COUNTRY STYLE FRIED POTATOES
These fried potatoes are the perfect companion for bacon and eggs. You may use oil instead of shortening if you wish.

Steps:
- In a large cast iron skillet, heat shortening over medium-high heat. Add potatoes and cook, stirring occasionally, until potatoes are golden brown. Season with salt, pepper, garlic powder and paprika. Serve hot.

FRIED TATERS
My husband loves my fried taters. It's just something I've whipped up and the spices are more to the person's taste than anything. They can be a bit spicy so you can hold back on the salt. Let me know what you think.

Steps:
- In a large skillet, pour the olive oil and heat on med-high heat.
- Wash potatoes well and cut with skin on into thin cubes or triangles.
- Add potatoes to skillet.
- Next sprinkle the lemon& pepper, garlic salt, garlic powder and essence over the potatoes as you turn them to make sure you get all of the potatoes.
- Lower your heat to medium and turn potatoes until browned on each side.
- Takes about 10-15 minutes.

- Set a 12-inch Dutch Oven on your camp stove over medium heat or in the firepan with 14-16 briquets underneath. Cut the spuds up while the oil heats up the Dutch Oven. Add the spuds and turn every 2-3 minutes once they start to get crispy. I add my diced onion when spuds are about half done. - Heat oil in skillet.
- Fry potatoes until tender.
- Add wieners and cook until plumped.
- Pepper and salt to taste.
- I have also added onion and bell pepper on occasion.

VERY EASY FRIED TATERS & KIELBASA
Steps:
- Wash potatoes, peel and slice into thin slices. Put butter in a medium pan that has a cover, put on medium heat. Take kielbasa out of packages and slice them to about 1/4-inch thick. Take and chop onion in small squares.
- Put onions in the melted butter and saute. Then add the potatoes and kielbasa and add salt and pepper.
- Cook on medium heat for about 20-25 minutes or until potatoes are soft enough to be easily cut into with a fork. ENJOY!
