Number Of Ingredients 6

1 Can (15 1/2 ounces) Crushed Pineapple, Drained
1/2 Cup Instant Rice
1 Package (3 ounces) Vanilla Pudding Mix
1/2 Cup Miniature Marshmallows
1/3 Cup 'Chopped Nuts
Whipped Cream (Optional)

Steps:

  • Drain pineapple and reserve 3/4 juice. Bring to a boil; stir in rice. Simmer 2 minutes, remove from heat, cover and let steam 5 minutes. Prepare pudding mix according to package directions. Fold marshmallows into hot pudding, pecans and rice. Chill. Garnish with whipped cream. Six 1 cup servings.

This recipe is one my Grandmother came up when she was first married . She named it heavenly rice, & it has been served every xmas & thanksgiving : )

White rice, crushed pineapple ,whipped cream, maraschino cherries,sugar

Steps:

  • Do this the night before: boil 1 cup of minute rice .When its done drain of excess water & put into a large bowl. drain pineapple & add that to the bowl of rice, along with the cherries. Set in fridge over night .The next day beat the whipped cream & sugar in a metal bowl untill it is thick Then mix it in with the rice pineapples and cherries.

It has a wonderful custard base to it and it is oh so very easy to make. When my husband had it, he thought he died and went to heaven. It was so good I had to make a double batch!

1 cup cooked rice
2 1/2 cups milk
3 large eggs, beat lightly
3/4 cup raisins
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 325°F.
  • Lightly grease a 9-inch baking dish.
  • Mix all stuff together except for the cinnamon and nutmeg. Pour into baking dish and place in a pan of water about 1 inch deep.
  • Bake for 1 1/2 hours, or until lightly browned and set.
  • Combine cinnamon and nutmeg together and sift over the top of the pudding.
  • Take pan from oven; let cool slightly and then cut into squares. Enjoy!
