Crispy cheese balls that are easy to make, taste delicious with great flavors. These potato cheese balls make for a great party snack. These can be deep fried, baked or pan fried.

250 grams potatoes ((9 ounces Russet or Yukon gold))
1 teaspoon garlic (paste or powder)
salt (use little - cheese is salted)
½ to ¾ teaspoon chilli flakes ((adjust to taste))
⅛ to ¼ teaspoon black pepper (crushed or ground)
½ teaspoon dried herbs ((Italian or any))
6 tablespoons bread crumbs (or panko crumbs )
2 tablespoons cilantro ((coriander leaves or any fresh herbs, fine chopped))
oil (as needed for frying)
100 grams cheese ((3.5 ounces cheddar or mozzarella))
½ teaspoon dried herbs ((Italian or any))
¼ to ½ teaspoon chilli flakes ((skip for toddlers))
⅛ to ¼ teaspoon black pepper (crushed or ground)
⅛ teaspoon allspice ((or any spice blend or ½ tsp garam masala))
2 tablespoons corn flour ((corn starch))
2 tablespoons corn flour ((corn starch) or 1 egg)
½ cup bread crumbs

Steps:

  • Boil potatoes with the skin on till fork tender and not mushy.
  • Remove the skin and mash them well until smooth with a masher. There should be no lumps.
  • Add garlic, herbs, coriander leaves, salt (very little), chili flakes, pepper and bread crumbs.
  • Mix them well and form a ball. The mixture must bind together and should not be sticky or too dry.
  • Divide the mixture to 8 to 10 equal sized balls. Cover and keep aside.
  • Cut the cheese to ½ inch cubes. Mix together herbs, chili flakes, pepper and spice powder. Toss the cheese in this mix. Set aside.
  • Take a potato ball and spread it evenly to a small patty in your palm. Place a cheese cube in the center. (Check step-by-step pictures)
  • Gently bring the edges together to make a ball. Ensure the ball is sealed well without any cracks.
  • Add 2 tbsps corn flour to another wide plate. Spread it.
  • Roll the finished ball in corn flour. The same way make all the cheese balls.
  • If you do not prefer to coat them in bread crumbs, you can pan fry these straight away.
  • Transfer ½ cup bread crumbs to a separate plate. Set this aside.
  • Make slurry: Add 2 tbsps corn flour to another bowl and mix with 3 to 4 tbsps water. Make a thin mixture. Alternately you can also use a beaten egg.
  • Gently drop each ball in the corn flour mixture or egg and make it moist.
  • Immediately roll it in bread crumbs. Set this aside in a plate. Finish making all the balls.
  • Double bread the cheese balls - Repeat the same steps of dipping in flour mixture and then coating the bread crumbs again.
  • Set aside in a plate. Rest them for 10 mins.
  • To a wide deep pan pour oil just enough to half immerse the cheese balls. Heat the oil on a medium flame.
  • Drop a small piece of the potato mixture to check if the oil is hot enough. It has to come up immediately without browning. This is the right temperature.
  • Regulate the flame to medium. Gently slide the balls one by one & do not disturb them for 1 to 2 mins.
  • Gently stir them and fry until golden and crisp.
  • Serve potato cheese balls hot with any dip or sauce.
  • To bake - Preheat the oven at 200 C ( or 390 F). Grease a wired rack and place it on a tray.
  • Place the cheese balls over the rack and bake them for 15 mins. Adjust the timings as needed.
  • You can pan fry them in 2 batches using 2 to 3 tbsps oil per batch.
  • Some amount of bread crumbs will come off the balls and it is just okay. They will still be good.

2 cups shredded gouda cheese, (8 ounces)
1 egg, or 2 egg whites
2 tablespoons cornstarch, or all-purpose flour
1/2 cup cracker crumbs, for dredging (optional)
vegetable oil, for frying
your favorite sauce, for dipping

Steps:

  • With an electric mixer or by hand, mix the cheese, egg and cornstarch (or flour) in a large bowl until a soft dough forms. Scoop 2 teaspoons of dough and roll into a ball. If desired, roll balls in cracker crumbs for an extra crispy coating. Refrigerate cheese balls until thoroughly chilled, about 30 minutes. In a medium frying pan, heat oil over high heat (350°F for deep frying). Fry cheese balls until golden brown, turning once, about 30-60 seconds per side. Drain on paper towels. Serve hot with your favorite sauce for dipping.

Well guys and gals, I'm still on a health kick; but had to find a recipe for cheese balls. Thanks to my good neighbor's recipe I made these last night and what a good tast with out the calories. Regular recipe for these are 84 fat grams and 1060 calories. Well folks, these little treats are only 5 grams of fat and only 177...

