SCALLOPED SWEET CORN CASSEROLE

This is my Grandma Ostendorf's corn recipe I grew up enjoying. Now a grandmother myself, I still serve this comfy, delicious side as a family classic. -Lonnie Hartstack, Clarinda, Iowa

Number Of Ingredients 14

4 teaspoons cornstarch
2/3 cup water
1/4 cup butter, cubed
3 cups fresh or frozen corn
1 can (5 ounces) evaporated milk
3/4 teaspoon plus 1-1/2 teaspoons sugar, divided
1/2 teaspoon plus 3/4 teaspoon salt, divided
3 large eggs
3/4 cup 2% milk
1/4 teaspoon pepper
3 cups cubed bread
1 small onion, chopped
1 cup Rice Krispies, slightly crushed
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350°. In a small bowl, mix cornstarch and water until smooth. In a large saucepan, heat butter over medium heat. Stir in corn, evaporated milk, 3/4 teaspoon sugar and 1/2 teaspoon salt; bring just to a boil. Stir in cornstarch mixture; return to a boil, stirring constantly. Cook and stir 1-2 minutes or until thickened; cool slightly., In a large bowl, whisk eggs, milk, pepper and the remaining sugar and salt until blended. Stir in bread, onion and corn mixture. Transfer to a greased 8-in. square or 1-1/2-qt. baking dish., Bake, uncovered, 40 minutes. In a small bowl, toss Rice Krispies with melted butter; sprinkle over casserole. Bake 10-15 minutes longer or until golden brown. Freeze option: Cool unbaked casserole, reserving Rice Krispies topping for baking; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

3 (15 ounce) cans creamed corn
2 eggs
1 cup crushed saltine crackers
½ cup butter
½ teaspoon paprika
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 8x11x2 inch casserole dish.
  • In a medium sized mixing bowl, combine the creamed corn, eggs, 1/4 cup of the melted butter and 1/2 of the cracker crumbs. Pour mixture in into the prepared dish.
  • In a small bowl, mix the remaining melted butter, cracker crumbs, paprika and pepper. Sprinkle crumb topping over the casserole.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, until topping browns slightly and corn is bubbly around the edges.

I got this recipe from my friend's mom. I always loved it when she made this. I did put my own spin on it... she makes it with 2 cans of cream style corn, but I like it better with the 2 different types of corn. Enjoy

1 can(s) corn, drained
1 can(s) cream style corn
2 Tbsp butter,melted
3 eggs, slightly beaten
1/2 can of milk (rinse out the cream style corn can)
1 sleeve saltines, crushed
pinch of salt & pepper

Steps:

  • 1. Preheat oven to 350. Grease baking dish ( I use a glass pyrex oval dish). In large bowl mix all ingredients well.
  • 2. Pour into baking dish. Bake for around 45 minutes or until light golden brown. Delicious.

MY MAMA'S SCALLOPED CORN



My Mama's Scalloped Corn image

Although there are a number of other scalloped corn recipes on Zaar, none are just like this one. This recipe is super easy and quick and has fewer ingredients than the others. Only 4 ingredients in this version and only one dish to wash - you mix it up right in the baking dish. My mama always served this at every Thanksgiving and Christmas dinner and we wouldn't have a holiday dinner without it now. You can add some chopped pimento for color - especially if you are serving it for a holiday dinner.

2 (18 ounce) cans cream-style corn
3 eggs
1 (4 ounce) package saltine crackers (1 sleeve)
1/4 cup butter

Steps:

  • Grease a 2 quart casserole dish.
  • Pour in the 2 cans of cream style corn.
  • Slightly beat the 3 eggs and mix into the corn.
  • With your hands, crush the crackers right in the sleeve, being careful not to pop open the ends, and pour them into the corn mixture.
  • Mix together well.
  • Dot the top with butter.
  • Bake in a 350 degree oven for 45 minutes or until the top is lightly browned and the scalloped corn is set (use a table knife to check).

This is my mom's recipe. She has made this for every Holiday since I can remember. This is very easy and my family thinks it's very good! Note: This can be microwaved for 15 minutes. I prefer to use Italian breadcrumbs.

15 ounces canned whole kernel corn (1-2 cans)

  • Mix all ingredients together. Sprinkle a lite layer of additional breadcrumbs on top of the scalloped corn.

This is a recipe that I came up with for the holidays, because this was one of my favorite dishes that my grandmother made for Thanksgiving, Christmas and Easter dinners. I never got her recipe, so I came up with one through trial and error. My Dad loves this!

2 can(s) creamed corn
2 can(s) yellow or white corn
1 small green pepper, chopped
1 small red pepper, chopped
1 small onion, chopped
4 slice bacon, cooked and crumbled
1 Tbsp flour
1/2 tsp salt
1/4 tsp ground mustard
1/4 tsp paprika, sweet mild
1/8 tsp ground black pepper
TOPPING
1 pkg crushed keebler townhouse crackers
1 stick butter, melted

Steps:

  • 1. Preheat the oven to 350 degrees. Chop the peppers and onions. Crush the sleeve of crackers into small pieces.
  • 2. In a 10" skillet over medium heat, cook the bacon until done, set aside on a paper towel to drain. Saute the peppers and onions until tender - drain. Crumble the cooled bacon into medium sized bits.
  • 3. In a medium sized bowl, mix the corn, pepper and onion, crumbled bacon, flour and spices. Spread mixture in a 13"x9"x2" baking dish.
  • 4. In a small saucepan, melt the stick of butter and then add the crushed crackers, stirring until well coated. Spread the crackers evenly over top of the corn mixture.
  • 5. Place the covered dish in the oven and bake for 20 minutes, then uncover and bake for an additional 10-12 minutes, or until the cracker topping is golden brown.
