COPYCAT KRYSTAL BURGERS
Krystal's like you know them - thin burger, tiny diced onions, grease on the inside of the bun, cheese, mustard and a pickle!

Steps:
- Roll ground beef out flat on parchment paper, almost paper thin, then transfer to baking sheet on parchment paper. Carefully cut or score the beef into 2"x2" squares using a pizza roller, but do NOT separate. Sprinkle with salt and pepper and place in freezer for at least 30 minutes, but no more than overnight. Melt butter on a flattop griddle or large frying pan over medium high heat and add onions, saute until translucent, about 3-5 minutes; remove from heat. Add burgers straight from the freezer, a few at a time, to griddle. Sear each for 1-2 minutes, then flip, add a spoonful of onions on top, top with bottom part of bun, then top that with top part of bun. Let them grill for about 1 minute. Remove from pan; remove top part of bun, flip over and add slice of cheese, a squeeze of mustard and pickle slice. Top with top part of bun and serve. Try not to eat 10.

ALMOST WHITE CASTLE® HAMBURGERS
If you are from the Chicago area, you have heard of White Castle® hamburgers. I believe down south they are Krystal®. This is the closest I have come to the real deal. Serve each with American cheese, dill pickle slices, and Dusseldorf mustard. Enjoy!

- Preheat oven to 400 degrees F (200 degrees C).
- Combine ground chuck, bread crumbs, egg, onion soup mix, water, and black pepper in a bowl; press into a 10x15-inch jelly roll pan. Prick holes through the chuck mixture for ventilation while cooking.
- Bake in the preheated oven until browned and cooked through, about 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Drain excess grease.
- Cut chuck mixture into squares the size of the rolls. Place 1 chuck patty in each roll.

Used to work at Krystal,s way way back in the day.So wanted to try and create their burger at home.As I have always cooked everything else that I eat from places,at my home for family and friends.

- 1. Season meat with garlic and salt.Pat out little bitty hamburger patties real thin.Place onto a griddle and use a straw to poke 4 holes into each patty.
- 2. Place a tiny pinch of dried onion bits on top of each patty.Put the top part of hamburger (square roll)from bread stores--on cooking--very thin--patties.Need to cover griddle with a cake pan,so burgers can steam the buns and cook.Have the bottom buns on another side of the griddle,topside down for just one min.
- 3. These do cook really fast so stay with them.As soon as no pink on bottom of patties.Take up from griddle and assemble with meat between buns and add a dill pickle slice,with mustard also.
- 4. Now I,m hungry.Are you? Enjoy until your heart is content.

- Add 6 pieces of sliced American cheese. It's important to use 6 slices because it will give you landmarks to help divide the patty into 24 pieces. Return to the oven for about 2 to 3 minutes until the cheese is melted. Remove from the oven and lest rest for 5 minutes. Slice into 24 slices.

- On a baking tray mix three pounds ground beef with a finely diced small onion and some kosher salt and pepper. No need to over mix, just get the onion distributed evenly.