1 c frozen chopped onions and peppers, defrosted
4 oz (about 1 cup) shredded 50% cheddar cheese, such as gabot
1 tsp cornstarch
salt and pepper to taste
1/2 c whole wheat flour
1 1/2 c whole wheat panko bread crumbs
2 large egg whites
nonstick cooking spray
1/2 c unsweetened applesauce
1 tsp chopped pickled jalapenos (optional)
1 tsp dijon mustard

Steps:

  • 1. Preheat your oven to 450
  • 2. Place a wire rack on a foil-lined baking sheet and set aside.
  • 3. In a medium bowl,mix to pepper and onion mixture with the cheese and cornstarch.
  • 4. Season with salt and pepper to taste.
  • 5. Form this mixture into 8 balls, squeezing out any excess liquid. (the balls will seem loose)
  • 6. Transfer the balls to a plate and freeze for at least 15 minutes or until firm.
  • 7. Put the flour in a shallow dish. Put the pando in another shallow dish.
  • 8. In a medium bowl, whip the ege whites with a whisk until they are extremely foamy but not quite holding peaks.
  • 9. Remove the cheee balls from the freezer. Working in batches, dredge the cheese ball in the flour, shaking off any excess.
  • 10. Add the cheese balls to the egg whites and toss to coat them competely.
  • 11. Add the cheese balls, a few pieces at a time. to the dish of panko and coat completly.
  • 12. Spread the balls on the wire rack and spray them lightly with cooking spray.
  • 13. Place in oven and bake until the reading is golden brown and crispy, about 5 to 7 minutes.
  • 14. Meanwhile, combine the applesauce, jalapenos (optional) and mustard in a small bowl. Add salt and pepper to taste and stir.
  • 15. Remove the cheese balls from the oven and serve with the sauce.

2 tbsp. unsalted butter, plus 1 tbsp. melted
1/4 c. fine breadcrumbs
Kosher salt, to taste
1/2 lb. macaroni (2 cups)
2 tbsp. all-purpose flour
2 tsp. Dijon mustard
1/2 tsp. sweet paprika
2 c. whole milk
4 c. Sargento® Creamery Shredded Natural Cheddar Cheese (from two 6-ounce bags)
2 large eggs
Freshly ground black pepper, to taste
Hot sauce, for serving, optional

Steps:

  • Preheat the oven to 400°. Brush the cups of three 12-cup mini cupcake pans with the melted butter. Then sprinkle each tin with breadcrumbs and shake the pan, tilting to coat with breadcrumbs.
  • Bring a medium pot of salted water to a boil. Add the macaroni and cook according to the package directions until al dente. Drain and set aside.
  • Meanwhile, make the béchamel: Melt the remaining 2 tablespoons of butter in a medium pot over medium heat. Add the flour and cook, stirring, until very lightly toasted, about 1 minute. Stir in the mustard and paprika.
  • While whisking, slowly pour in the milk. Bring to a boil and cook over medium-low heat, stirring, until the mixture is thick enough to coat the back of a spoon, about 2 minutes. Reduce the heat to low and add the cheese, a small handful at a time, stirring until the cheese is melted before adding the next addition. (You should have 2½ cups cheese sauce.) Remove from the heat and stir the cooked macaroni into the cheese sauce.
  • In a large bowl, beat the eggs, then scrape the mac and cheese into the eggs and stir to combine. Season with salt and pepper.
  • Mound about 2 rounded tablespoons of the mac and cheese mixture into each cup of the prepared cupcake pan.
  • Bake until the cheese is melted and the bites are golden brown, 20 to 25 minutes. Let cool for at least 5 minutes before removing from the tins. Run a knife around the outside of each bite before removing it. Serve warm or at room temperature with hot sauce on the side, if desired.

1 pound elbow macaroni
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups milk, warmed, plus 2 tablespoons for egg wash
1 pound grated Cheddar
1 pound grated smoked Gouda
Salt and freshly ground black pepper
2 large eggs
3 cups seasoned bread crumbs
Vegetable oil, for frying
Marinara or Alfredo sauce, to serve

Steps:

  • Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking. Drain again and set aside.
  • In a saucepan, melt the butter over medium heat. Sprinkle the flour into the butter and stir it with a whisk. Cook for 2 minutes. Whisk the warmed milk into the flour mixture, working out any lumps. Cook until the sauce thickens, about 2 minutes. Remove from the heat, add the cheeses, and stir until melted and smooth; season with salt and pepper. Fold the cheese sauce into macaroni. Pour the mac and cheese into a shallow pan and refrigerate until cold, at least 2 hours.
  • Shape the cold mac and cheese into meatball-sized balls and place them onto a waxed paper-lined tray. Freeze the balls overnight.
  • Beat the eggs and 2 tablespoons milk together to form an egg wash and pour it into a shallow bowl. Put the bread crumbs into another shallow bowl. Remove the mac and cheese balls from the freezer. Dip the frozen balls into the egg wash then into the bread crumbs. Put the balls back into the freezer until you are ready to fry.
  • Heat the oil in a deep-fat fryer to 350 degrees F. Fry the mac and cheese balls until they are golden brown and center is hot, about 5 minutes. Serve hot with your favorite marinara or Alfredo sauce or combination or both for dipping.

