When I was growing up..my Mom would make a yellow cake and then she would make this sauce like icing on the stove. She would pour this WARM Sauce over each individual piece of cake. We kids loved it...STILL DO! So ..I thought I would share it with you.....

2 cup(s) sugar
1 can(s) pet evaporated milk (12 oz size)
3 - egg yokes (beaten)
1/4 stick(s) butter or margarine

Steps:

  • Mix the milk and sugar until sugar in a Saucepan until it's dissolved
  • add the beaten eggs an butter ingredients and mix thoroughly
  • Cook on medium to medium high heat ... stirring continuously until slightly thick. Remember..this is a "sauce"..so it needs to be a consistency that will allow you to pour it over a piece of cake

Steps:

  • Beat butter and shortening with an electric mixer in a large bowl until smooth; beat in vanilla extract.
  • Gradually beat confectioners' sugar into butter mixture until well blended. The mixture will appear dry.
  • Stir enough milk into butter mixture to achieve desired consistency for icing.
  • Fold half the coconut into the icing; spread icing over cake.
  • Sprinkle remaining coconut and pecans over icing.

This is the best carrot cake recipe I have ever tasted, and it is my mom's recipe that my family has enjoyed for many years.

2 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 cups sugar
4 eggs
1 1/2 cups oil
1/2 teaspoon pure vanilla extract
3 cups grated carrots
1 package cream cheese, softened ((8 ounce package))
1 stick butter, softened
1 pound confectioners' sugar (powdered sugar)
1 teaspoon pure vanilla extract
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, mix together all dry ingredients - flour, baking soda, salt, cinnamon and sugar; set aside.
  • In the bowl of your stand mixer (or other large bowl if you are using a hand mixer), beat together the eggs, oil, and vanilla.
  • With the mixer on low, slowly incorporate dry ingredients and shredded carrots, mixing until just combined.
  • Pour into 2 greased 9-inch cake pans. Bake until toothpick comes out clean, about 35 minutes.
  • Combine the cream cheese, butter, powdered sugar and vanilla, and beat with a mixer until smooth. Start out at a low speed, and gently ramp up until it looks like frosting (about a minute).
  • Add walnuts in last, and beat a few seconds to incorporate.
  • Frost the cake only after it has cooled completely.

1 to 2 teaspoons Flavouring - vanilla

Steps:

  • Whisk butter for approximately 5 minutes until light and fluffy. The colour should become much lighter too.Slowly add in icing sugar and whisk for again approximately 5 minutes. Taste a small amount to feel for a smooth texture.Add in your flavouring of choice, whisk until combined, and use however you choose! Warning - very moorish!
