This is my mom's special homemade lasagna recipe with made from scratch tomato sauce and delicious, cheesy filling. I have found none better anywhere. Serve with a leafy green salad and crusty garlic bread, if desired.

1 (16 ounce) package lasagna noodles
½ pound ground pork
½ pound lean ground beef
1 (8 ounce) can tomato sauce
1 (28 ounce) can crushed tomatoes
1 tablespoon chopped fresh parsley
1 clove garlic, crushed
½ teaspoon dried oregano
½ cup minced onion
⅛ teaspoon white sugar
1 ½ teaspoons dried basil
1 ½ teaspoons salt
1 pound small curd cottage cheese
3 eggs
¾ cup grated Parmesan cheese
2 teaspoons salt
¼ teaspoon ground black pepper
1 pound shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain and set aside.
  • Place pork and beef in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in tomato sauce, crushed tomatoes, parsley, garlic, oregano, onion, sugar, basil and salt. Simmer over medium-low heat for 30 minutes, stirring occasionally.
  • In a large bowl, combine cottage cheese, eggs, Parmesan cheese, parsley, salt and pepper.
  • In a 9x13 inch baking dish, place 2 layers of noodles on the bottom of dish; layer 1/2 of the cheese mixture, 1/2 of the mozzarella cheese and 1/2 of the sauce; repeat layers.
  • Cover with aluminum foil and bake in preheated oven for 30 to 40 minutes. Remove foil and bake for another 5 to 10 minutes; let stand for 10 minutes before cutting; serve.

1 pound sweet Italian sausage
¾ pound lean ground beef
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
½ cup water
2 tablespoons white sugar
1 ½ teaspoons dried basil leaves
½ teaspoon fennel seeds
1 teaspoon Italian seasoning
1 ½ teaspoons salt, divided, or to taste
¼ teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  • Preheat oven to 375 degrees F (190 degrees C).
  • To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

1 pound lean ground beef
1/2 pound hot Italian sausage
1 small yellow onion, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
2 tablespoons tomato paste
One 26.42-ounce container strained tomatoes, such as Pomi
2 large eggs
30 ounces part-skim ricotta
One 16-ounce bag shredded mozzarella
1/3 cup plus 1/4 cup grated Parmesan
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1/2 teaspoon kosher salt
Freshly ground black pepper
One 1-pound box no-boil lasagna noodles

Steps:

  • Preheat the oven to 375 degrees F.
  • Place a large saute pan over medium-high heat and add the beef and sausage. Cook, stirring occasionally, until it begins to brown, about 2 minutes. Add the onions, garlic and dried oregano and cook until they are softened and the meat is cooked through, 3 to 4 minutes. Stir in the tomato paste and toast for 30 seconds, then add the tomatoes and cook until the sauce has thickened slightly, about 5 minutes. Remove from the heat and set aside.
  • Beat the eggs in a large bowl. Add the ricotta, 1 cup mozzarella, 1/3 cup Parmesan, fresh basil and oregano, salt and pepper and stir to combine.
  • Spread a thin layer of sauce on the bottom of a 9-by-13-inch baking dish. Arrange a layer of noodles over the sauce and top with a third of the ricotta filling. Spoon over a layer of sauce and top with another layer of noodles. Continue with 2 more layers of ricotta, sauce and noodles, ending with a top layer of noodles. Spoon a thin layer of the remaining sauce over the top, sprinkle the remaining mozzarella and Parmesan over the noodles and cover with aluminum foil.
  • Bake for 45 minutes, then uncover and cook until the cheese is golden and the lasagna is bubbling, another 15 to 20 minutes. Let stand for 10 to 15 minutes before serving.

Homemade lasagna is a classic, delicious dinner that every family should have in their recipe rotation.