1 cup shredded cheese (your favorite blend)
salt & pepper for seasoning
2 eggs
1 1/2 cups Panko breadcrumbs
2 cups oil for frying
Ranch, Marinara, or other sauce for dipping

Steps:

  • In a bowl, combine the leftover mac n cheese and the extra cheese.
  • Scoop into 1.5 inch balls and place on a baking sheet.
  • Freeze for 15 minutes.
  • While the balls are chilling, beat two eggs in a bowl with a little water.
  • In a separate bowl, add the Panko crumbs.

1 1/2 heaping cups fresh broccoli florets
1 cup shredded Colby cheese
1 cup shredded cheddar cheese
4 ounces Velveeta, cut into small chunks
1/2 teaspoon crushed red pepper flakes
2 1/4 cups Panko crumbs, (divided)
1 egg, (lightly beaten)
1/2 cup all-purpose flour
2 eggs, (lightly beaten)
Vegetable or Canola oil

Steps:

  • Steam broccoli until slightly softened. Let cool.
  • Finely chop broccoli. You want the pieces to be 1/4-inch or less. Place in a large bowl.
  • Add cheese, red pepper flakes, 1/4 cup Panko crumbs, and 1 egg to bowl with broccoli. Stir well.
  • Use your hands to shape mixture into balls using about a rounded tablespoon for each ball. You should get 12-14.
  • Place balls on a plate and refrigerate for at least 30 minutes.
  • Place flour in a bowl.
  • Place the 2 lightly beaten eggs in a second bowl and mix in 1 tablespoon water.
  • Place remaining 2 cups Panko crumbs in a third bowl.
  • Pour about 2 inches of oil in a Dutch oven or heavy pot. Heat oil to 375 degrees. For best results use a thermometer.
  • Remove broccoli balls from refrigerator, coat in flour, dip in egg mixture, and then coat in Panko crumbs.

These fried mac and cheese balls are irresistible! This easy recipe calls for a crunchy potato chip coating and a flavor reminiscent of pimiento cheese dip.

1/2 lb. elbow macaroni
1 tbsp. butter
1 c. + 1 tablespoon all-purpose flour, divided
1 1/4 c. whole milk
8 oz. shredded sharp cheddar cheese
8 oz. shredded pepper-jack cheese
1 4 oz. jar diced pimentos, drained, rinsed and patted dry
1 tsp. kosher salt
1/4 tsp. cayenne pepper
3 large eggs
12 oz. kettle cooked potato chips
Vegetable oil, for frying

Steps:

  • Cook the macaroni according to the package directions. Drain and rinse the macaroni and set aside.
  • Melt the butter in a medium saucepan over medium heat. Add 1 tablespoon of the flour and cook 1 minute, stirring with a whisk. Whisk in the milk and cook 3-4 minutes until the mixture reaches a low boil and thickens. Reduce the heat to low and stir in the cheeses and mix until melted. Add the pimientos, salt, and red pepper and stir to combine. Fold in the macaroni. (The mixture will be very thick.)
  • Spread the macaroni mixture evenly into a 9-inch by 13-inch pan. Cover with plastic wrap and refrigerate for 2 hours or until cold.
  • Shape the cold macaroni mixture into 2-inch sized balls and place on a parchment lined sheet tray.
  • Place the potato chips in a gallon-sized zip-top bag. Using a rolling pin, gently roll over the bag to finely crush the chips. Pour the crushed chips into a shallow dish. Place the remaining 1 cup of flour in a shallow dish. Whisk the eggs in a small bowl. Roll each ball around in the flour, then dip in the eggs letting any excess egg drip off. Roll the ball in the crushed potato chips, firmly pressing the chips into the ball to create a solid coating. Return the balls to the baking sheet. Repeat to coat all of the balls.
  • Heat the oil in a dutch oven or large pot until a thermometer registers 350°. Fry 6 balls at a time for 4 to 5 minutes or until golden brown and hot in the center. Drain on paper towels. Serve warm.
