THE BEST MISSISSIPPI MUD CAKE EVER

The Best Mississippi Mud Cake Ever image

This one is near and dear to my heart. This is my mother's recipe - it has to be well over 50 years old. The cake is incredibly moist and the icing turns into a fudgy layer on top. Really, really good!

Provided by D Gentolizo

Categories     Cakes

Time 1h40m

Number Of Ingredients 20

CAKE INGREDIENTS
2 c flour
2 c sugar
2 tsp baking soda
1/4 tsp salt
1/3 c cocoa
1 c buttermilk ( or 1 tbsp vinegar to 1 cup milk, let sit for an hour)
1 c vegetable oil
1 c boiling water
1 tsp vanilla
2 eggs
ICING INGREDIENTS
1 c sugar
2 Tbsp light corn syrup
1/4 c milk
2 Tbsp butter
1/2 pkg chocolate chips (6 oz.)
1 tsp vanilla
miniature marshmallows
1/3 c chopped nuts, optional

Steps:

  • 1. Turn the oven on to 350 degrees. Grease and flour a 9x13 inch pan.
  • 2. Mix together flour, sugar, soda, salt and cocoa. Then, add buttermilk, oil, boiling water, vanilla and eggs. Beat thoroughly and pour into the greased and floured pan. (If the batter seems a little thin, you are right on track! :-) Bake 35-45 minutes, testing with a toothpick to determine doneness.
  • 3. Start the icing 5 minutes before the cake is done. Combine sugar, corn syrup, milk and butter in a saucepan and boil 2 minutes (no longer) then add the chocolate chips, vanilla, and nuts. Mix until the chocolate chips are melted.
  • 4. Sprinkle the miniature marshmallows all over the top of the baked cake as soon as it is removed from the oven, then drizzle the hot icing mixture over the marshmallows.

MY MOTHER'S MISSISSIPPI MUD CAKE

My Mother's Mississippi Mud Cake image

There are many recipes here for this, but my mom's seems to be just a bit different. I had to post for her. I have made this often but I must confess I do not eat it because I don't like coconut (good diet dish -- for me at least -- to bring to pot luck) -- people who will eat coconut always rave about this.

  • Preheat oven to 350 degrees. Butter and flour a 10 ½-inch by 15 ½-inch jelly roll pan. Tap out any excess flour. As you can see from the picture below, I don’t own a pan this size, however, by folding foil and using my mini-loaf pans, I adapted my large baking sheet to work just fine.
  • Sift the flour through a fine-mesh strainer into a large bowl. Add the sugar, baking soda and salt. Stir well to combine. Set aside.
  • In a medium saucepan over medium heat, combine the butter, milk, and cocoa powder. Bring to a boil, whisking frequently until the butter melts completely and the cocoa is incorporated. Add the hot chocolate/milk mixture to the flour mixture, whisking until combined. Add the eggs and vanilla and whisk until well blended. Pour the batter into the prepared pan.
  • Bake until a toothpick comes out clean, about 18-20 minutes. Transfer to a wire rack and let the cake cool completely in the pan.
