Potato Bread (Bread Machine) image

This is a light and delicious loaf of bread made with instant mashed potato flakes. It was my first truly successful attempt at using my new bread machine, and I plan on making it again and again! If I didn't screw it up it must be foolproof! I found this online somewhere, but I'm ashamed to say I forgot where. This makes one 1 1/2 pound loaf.

Number Of Ingredients 9

3/4 cup milk or 3/4 cup soymilk
1/2 cup water
2 tablespoons vegetable oil or 2 tablespoons canola oil
1 1/2 teaspoons salt
3 cups bread flour
1/2 cup instant potato flakes
1 tablespoon sugar
1/4 teaspoon white pepper (optional-i omit)
2 teaspoons active dry yeast

Steps:

  • Add all ingredients to bread machine in order listed, or as recommended by your bread machine.
  • Select desired setting and press start.
  • I make this using the basic cycle and the lightest crust setting.

BREAD MACHINE POTATO BUNS

This is our family favorite bun recipe. It can be used to make hamburger buns or dinner rolls. Try using different flavor instant potatoes to flavor the buns. I usually use the roasted garlic flavor but buttery or three cheese flavor is also good!

1 pkg fast-rise yeast
1 2/3 c water (105-110 degrees)
2 Tbsp sugar
4 c bread flour
4 Tbsp instant potato flakes
3 Tbsp oil
1 tsp salt
butter for buttering tops of buns when removed from oven

Steps:

  • 1. Put water, sugar and yeast in bread machine pan. Let stand no less than 10 and no longer than 15 minutes to proof the yeast. Do not omit this step as it will insure that your yeast is working!
  • 2. Once your yeast has proofed,add the flour, instant potato flakes, oil and salt to the bread machine pan.
  • 3. Set bread machine to the dough cycle, close the lid and let the machine do the work. Check the dough when it is about half way through mixing. You may need to add a tablespoon of warm water if the dough seems dry.
  • 4. Once the dough has risen, shut off bread machine and dump the dough into a bowl sprayed with non-stick spray. Spray your hands with the non-stick spray and divide dough in half. Divide each of the two balls of into two or three pieces. You will now have 4 or 6 balls of dough. Divide each ball of dough into three pieces and form into a bun. You will have 12 or 18 balls of dough to form into buns.
  • 5. Place formed buns on a greased cookie sheet. Cover with a clean tea towel and let rise until doubled in size--it may take up to 30 minutes depending on how warm your kitchen is.
  • 6. While the buns are raising on the pan, preheat oven to 350. When buns have doubled in size, remove the towel and put the pan in the oven and bake for 10-12 minutes or light golden brown.
  • 7. Once they have baked, remove from oven and turn out onto waxed paper lined rack or counter top to cool. Brush the top of each bun with butter and let cool. I use about a 2 tablespoon size piece of butter and hold it with waxed paper and just lightly rub the butter over each bun.
  • 8. Let cool if you can wait that long and enjoy! I find that if my kids are around when they are baked, I have to stand guard over the buns so there are some left!

This is my Grandma's recipe and it is DELISH! I am not sure where she got it from, but these rolls have been a tradition in our family for as long as I can remember. This recipe uses REAL mashed potatoes (not instant flakes). So, when you plan to make this be sure to reserve 1/2 to 1 c. of the mashed potatoes you served at dinner the night before!! Today I was hungry for these rolls but didn't feel like rolling out dough, so I attempted to make the recipe (cut in half) in my bread machine to make a loaf of bread instead....PERFECT results! I have listed the ingredients the way my bread machine lists them, but do be sure to check manufacturer's instructions on the correct order of ingredients for your specific machine. I hope everyone enjoys this as much as our family does. Below are both the rolls and the bread machine versions of this recipe.

1 tablespoon yeast
1 cup water, lukewarm
1 cup honey or 1 cup sugar
1 cup mashed potatoes, REAL (leftovers work great!)
1/2 cup vegetable oil
3 eggs
6 cups bread flour
1 teaspoon salt
1/2 cup water, lukewarm
1/4 cup vegetable oil
1/2 cup honey (do NOT add honey if planning to use sugar. Honey is listed here because it should be added with liqu)
1 egg, whole
1 egg, separated, use white only
1/2 cup mashed potatoes, REAL (leftovers work great!)
3 cups bread flour
1/2 cup sugar (do NOT add sugar if using honey)
1/2 teaspoon salt
2 1/4 teaspoons yeast (or one envelope)

Steps:

  • If making POTATO ROLLS: Preheat oven to 350°F.
  • In a large mixing bowl, dissolve yeast in 1 cup warm water. Allow the yeast to activate and then mix in sugar or honey.
  • Add mashed potatoes, vegetable oil, eggs and salt. Use mixer or bread hooks.
  • Add flour one cup at a time stopping at 5 1/2 cups. Slowly add remaining flour until the dough is only slightly sticky to the touch. The dough should be workable but not dry.
  • Place in a greased bowl and cover with a towel. Allow to rise in a warm place until doubled in size, or it can sit overnight at room temperature.
  • Punch down and then roll dough out on floured surface to 1/2" thickness.
  • Use a canning jar ring to cut rolls - should make 30-36 rolls.
  • Place on a greased pan and allow to rise till almost doubled.
  • Bake in a preheated 350°F oven 12-15 minutes or until lightly browned.
  • If desired, slather outside tops with butter while still warm.
  • Enjoy!
  • NOTE: Prep time does not include rise times as they will vary.
  • If making POTATO BREAD: Place into bread pan in order as listed above OR as per manufacturer's guidelines.
  • Set for 1 1/2 lb. bread loaf and start bread machine.
  • Walk away until you hear the "ding" of the bread machine - approximately 3 hours later.
  • Remove from pan and slather outside of the loaf with butter while still warm from machine.
  • Enjoy!

GRANDMA'S EASY POTATO ROLLS

These fluffy rolls (King Arthur Baking) are easy to mix up in a jiffy, since they take potato flour instead of mashed potatoes (potato flakes can be substituted). I mix them in my bread machine and the dough is silky and easy to shape. They turn out "picture perfect." They work out perfectly if you shape into 16 balls and put in 2 round pans (8 each).

1 tablespoon instant yeast
1/2 cup milk
6 tablespoons butter
1/4 cup water
1 teaspoon salt
3 cups unbleached all-purpose flour (I use bleached)
1/4 cup potato flour (on baking aisle with specialty flours)
1/3 cup sugar
2 eggs

Steps:

  • Mix and knead together all ingredients in bread machine (or in mixer).
  • If mixing by hand, let dough rise about 90 minutes (or follow your bread machine's dough cycle).
  • Your dough might not have risen exactly double.
  • Transfer the dough to a lightly greased work surface and divide it into 16 pieces.
  • Round each piece into a smooth ball.
  • Place the balls in a 9x 13 pan, or 2 9 inch round pans, or separately on cookie sheet.
  • Cover the pan and let the rolls rise for about 1 hour or until doubled in bulk.
  • Preheat the oven to 325.
  • Bake the rolls for 30 minutes (tenting lightly with aluminum foil after 20 minutes to prevent overbrowning).
  • Rolls should be golden brown when done. Brush with additional melted butter.
  • Let cool slightly and turn out on a rack to cool.

1 (.25 ounce) package active dry yeast
¼ cup warm water (110 degrees F (43 degrees C))
1 cup milk
¼ cup white sugar
¼ cup vegetable shortening
1 teaspoon salt
1 egg
3 ⅓ cups all-purpose flour

Steps:

  • Heat the milk in a saucepan over medium heat until bubbles begin to form, but the milk is not simmering. Stir in the sugar, shortening, and salt; set aside until cooled to 110 degrees F (43 degrees C). Sprinkle the yeast over the warm water and set aside for 5 minutes.
  • Beat the egg in a mixing bowl, then stir in the yeast and milk. Stir in half of the flour until no lumps remain, then stir in the remaining flour a little at a time until a smooth dough forms. Place into a greased bowl, turn once to grease the top, cover, and let rise until doubled in bulk, about 2 hours.
  • Grease a 12 sectioned muffin tin. Deflate the dough, and place onto a well-floured work surface. Divide the dough into 36 pieces, and form into balls. Place 3 balls into each muffin cup. Cover, and let rise in a warm place until doubled in bulk, about 1 hour.
  • Preheat an oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until golden, 12 to 15 minutes. Serve warm.

  • Peel one large potato and chop. Place chopped potato in saucepan with four cups water on high heat until it comes to a boil then reduce heat to medium. Cover and cook potato until soft and smashes easily with a fork, about 30 minutes. Remove from heat.
  • With a slotted spoon, remove potato from cooking water. DO NOT THROW OUT THE WATER.
  • Work quickly with potato and potato water so it doesn't get cold. In a small bowl, smash potato well with a fork. Measure out 1/2 cup mashed potato. (Reserve the rest for a different recipe or set it aside for a minute to eat it while you're waiting for the yeast to proof below.)