12 lasagna noodles (uncooked)
4 cups mozzarella cheese (shredded and divided)
½ cup parmesan cheese (shredded and divided)
½ pound lean ground beef
½ pound Italian sausage
1 onion (diced)
2 cloves garlic (minced)
36 ounces pasta sauce (*see note)
2 tablespoons tomato paste
1 teaspoon Italian seasoning
2 cups ricotta cheese
¼ cup fresh parsley (chopped)
1 egg (beaten)

Steps:

  • Heat oven to 350°F. Cook pasta al dente according to package directions. Rinse under cold water and set aside.
  • Brown beef, sausage, onion and garlic over medium high heat until no pink remains. Drain any fat.
  • Stir in pasta sauce, tomato paste, Italian seasoning. Simmer 5 minutes.
  • Make Cheese Mixture by combining 1 ½ cups mozzarella, ¼ cup parmesan cheese, ricotta, parsley, and egg.
  • Add 1 cup meat sauce to a 9x13 pan. Top with 3 lasagna noodles. Layer with ⅓ of the Cheese Mixture and 1 cup of meat sauce. Repeat twice more.Finish with 3 noodles topped with remaining sauce.
  • Cover with foil and bake 45 minutes.
  • Uncover, sprinkle with remaining cheese (2 ½ cups mozzarella cheese and ¼ cup parmesan), and bake an additional 15 minutes or until browned and bubbly. Broil 2-3 minutes if desired.

This is a basic lasagna that I make often. I always keep one in my freezer for when I plan last minute dinner parties. My family and friends invite themselves over for dinner when they hear lasagna in on the menu!! lol

16 oz mozzarella cheese, shredded
15 oz ricotta cheese
2 large jars of your favorite sauce (i make my own)
16 pkg lasagna noodles, you can use no-boil noodles if you wish
1 lb chopmeat, optional, to make meat sauce

Steps:

  • 1. Boil lasagna noodles according to pkge. directions
  • 2. In a 9x13 inch casserole dish, spoon a little sauce just to cover bottom of dish. Layer 4 noodles on top of sauce, overlapping them if necessary.
  • 3. Layer 1/3 each of the mozzarella and ricotta cheese, and 1/3 of the sauce, over noodles. Repeat the layers 2 more times, ending with sauce and cheese on top.
  • 4. Bake in a 350 degree oven for 1 hour or more, until hot and bubbly, and cheese is melted.
  • 5. Let stand for 10 minutes before slicing into squares. Serve with a nice green salad, and garlic bread to complete the meal. Enjoy.

1 lb ground beef
1 lb bulk pork sausage
1 pepperoni, whole and diced into small cubes
1/2 c chopped onions
4 clove garlic, minced
1 can(s) (28 ounce) crushed tomatoes
2 can(s) (8 ounce) tomato sauce
2 can(s) (6 ounce) tomato paste
1/4 c brown sugar
1 tsp dried whole oregano
1/4 c fresh basil leaves chopped
1/4 c fresh italian parsley chopped
1 tsp salt
1/2 tsp ground pepper
12 ounces of ricotta cheese.
1 c freshly grated parmesan cheese
2 eggs
12 ounces of cottage cheese
2 pkg (12 oz) or more of shredded mozzarella cheese
12 lasagna noodles
2 Tbsp fresh italian parsley chopped

Steps:

  • 1. Brown the ground beef, Italian sausage, onions and garlic and pepperoni in a pot until they start to cook. It takes about 6 to 9 minutes to brown the meat. Drain and return to pot. Gently stir in crushed tomatoes, tomato sauce, tomato paste,1/2 cup of water, white sugar, oregano, basil leaves, 1/4 cup of parsley, salt and pepper. Simmer on low heat for 1 hour. Meanwhile, If you are using quick cooking lasagna, soak in hot tap water for 15 minutes, for regular lasagna, boil in water and cool under a cold tap.
  • 2. In mixing bowl combine, ricotta cheese, 1 Tbsp of the parsley, egg, and the parmesan cheese. Mix these ingredients together with a spoon
  • 3. Begin building the lasagna layers.Use a 9×13 inch baking pan. Spread 1 Cup of meat sauce on the bottom of the pan. Lay 6 noodles across the layer of sauce. Spread the ricotta cheese mixture over the layer of noodles. Spread 2 cups of meat sauce over the riccotta cheese layer. Sprinkle 1/2 of the mozzarella cheese over the Sauce layer.
  • 4. Lay down the next layer of noodles, spread cottage cheese over noodles. Spread 2 cups of meat sauce over the cottage cheese layer. Sprinkle all of the remaining cheese on top and sprinkle with 1 Tbsp. chopped parsley.
  • 5. Bake Loosely covered with foil in preheated oven at 350 degrees for 30 minutes
  • 6. Remove foil and bake uncovered for another 30 minutes. Remove from oven and allow to cool for approximately 15 minutes.

