salt, if necessary, and black pepper. Add more fresh thyme or marjoram if desired.
  • Serve with soup in shallow bowls with slices of bacon on the side. Pass additional mustard to stir into the soup. In Sweden, this soup, called artsoppa, is served with crisp rye bread covered with grated vasterbottem, a sharp, hard cheese. Aged cheddar and Parmigiano Reggiano are good substitutes.

Swedish style yellow split pea soup is comfort for the soul.

1 lb. dried yellow split peas
8 cups chicken stock, fresh if possible
2 yellow onions, chopped coarsely
1 whole onion studded with 10 whole cloves
1 meaty smoked ham hock, about 2 to 2 1/2 pounds
1 teaspoon dried thyme or 2 tablespoons fresh thyme
1 tablespoon grated fresh ginger
1 teaspoon sea salt
¼ teaspoon black pepper

Steps:

  • Rinse and pick through the peas. Watch for any small pea-sized rocks that might be there. I know you don't want to visit the dentist for a chipped tooth.
  • Fill a large pot with the chicken stock, add the peas, the chopped onion, the ham hock, and the onion studded with cloves, thyme, and grated ginger.
  • Bring to a boil then reduce the heat to medium-low and simmer for 90 minutes (uncovered).
  • Remove the studded onion and discard it. Remove the ham hock and transfer it on a cutting board. When the ham hock gets cool enough to handle, remove and discard the fat, bone, and tough gristle. Chop the lean ham and return it to the soup pot. You will probably have about one cup of ham.
  • Continue to simmer the soup for an additional 30 minutes stirring it often. It will thicken up and if you prefer a thinner soup you can add additional chicken stock.
  • Taste the soup and season with salt and pepper if needed. Serve with a nice crusty whole-grain bread and a dollop of brown mustard. Enjoy!

Swedish Pea Soup (Artsoppa) image

A traditional Swedish dish. Very easy to prepare. The consistency of the peas is up to everyone. I like them al dente in the broth, while some like them so soft that the soup becomes more like a porridge. In Sweden this is traditionally served with warm Punsch (a sweet beverage with arrack). The soup could of course be made vegetarian. Substitute vegetable bouillon cubes for the meat.

2 cups dried yellow peas
1 1/2 lbs unsmoked salted bacon (or 1 small, salted knuckle of pork)
1 large onion, coarsely chopped
salt
pepper
1 bay leaf
thyme
marjoram
mustard (optional)

Steps:

  • Soak the peas in 2 quarts of water overnight.
  • Bring the peas to a boil in the water they soaked in.
  • Add onion, meat and spices except mustard.
  • Simmer until the meat is done and the peas have softened (about 1 hour).
  • Take up the meat and cut into pieces.
  • Put them back in the soup.
  • Add more spices, if necessary.
  • Serve hot with mustard.

This yellow split pea soup has fresh ginger to give it a bright flavor. Use the best ham you can find to get the most flavor.

3 cups yellow split peas (about 1 1/2 pounds)
4 cups reduced-sodium chicken broth
4 cups water
2 cups diced yellow onion
1 cup diced carrot
1 cup finely diced celery
8 ounces ham, trimmed and diced
1 tablespoon minced fresh ginger
1 teaspoon dried marjoram
Freshly ground pepper to taste

Steps:

  • Place split peas in a medium bowl. Wash with cold water until the water runs clear; drain and spread in a 5- to 6-quart slow cooker.
  • Add broth, water, onion, carrot, celery, ham, ginger and marjoram to the slow cooker (see Tip). Stir to combine.
  • Cover and cook for 5 hours on High or 7 to 8 hours on Low. Season with pepper.

Pea Soup is traditionally eaten in Sweden and Finland on Thursday in preparation for fasting on Friday. It is very popular there as it is inexpensive and easy to make and most people like it. In Sweden yellow split peas are used; green for Finland. A great use for leftover ham using ingredients found in most kitchens.

1 lb dried split peas (about 2 cups)
6 cups chicken broth
3 cups ham, cut into 1/2 inch dice (about 1 pound)
1 1/2 cups onions, thin sliced
1 1/2 teaspoons marjoram, chopped or
1 teaspoon dried marjoram, crushed
1/4 teaspoon ginger, grated
1/4 teaspoon fresh ground pepper
spicy brown mustard (to garnish)

Steps:

  • Sort through peas to remove any stones or foreign matter. Wash and drain.
  • Combine all the ingredients except mustard in a large saucepan or Dutch oven. Bring to a boil; reduce heat, cover, and simmer 1 1/2 hours, stirring occasionally.
  • Serve with spicy brown mustard.

This is the Pea soup we serve with Piruka. You can cook this on top of the stove, crockpot, or in a roasting pan in the oven. I prefer to cook it in the oven or a Large cockpot when I am not going to be home. But if I do it in a cockpot I have to cut the recipe in half.

2 smoked ham hocks
1 left over ham bone with plenty of meat left on
1 organic celery stock, chopped fine..save the leaves for chicken soup or make a celery stock
2 organic carrots, chopped fine
1 medium organic brown onion, i prefer the texas onion. save the brown skin for coloring easter eggs
3 c of rich homemade plain beef stock..or if you must 3 bouillon cubes
1 oregon myrtle leaf..or bay leaf
9 c water, plus 3 cups if you are using bouillon cubes
3 lb dried whole green peas, yellow peas, split green peas and split yellow peas. (organic)
salt to taste
white pepper to taste

Steps:

  • 1. Yes, you are going to use all four different kinds of peas. Please not we are talking about Ham as American's make which is sweet. Ours is roasting only in a little water.
  • 2. Put it all the ingredience in a roasting pan with a open vent and cover. Set in oven at 350*. It will need to cook all day till it is reduced to the consistence you like. You will need to stir it occasionally to lift the peas from the bottom. Add as much salt and pepper as you like. Remove ham bones and hock bones. Cut off the ham and whatever meat you have on the hooks. Return to soup. We do not throw away the ham bone, the hook bones or the fat. It is all return to the soup after we have finished serving. We return it to the leftover soup as it keeps adding flavor to the soup. It freezes beautifully.
  • 3. We serve this with homemade Black Russian Rye bread/with lots of sweet butter or Piruka. When I cook this, I start it cooking before I go to bed. I don't sleep well, for me it's not an inconvenience.

  • Heat a large pot over medium heat, and add in the olive oil. When the pan is heated, add the onion, and saute for 5-7 minutes, or until translucent. Add in the carrots and saute for another 5-7 minutes until tender.
  • Add in salt, clove, thyme, and marjoram, cooking for 1 minute to let the spices bloom. Mix in the vegetable stock, the soaked and drained split peas, and turn the heat up to high. Bring to a boil, and then turn down to medium-low, and simmer for 30 minutes.
  • Remove from heat, and add 3/4 of the soup to a blender. You can do this in batches if you'd like to be more on the cautious side. Using a towel on top of the blender lid, carefully blend until velvety smooth. Be careful, the soup will be extremely hot.
