3/4 cup sugar
1/3 cup all-purpose flour
1 dash salt
4 eggs, separated, at room temperature
2 cups milk
1/2 teaspoon vanilla
1 (12 ounce) package vanilla wafers, reserve 10 to 12 vanilla wafers for garnish
5 -6 medium bananas, sliced, reserve 1 banana for garnish

Steps:

  • Combine 1/2 cup sugar, flour and salt in top of double boiler.
  • Stir in 4 egg yolks and milk; blend well.
  • Cook, uncovered over boiling water, stirring constantly until thickened.
  • Reduce heat and cook, stirring occasionally, for 5 minutes.
  • Remove from heat, add vanilla.
  • Spread small amount on bottom of 1-1 1/2 quart casserole; cover with layer of wafers.
  • Top with layer of sliced bananas.
  • Pour about 1/3 of custard over bananas.
  • Continue to layer wafers, bananas, and custard to make 3 layers of each, ending with custard.
  • Beat egg whites until stiff but not dry; gradually add remaining 1/4 cup sugar and beat until stiff peaks form.
  • Spoon on top of pudding, spreading to cover entire surface.
  • and sealing well to edges.
  • Bake at 425° for 25 minutes or until delicately browned.
  • Cool slightly or chill.
  • Just before serving, garnish with banana slices, then insert vanilla wafers upright around edge of dish.
  • Makes 16 servings.

2 c milk
3 eggs, separated
2 tsp butter, softened
1 tsp vanilla
1 box vanilla wafers
6 ripe bananas

Steps:

  • 1. IN A HEAVY SAUCE PAN STIR TOGETHER 1/2 C. SUGER,THE FLOUR & SALT, ADD ENOUGH MILK TO MAKE A PASTE AND THEN STIR IN THE REMAINING MILK.
  • 2. COOK THE MIXTURE OVER MODERATE HEAT STIRRING UNTIL IT THICKENS AND COMES TO A BOIL.ADD THE BUTTER & COOK OVER VERY LOW HEAT ABOUT 5 MIN. STIRRING OCCASIONALLY.
  • 3. IN A SMALL BOWL BEAT THE EGG YOLKS GRADUALLY. BEAT IN ABOUT 1/2 C. OF THE HOT MIXTURE.POUR THE YOLKS INTO THE SAUCE PAN AND COOK,STIRRING OVER VERY LOW HEAT FOR 1 MIN. REMOVE FROM HEAT AND STIR IN THE VANILLA FLAVOR
  • 4. ARRANGE 1/3 OF THE VANILLA WAFERS IN A 2 QUART CASSEROLE DISH.SLICE 2 BANANAS OVER COOKIES AND COVER WITH 1/3 OF THE CUSTARD REPEAT LAYERS TWICE MORE.
  • 5. IN A BOWL BEAT THE EGG WHITE UNTIL STIFF, BEAT IN THE REMAINING 1/4 CUP SUGAR, CONTINUE BEATING UNTIL VERY GLOSSY ,SPREAD THIS MERINGUE OVER PUDDING.
  • 6. BAKE IN A 425* OVEN ABOUT 5 MIN. OR UNTIL PEAKS OF THE MARINGUE ARE GOLDEN BROWN .SERVE AT ROOM TEMP. OR CHILLED.

This homemade banana pudding recipe includes making the creamy vanilla pudding from scratch and serving it over Nilla wafers and fresh-cut bananas for the most delicious Southern treat.

1/2 cup sugar (or swerve)
1/3 cup flour
3 egg yolks
2 cups milk
1 box Nilla wafers
5 bananas
1/2 tsp vanilla
dash salt

Steps:

  • Place a layer of Nilla Wafers in the bottom of a medium-sized mixing bowl. Slice a banana over the top. Repeat two more times with another layer of wafers and the remaining bananas.
  • In a saucepot (or double boiler) on medium-low heat, add all ingredients except for the vanilla. Stir well with a wire whisk. Allow to cook, stirring constantly to prevent scorching, until thickened - about 15 minutes.
  • Add in vanilla and stir. Immediately pour over wafers and bananas. Let sit for about five minutes or so before serving, to allow wafers time to absorb pudding. Top with meringue, if desired.

She can make amazing food, but sometimes it's hard to get a recipe from her because she doesn't measure anything and makes everything from memory. While letting her talk it out, I was able to get this banana pudding and a few other recipes written down. Enjoy!

1 (12 ounce) package vanilla wafers, divided
1 cup white sugar
½ cup all-purpose flour
½ teaspoon salt
4 egg yolks
2 cups milk
1 teaspoon vanilla extract
1 tablespoon butter
4 bananas, sliced, or more to taste
4 egg whites
¼ teaspoon cream of tartar
5 tablespoons white sugar
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Line the bottom of a baking dish with some wafers. Combine sugar, flour, and salt in a bowl.
  • Beat yolks in a heavy saucepan over medium heat. Add flour mixture alternately with milk and vanilla extract, stirring constantly. Bring to a simmer and cook until slightly thickened, 8 to 10 minutes. Add butter; continue stirring until thickened to a pudding-like consistency, 5 to 7 minutes more.
  • Layer a portion of banana slices over the wafers and cover with pudding. Repeat layers with remaining bananas, wafers, and pudding.
  • Beat egg whites in a glass, metal, or ceramic bowl, gradually adding cream of tartar, until soft peaks form. Add sugar and continue beating on high speed until stiff peaks form. Fold in vanilla extract. Spoon meringue over the pudding.
  • Bake in the preheated oven until meringue browns, 15 to 20 minutes. Let cool before serving.
