Time 30m

Yield 6

Number Of Ingredients 11

2 pounds ground turkey
¼ cup minced onion
¼ cup bread crumbs
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon ground black pepper
1 cup teriyaki sauce, or as needed
6 (1/2 inch thick) slices fresh pineapple
6 hamburger buns
6 slices provolone cheese

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Mix turkey, onion, bread crumbs, Worcestershire sauce, garlic, salt, and pepper in a large bowl. Form mixture into 6 large patties, each about 1/2 inch thick.
  • Cook burgers on the preheated grill, basting occasionally with teriyaki sauce, until no longer pink in the center, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Meanwhile, grill pineapple slices until lightly charred, about 3 minutes per side. Do not overcook or pineapple will get mushy. Place hamburger buns, cut-sides down, on the grill. Grill until light golden brown, about 10 seconds.
  • Place burgers on toasted buns. Place a slice of provolone cheese and grilled pineapple atop each burger and serve.

Sandwich the stack in a plush Hawaiian bun with lettuce, red onion, and a smear of kicky jalapeño mayo, and take a vacation without leaving your lanai.

  • Begin by making the burgers. To a medium bowl, add the turkey, scallions, garlic, soy sauce, hoisin, salt, and pepper. Mix to combine (it's easiest to use your hands!). Divide the mixture into 4 equal parts and form into patties. I find that ground turkey can be super sticky, so if you wet your hands first before forming the patties, it really helps!
  • Heat a large nonstick skillet over medium-high heat and add the oil. Once hot, add your burgers and cook for 4-5 minutes per side, or until depply golden and caramelized on each side.
  • While the burgers are cooking, preheat a grill pan or outdoor grill to medium-high heat. If you're using a grill pan, spray lightly with nonstick spray. Grill your pineapple for 3-5 minutes per side (depending on your grill), or until grill marks appear.
  • To serve, place a handful of greens on the bottom bun, followed by the burger, a grilled pineapple slice, a slice of red onion, and slices of avocado on top. (Bonus points if you grill your burger bun!)

  • Prepare the teriyaki sauce: In a small saucepan over medium heat, combine the reserved 1/4 cup pineapple juice, soy sauce, rice vinegar, honey, garlic, and ginger. Cover and bring to a boil. Once boiling, remove the lid and cook for 1 minute, stirring constantly. While you wait for the sauce to boil, whisk the cornstarch and 1 tablespoon water together in a small bowl to create a slurry. Once the sauce is boiling, add the slurry, then stir to combine. Cook for 1 additional minute, until the sauce begins to thicken. Remove from heat.
  • In a large mixing bowl, combine the ground turkey, panko, garlic, ginger, black pepper, cilantro, and 3 tablespoons teriyaki sauce. Mix just until combined, and be careful not to compact the meat. Shape into four 3/4-inch-thick patties. Place in the refrigerator for 30 minutes.
  • Set aside some of the remaining teriyaki sauce for serving, reserving the rest for grilling. Preheat the grill to medium high and lightly oil the grates. Grill the rings of pineapple and red onion slices until caramelized and tender, about 3 minutes per side for the pineapple and 4 minutes for the red onion. Grill the burgers for 4 minutes on the first side, flip, then brush with sauce. Grill 4 minutes, then flip again and brush the other side with sauce. Continue cooking until the burgers are cooked through and reach an internal temperature of 160 to 165 degrees F, about 10 minutes total. Remove to a plate, cover, and let rest 5 minutes. If desired, grill the buns.
  • Serve the burgers inside of the buns, brushed with reserved sauce and topped with grilled pineapple and red onion.

  • Pour about half of the sauce over the ground turkey and work it in with your fingers while forming patties. For easy sliders, form a rectangle with the ground turkey and then just slice it into 9 squares. Let the meat marinate for 30 minutes.

  • In a medium saucepan, combine water, soy sauce, light brown sugar, honey, toasted sesame seeds, ginger, and garlic powder. Heat to medium high, then combine cornstarch with cold water and add to the sauce. Cook on medium high until a slow boil is reached, reduce heat if necessary. Cook until the sauce thickens (you can add more water to thin the sauce if it thickens too fast, if needed). Remove from heat and allow to cool to warm room temperature, about 15 minutes.
  • Add sesame seed oil to ground beef, then portion into 4 patties (1/4 lb each) that are about 3/4 of an inch in thickness and set aside. Toast or grill brioche or hamburger buns until golden brown, if desired. Grill pineapple, just enough to heat the pineapple and leave grill marks.
