2 large eggs, lightly beaten
3/4 cup 2% milk
2/3 cup finely crushed saltines
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon rubbed sage
Dash pepper
1-1/2 pounds lean ground beef (90% lean)
1 cup ketchup
1/2 cup packed brown sugar
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. Spread remaining mixture over meat loaf., Bake 60-65 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Serve with reserved sauce.

1 1/2 pound 90 percent lean ground beef
1 cup tomato juice or sauce
3/4 cup quaker oats, quick or old-fashioned, uncooked
1 egg or 2 egg whites, lightly beaten
1/4 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl, combine all of the ingredients, mixing lightly but thoroughly. Press into an 8-by-4-inch loaf pan.
  • Bake for 1 hour to medium doneness (a thermometer inserted in the center should read 160 degrees) or until not pink in the center and juices run clear. Let stand for 5 minutes and drain off any juices before slicing.

This is a great go to recipe. It's easy and relatively inexpensive to make.

Number Of Ingredients 14

1 1/2 lb lean ground beef or turkey
3/4 c quaker oats
3/4 c finely chopped onion
1/2 c ketchup
1 egg, lightly beaten
1 Tbsp worcestershire sauce
2 clove garlic, minced
1/2 tsp salt
1/4 tsp pepper
FOR THE SAUCE:
1/2 c grated onion
1 c ketchup
5 Tbsp brown sugar
1-2 Tbsp vinegar

Steps:

  • 1. Heat oven to 350 degrees. Combine all ingredientsin large bowl; mix lightly but thoroughly. Bake 50-55 minutes or until meatloaf is to medium doneness. (Beef 160 degrees, Turkey 170).
  • 2. Twenty minutes before the meatloaf is done, drain off grease and liquid. Cover the meatloaf with 1/2 cup of the grated onion. Mix the remaining sauce ingredients in a pan and heat slightly, do not boil. Brush on top of meatloaf. If you like more sauce you can always double the ingredients. Let stand 5 minutes before slicing.

Bake 1 hour to medium (160°F) doneness until not pink in center and juices show no pink color. Let stand 5 minutes; drain off any juices before slicing. Plate, serve and enjoy!

Number Of Ingredients 10

1 pound ground beef, 80/20
1 tablespoon Montreal Steak Seasoning
1 tablespoon garlic, minced
1/4 cup minced onions
2 eggs
3/4 cup milk
3/4 cup old fashioned rolled oats (regular or gluten free oats)
1 tablespoon Worcestershire sauce
2 tablespoon ketchup
1 15-ounce can tomato soup, divided

Steps:

  • Preheat oven to 350F, rack in the middle. Line a rimmed baking sheet with parchment paper and lightly spray. In a large bowl add the oats and milk and gently mix. Set aside for 15 minutes to allow the oats to soak in the milk.
  • After 15 minutes strain out the milk into a separate container but do not discard. *If there is no milk left, it's OK. Some brands of oats suck up all the milk while others do not.
  • In the bowl the oats are in, add the ground beef, eggs, Worcestershire sauce, steak seasoning, garlic, onions, ketchup, and 3 tablespoon of tomato soup.
  • Just combine but try not to overwork it as it will get tough. If the mixture is too wet, add in 1-2 more tablespoon of oats (don't worry if they aren't soaked). If too dry, add in the milk 1-2 tablespoon at a time. If you have no milk left as your oats sucked it all up just add more milk or water. You want the mixture to be pretty moist but firm enough to hold a shape.
  • In the bowl gently press together.
  • Transfer the mixture to the baking sheet and using your hands, form a loaf that is about 12 inches long, 6 inches wide, and about 2 1/2 inches tall. The loaf should be smooth and have rounded edges. This will help the loaf stay together when serving.
  • Bake for 30 minutes, remove from the oven, and spread the remaining tomato soup on top of the meatloaf.
  • Continue baking for another 30 minutes.
  • Remove from the oven and allow to rest for 10-15 minutes before serving.

It took my almost ten years of experimenting with different techniques and flavors before I got it just right. It won first place in last year's kentukcy state fair meatloaf and meatball contest.

1 lb lean ground chuck
1 (6 ounce) box cornbread stuffing mix
1/2 cup red bell pepper
1/2 cup yellow bell pepper
1 cup yellow onion, diced
1/2 cup carrot, grated
1/2 cup celery, diced
2 tablespoons tomato paste
3 tablespoons steak sauce
1 egg
salt
pepper
1/4 cup knorr tomato soup mix
chili powder
garlic salt
cumin
1 cup French dressing
1/2 cup barbecue sauce
5 tablespoons louisiana hot sauce
1/4 cup unsweetened apple cider

Steps:

  • Mix all ingredients (except the last four) well and shape into a a loaf. Bake for 30 minutes on 400 degrees and then glaze with last four ingredients and bake 30 more and then slice and serve.
  • Cook's tips-to soak up grease, place a couple of slices on the bottom of your pan before baking.For more flavor, make 1 hour before baking and chill in the fridge for flavors to fully marry together.

  • Choose your meat carefully. It is best to use a blend of meat in your recipe. A mixture of ground beef and pork sausage is ideal to produce a moist and delicious meal.
  • Saute your veggies. Whatever vegetables that you choose to use, be sure to saute them in olive oil or butter before adding them to your meat mixture.
  • Soak your breadcrumbs/oatmeal. The biggest debate when cooking meatloaf centers around breadcrumbs vs. oatmeal. The only thing that can be agreed upon is that a dry ingredient is needed to help bind the mixture.
  • Don’t overmix! Most people prefer to mix the ingredients with their hands. It is just easier. Although this is a great method, most individuals tend to squeeze and mash the mixture together too much.
  • Do NOT use a loaf pan. I grew up watching my parents make meatloaf and cooking it in the same loaf pan as we used when we made bread. It made total sense to me.
  • Let it rest. After removing it from the oven, even the best meatloaf needs to rest. Simply cover it with foil and allow it to rest for about 10 minutes.
