Categories     Dinner     Soup

Time 45m

Number Of Ingredients 18

4 slices bacon (cut into medium dice)
2 tablespoons butter
2 garlic cloves, (minced)
1 small onion, (diced)
3 stalks celery, (diced)
2 tablespoons all-purpose flour
¼ cup white wine
3 Yukon gold potatoes, (peeled and diced)
2 8-oz bottles clam juice
1 10-oz can baby clams, drained and liquid reserved
1 cup chicken or vegetable broth
3 sprigs thyme
1 bay leaf
2 cups half-and-half
2 teaspoons salt (or more to taste)
Freshly ground black pepper (to taste)
2 tablespoons parsley (chopped)
Oyster crackers (for serving (optional))

Steps:

  • Heat a large stockpot or Dutch oven over medium high heat. Add the bacon and cook until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate, reserving 1 tablespoon of the fat rendered in the pot.
  • Melt the butter in the stockpot with the bacon fat. Add the garlic, onion and celery, and cook, stirring frequently, until the onions become soft but not brown, about 5-6 minutes.
  • Whisk in the flour and stir for about a minute trying to get rid of any lumps. Gradually, stir in the white wine and reduce for about 1 minute.
  • Add the potatoes, the clam juice, the liquid from the canned clams and the broth. Add the thyme sprigs and bay leaf and bring to a boil. Lower the heat and simmer until the potatoes become tender, about 10 to 15 minutes.
  • When the potatoes are tender, stir in the half and half and the clams and season with salt and pepper. Bring to a gentle simmer (do not let the chowder come to a full boil) and simmer for about 2 minutes. Remove the thyme and bay leaf. If the chowder is too thick, add additional half and half until desired consistency is reached. Serve immediately garnished with chopped parsley and the reserved bacon.

NEW ENGLAND CLAM CHOWDER

New England Clam Chowder image

Categories     Soup

Time 1h20m

Number Of Ingredients 13

4 slices thick-cut bacon (cut into 1/4-inch pieces, add more bacon as you like)
1 large yellow onion (diced)
2 tablespoons gluten-free brown rice flour (or unbleached all-purpose flour )
16 ounces clam broth
4 medium Yukon Gold potatoes (about 1-1/2 pounds, scrubbed and diced medium)
1 large bay leaf
1 teaspoon fresh thyme (or 1/4 teaspoon dried thyme)
19.5 ounces chopped clams (3 cans, strained, reserving the juice)
1 cup corn kernels (fresh or frozen, thawed if from frozen)
16 ounces heavy cream
2 tablespoons fresh parsley leaves (minced, plus more for garnish)
sea salt to taste
fresh ground black pepper

Steps:

  • Warm the pot over medium heat and fry the bacon until the fat renders and the bacon starts to crisp. Add the onion and cook until it's translucent. Stir in the flour and cook it until the mixture is lightly browned and has a slightly nutty flavor. If you can still taste flour, it's not ready.
  • Gradually whisk in clam broth and the reserved clam juice from clams. Add potatoes, bay leaf, and thyme. Simmer until the potatoes are tender, about 10 minutes. (Optional: Mash the potatoes a bit with a potato masher to help thicken the soup even more.)
  • Add the clams, corn, cream, parsley, salt (taste first, may not be necessary) and ground pepper to taste. Bring to a simmer and cook for about 30 minutes. Remove from heat and serve garnished with parsley and oyster crackers or in a bread bowl.

  • Drain clam juice from cans into a liquid measuring cup. Add enough bottled clam juice to equal 2 1/2 cups. Set aside. (See directions in Notes if using fresh clams.)
  • In a Dutch oven, cook bacon over medium heat until fat is rendered and slightly brown. Remove half of the bacon with a slotted spoon to a paper towel lined plate. Drain off all but 2 tablespoons grease. To the remaining bacon and drippings, melt in 1 tablespoon butter over medium heat.
  • Increase heat to medium high and add celery and onion. Sauté for 5-7 minutes or until onions are soft. Add potatoes, garlic, red pepper (if using) and sauté 30 seconds. Sprinkle in flour and cook an additional 1 minute. Stir in chicken broth, reserved 2 ½ cups clam juice, chicken bouillon, bay leaves and all seasonings. Bring to a boil then reduce to a simmer. Simmer, uncovered, for 15-20 minutes or until potatoes are very tender.
  • Stir in heavy cream and bring to a simmer to heat through. Discard bay leaves. Remove from heat and stir in clams. Taste and add salt/pepper to taste. (You may or may not need additional salt depending on how salty your clams and bacon are.) For a thinner or less chunky soup stir in additional heavy cream/milk or chicken broth.
