Steps:
- In a small bowl, mix together the tomato sauce, brown sugar, and mustard; stir until the brown sugar has dissolved.
- In a large mixing bowl, mix the eggs, minced onion and green pepper, garlic powder, cracker crumbs, salt, and black pepper; mix in the ground beef and half the tomato sauce mixture, stirring until the meat loaf is thoroughly combined. Place the meat mixture into a 2-quart microwave-safe baking dish. Spread the remaining tomato sauce mixture over the meat loaf.
- Cook in microwave oven on High setting until set, the juices run clear, and meat is no longer pink inside, 10 to 15 minutes depending on power of microwave oven. An instant-read meat thermometer, inserted into the center of the loaf, should read 165 degrees F (75 degrees C). Drain any grease from the dish as soon as loaf is cooked; allow to stand, uncovered, 10 to 15 minutes before serving.

- Combine first 8 ingredients in a bowl and mix with hands until well mixed.
- Pat into a 9 x 5 loaf pan.
- Cook in microwave on full power 6 minutes.
- While cooking for the first 6 minutes, combine sauce elements into small bowl and whisk until mixed. At the end of the first 6 minutes pour sauce over the loaf and continue cooking for an additional 5-7 minutes. (For a firmer loaf. decrease tomato sauce to 6 ounces).

GROUND TURKEY MICROWAVE MEATLOAF
Steps:
- Mix all ingredients in large mixing bowl. Spray a microwavable casserole dish with cooking spray. Mold the meatloaf mixture into a "loaf" in the dish. Sprinkle with additional pepper if desired. Cover with wax paper. Microwave on medium power for 10 minutes. Drain if necessary. Recover with wax paper and microwave for another 10 minutes on medium power. Let sit in microwave for 5 minutes. Top each serving with ketchup (optional).

Steps:
- Gather the ingredients.
- In a small microwave-safe bowl, combine oil, onion, and garlic; cook 3 to 4 minutes on high until soft.
- Combine with oats, 1/2 the tomato sauce, thyme, marjoram, garlic salt, pepper, and egg in a large bowl. Mix in meat with your hands. Gently shape into an 8x4 inch loaf.
- Place into a 9x5 inch glass loaf pan, making sure the meat mixture doesn't touch the sides of the pan. Cover pan with microwave-safe waxed paper. Microwave at high power for 5 minutes, then carefully siphon off the juices using a turkey baster .
- Combine brown sugar, Worcestershire sauce and mustard with remaining tomato sauce. Spoon this mixture over the meatloaf, making sure to evenly coat top and sides.
- Return pan to the microwave, rotating one-half turn. Cover pan with microwave-safe waxed paper and cook at 50% for 15 to 20 minutes or until an instant-read meat thermomete r inserted in the center of the loaf registers 160 F.
- Cover with foil and let stand 5 minutes on a solid surface before serving. (The temperature of the meatloaf will rise about 10 degrees during standing time.)

- Preheat the oven to 350 degrees F.
- In a small bowl, stir together the oats and milk. Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion. In a large bowl, combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, salt and a few grinds of pepper. Mix just until well combined.
- Transfer the mixture to a 9-by-13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high. Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions. Bake for about 1 hour or until an instant-read thermometer registers 160 degrees.F.
- Remove from the oven and let rest for 10 to 15 minutes before slicing.
MY MICROWAVE TURKEY MEATLOAF
The original recipe came with my first microwave and was made with ground beef. I made it originally because my Mom was working and I was the oldest and still at home. My Dad loved it and I liked it too when I hadn't really liked meatloaf before. When I got married I made it for my husband and he loved it as well. Then we started eating healthier, so I altered it to ground turkey instead. I've tried to increase this recipe, but for the microwave it doesn't really work. Some people like it made in a convection oven. Keep in mind you have to let the meatloaf stand or it won't be fully cooked.

- Mix crushed saltines, egg. In a separate bowl mix mustard, 1 1/2 teaspoon brown sugar and 1/2 can tomato sauce. Add 1/2 (about 10 small spoons full) of the tomato mixture to the saltine mixture and mix well. Add the ground turkey and mix well. Put in a microwave safe bowl with a glass in the center. Top with 1 teaspoon chopped onion, mix all remaining tomato sauce together with the leftover 1/2 teaspoon brown sugar. Spoon a little tomato sauce mixture over top of the meatloaf, just until covered. Cover with waxed paper. Cook about 5 minutes 45 seconds. Let stand for 10 minutes. Times will vary depending on microwave.
