MY MOM'S CRISPY SUGAR COOKIES
These are the sugar cookies my mom used to make when I was little... I admit it's been decades since I've had them, but I found the recipe in her old tin box so I thought I'd share it. Steps:
- 1. Beat the shortening and sugar together until very light and fluffy. Beat the eggs in one at a time, then add the milk and vanilla.
- 2. Sift together the flour and baking powder. Turn your mixer on low and add the flour mixture a cup at a time to the shortening/sugar mixture, mixing only until just incorporated. Dough will be very stiff. Chill the dough several hours, or even overnight.
- 3. There are two ways to finish these cookies. You can roll out portions of the dough (keep remaining dough chilled), use cookie cutters to cut out desired shapes, place on parchment lined baking sheets and bake at 325 until they just start to brown at the edges. Cool slightly, then remove to a rack to finish cooling. You can also just make balls out of the dough, then flatten them with a glass dipped in sugar. You will need to flatten them a LOT, they need to be pretty thin, maybe 1/4 inch. Sprinkle the cookies with regular or colored sugar before baking, if desired.
TENDER CRISP SUGAR COOKIES

- Cream butter, shortening and sugars until light and fluffy. Beat in eggs and vanilla. Sift dry ingredients, add to creamed mixture; mix to blend.
- Shape dough into 1 inch balls. Dip in regular or colored sugar or decorator sprinkles. Place on lightly greased cookie sheet. Flatten slightly with the bottom of a water glass.
- Bake at 375 degrees F (190 degrees C) for 10-12 minutes. *Larger cookies bake at 350 degrees F (175 degrees C) for 15 minutes.

- In a large mixing bowl, cream sugar, shortening and eggs.
- Add 1 cup flour, soda, salt, and baking powder.
- Combine milk and vanilla.
- Add to creamed mixture alternately with remaining 4 cups flour.

- Roll onto lightly floured surface 1/4 inch thick.
- Cut with desired shapes.

- In a large mixing bowl, beat the butter, oil, and sugars until combined.
- Beat in eggs and extracts.
- In a large bowl, whisk together flour, baking soda, and cream of tartar.
- Gradually add flour mixture to the butter mixture, beating until just combined after each addition. Do not overmix.
- Line baking sheets with parchment paper or silicone baking mats.
- Drop dough by teaspoonfuls onto baking sheets, about two inches apart.
- Flatten with a glass dipped in sugar. Sprinkle a little extra on top, if you'd like!
- Bake at 350 for 12-15 minutes, or until edges and bottoms are golden brown.

- Beat butter, egg, vanilla extract, and almond extract together in a bowl using an electric mixer until smooth. Add confectioners' sugar and beat until incorporated.
