MY MOST FAVORITE BROWNIES
These are my all-time favorite moist and candy-like brownies, adapted from the My Most Favorite Dessert Company cookbook by Doris Schechter. It took a few tries to get the brownies just the way I like them, but I believe they are absolutely perfect!

Steps:
- Preheat the oven to 350 degrees F.
- Grease an 11 x 7 inch baking pan.
- In a bowl combine the flour and salt, stirring to blend.
- In a double boiler over hot water, or in the microwave, combine the margarine and the coarsely chopped chocolate.
- Heat, stirring occasionally, until melted and shiny.
- Remove from heat and let the mixture cool to room temperature, stirring occasionally.
- Combine the sugar, eggs and cooled chocolate mixture.
- Beat on medium speed until well mixed.
- Blend in the vanilla.
- Turn off the mixer and add the dry ingredients at one time, and blend on low speed until incorporated.
- Scrape down the sides of the bowl with a rubber spatula (refrain from licking, I know it's difficult).
- Stir in the dark and white chocolate chips.
- Scrape the batter into the prepared pan and level the top.
- You make now like what's leftover in the bowl.
- Use your discretion how much you leave in the bowl.
- Bake for 30 minutes for fudgy brownies, a cake tester will come out with some batter on it.
- DO NOT OVERBAKE!
- Remove the pan from the oven to a wire rack and let it cool slightly.
- Keep covered with plastic wrap in the fridge for up to 4 days.
- These are also amazing frozen, just make sure you have a good dentist.

- Preheat the oven to 325 degrees Fahrenheit with a rack in the lower third of the oven. Line an 8-inch square baking pan with two criss-crossed pieces of parchment paper, making sure that the paper is long enough to go up the sides a couple of inches. Grease the parchment paper.
- Brown the butter: Melt the butter in a medium-sized saucepan over medium heat. Continue to cook the butter, while whisking constantly, until it’s a pale golden brown and the particles suspended in it are reddish brown. This usually takes me about 10 minutes.
- Remove the pan from heat and stir in the sugar. Then add the cocoa powder, sea salt, baking powder and espresso powder. Stir until the ingredients are thoroughly incorporated. Let the mixture cool for 5 minutes.
- Add the eggs one at a time, beating vigorously with a wooden spoon or silicone spatula after each one. When the mixture looks thick, shiny and well blended, add the vanilla extract and the flour. Stir until you no longer see streaks of flour. Then beat vigorously (put those arm muscles to work!) for 50 strokes with the wooden spoon or spatula.

- Baked Brownie. This is “THE” Baked Brownie – the one that has been all the rage for years, hailing from the Baked cookbook, and for good reason – it bakes up perfectly dense and fudge-like with that glorious crackly top.
- Better-Than-Box-Mix Brownies. This is my go-to recipe when I want a perfect, traditional brownie. It’s also the one I turn to as a base for creating some of those epic brownie recipes (see the buckeye brownies, below).
- Buckeye Brownies. One of my all-time favorite brownie recipes, featuring the best flavor combo in the world – chocolate and peanut butter! I used my better-than-box-mix brownies, a buckeye-like filling, and topped it with a chocolate/peanut butter ganache.
- Chocolate Fudge Brownies with Chocolate Buttercream Frosting. Because sometimes you just need a little something MORE when it comes to brownies, so you add frosting (and sprinkles!).
- Cream Cheese Brownies. A combination of my love for cheesecake and my love for chocolate are these amazing cream cheese brownies. Perfect little cream cheese swirls running throughout the brownies!