MY MOM'S LASAGNA



My Mom's Lasagna image

Time consuming, but worth it. This is a recipe my mom only makes for holidays or when her kids come home to visit. The sauce is better if you make it the day before and let it sit over night. You can make this ahead of time and freeze for a few weeks before you bake them. Serve in large squares smothered with any left over tomato sauce and a little parmesan on top.

⅓ cup olive oil
4 onions, minced
6 (16 ounce) cans crushed tomatoes
8 cloves garlic, minced
12 ounces tomato paste
salt and pepper to taste
10 leaves fresh basil leaves, torn
2 (16 ounce) packages lasagna noodles
1 cup red wine
4 pounds ricotta cheese
1 pound mozzarella cheese, shredded
2 cups grated Parmesan cheese

Steps:

  • In a large heavy bottomed pot, heat the olive oil over medium high heat. Saute the onions and garlic until soft and slightly clear. Pour in the crushed tomatoes and bring to a boil. Stir in the tomato paste, salt and pepper. Lower heat to medium, just hot enough to keep lightly bubbling. Add basil leaves and cook, stirring occasionally for an hour. Add salt and pepper and red wine and allow to simmer another hour or until desired consistency. Remove from heat and let it cool. If you have time, let it sit in the refrigerator over night.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 10 to 15 minutes or until al dente; drain and allow to cool.
  • Preheat oven to 350 degrees F (175 degrees C).
  • You'll need two 9x13 inch baking trays. Put a layer of sauce in the bottom of the tray, then a layer of slightly overlapping lasagna noodles. Spread a layer of ricotta over the noodles and a light sprinkling of mozzarella. Repeat until you fill the tray, making sure that you end up with lasagna noodles on top. Spread a layer of sauce over the noodles and sprinkle with mozzarella and parmesan. Cover with foil.
  • Bake in a preheated oven for an hour. Remove the foil and bake another half hour.

12 ounces lean ground beef or lamb
1 white onion (chopped)
2 garlic cloves (minced)
1 lb 24 ounces pasta sauce
1 tablespoon fresh parsley (chopped)
No-bake lasagna noodles (approximately 6)
1 egg (beaten)
1 15 ounces container ricotta cheese
1/4 cup grated Parmesan cheese + more for topping
1-1/2 cups shredded mozzarella cheese

Steps:

  • For the sauce, in a sauté pan on medium heat, add meat, onion, and garlic until the meat is brown. Pour 1/2 cup of sauce into a small bowl and pour the remainder into the meat. Bring to a full boil; reduce heat to low and cover cooking for 15 minutes.
  • Pre-heat oven to 375F. In a large mixing bowl, add egg, ricotta, parsley, and 1/4 cup Parmesan cheese; set aside.
  • Spread 1/2 cup of pasta sauce over the bottom of a 2-quart rectangular baking dish. Layer half of the noodles in the dish, breaking any as needed to fit. Spread with the ricotta cheese mixture, mozzarella cheese, and meat mixture. Continue until you end with the meat mixture. Sprinkle top with mozzarella and Parmesan cheese.
  • Place baking dish on a baking sheet. Bake for 35-45 minutes until thoroughly heated. Allow standing at least 10 minutes before serving.
