NORTHWEST SALMON CHOWDER

I've lived on a farm in the Yakima Valley all my life. I have a big garden, and by the end of fall, my cellar shelves are full of canned fruits and vegetables. This recipe uses some of the root vegetables I grow...along with the delicious salmon that is so plentiful here. -Josephine Parton, Granger, Washington

Number Of Ingredients 13

1/2 cup each chopped celery, onion and green pepper
1 garlic clove, minced
3 tablespoons butter
1 can (14-1/2 ounces) chicken broth
1 cup uncooked diced peeled potatoes
1 cup shredded carrots
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/4 to 3/4 teaspoon dill weed
1 can (14-3/4 ounces) cream-style corn
2 cups half-and-half cream
1-3/4 to 2 cups fully cooked salmon chunks or 1 can (14-3/4 ounces) salmon, drained, flaked, bones and skin removed
Optional: crumbled cooked bacon, chives and cracked black pepper

Steps:

  • In a large saucepan, saute celery, onion, green pepper and garlic in butter until the vegetables are tender. Add broth, potatoes, carrots, salt, pepper and dill; bring to a boil. , Reduce heat; cover and simmer for 40 minutes or until the vegetables are nearly tender. Stir in the corn, cream and salmon. Simmer for 15 minutes or until heated through. If desired, garnish with bacon, chives and cracked black pepper.

Hmmm... canned salmon seems to be a theme here. Love the stuff. Commercially canned or home canned, the stuff is just great. So much tastier than canned tuna. Anyway, this recipe was just sent to me from The Farmer's Almanac - gotta stash & save to make sometime soon 'cause it's got all the right stuff.

3 tablespoons butter
1/2 cup onion, chopped
1/2 cup celery, chopped
1/4 cup green bell pepper, chopped
3 garlic cloves, minced
1 cup potato, peeled and diced
1 cup carrot, diced
2 cups chicken broth (or stock)
1 1/2 teaspoons salt
3/4 teaspoon pepper
1/2 teaspoon dill seed
1/2 cup zucchini, diced
1/2 cup yellow squash, diced
15 ounces salmon, canned
12 ounces evaporated milk
7 ounces creamed corn

Steps:

  • In a large saucepan or stockpot, melt the butter over medium-high heat.
  • Add the onion, celery, green pepper, and garlic and saute until translucent, about 5 minutes.
  • Add the potatoes, carrots, broth, salt, pepper, and dill seed. Cover and simmer for 20 minutes.
  • Add the zucchini and yellow squash and simmer for 5 minutes.
  • Flake the salmon and add to the pot along with its liquid, the milk, and the corn.
  • Heat to boil through before serving.

¾ cup chopped onion
½ cup chopped celery
1 teaspoon garlic powder
2 cups diced potatoes
2 carrots, diced
2 cups chicken broth
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried dill weed
2 (16 ounce) cans salmon
1 (12 fluid ounce) can evaporated milk
1 (15 ounce) can creamed corn
½ pound Cheddar cheese, shredded

Steps:

  • Melt butter in a large pot over medium heat. Saute onion, celery, and garlic powder until onions are tender. Stir in potatoes, carrots, broth, salt, pepper, and dill. Bring to a boil, and reduce heat. Cover, and simmer 20 minutes.
  • Stir in salmon, evaporated milk, corn, and cheese. Cook until heated through.

16 ounces nonfat cottage cheese
6 tablespoons nonfat dry milk powder
1 onion, diced small
4 stalks celery, diced small
1 red bell pepper, diced small
8 garlic cloves, minced
32 ounces fat-free low-sodium chicken broth or 32 ounces fish stock
1 cup water
3 russet potatoes, peeled and diced large
8 ounces carrots, grated
12 ounces broccoli coleslaw mix
2 teaspoons dill weed, dried
3 bay leaves
2 teaspoons Old Bay Seasoning
1 tablespoon Worcestershire sauce
1 teaspoon liquid smoke
14 3/4 ounces cream-style corn, canned
12 ounces canned salmon
8 ounces smoked salmon
8 ounces salmon fillets

Steps:

  • Make cream substitute: Combine cottage cheese and nonfat dry milk in food processor and process five minutes (or until completely smooth). Set aside.
  • In a dutch oven, saute the onion, celery, red pepper and garlic in 1/4 cup broth, until tender.
  • Add potatoes, carrots, dill weed, bay leaf, and remaining broth. Cover and simmer for 20 minutes, or until vegetables are tender.
  • Add broccoli slaw and cook another five minutes.
  • Add creamed corn, salmon, Old Bay, Worcestershire sauce, and liquid smoke, and cook another five minutes.
  • Add cream substitute and stir thoroughly. Cook over medium-low heat until heated all the way through.

Remove the salmon bits (save them!) and discard the water. Blanching this way removes the scum from the stock and will give you a cleaner tasting broth when you are done.
  • Wipe out the pot, add the oil, and turn the heat to medium-high. When the oil is hot, saute the onion, carrot and celery, stirring often, until the onion is soft, about 4 to 5 minutes. Add the wine, bay leaves and the dried mushrooms and use a wooden spoon to scrape up any browned bits from the bottom of the pot. Let the wine boil for a minute or two, then add the blanched salmon bones and enough cool water, at least 6 cups, and ensure it covers everything by about 1/2 inch. Bring to a very gentle simmer for 1-2 hours.
  • Line a strainer with a paper towel or cheesecloth. Set the strainer over a large bowl or pot and strain the broth. Discard the solids and reserve the broth.
  • To make the chowder, melt the butter in a Dutch oven over medium heat. Add the bacon pieces and cook, stirring and turning often, until crispy, about 10 minutes. Add the onion and celery and saute until soft, about 5 minutes. Add the potatoes and the salmon broth and bring to a simmer. Cook until the potatoes are tender, about 15 to 20 minutes.
