My Kids' Favorite Cookies image

When I made these cookies for my boys while they were growing up, it was a real challenge to keep them away from the kitchen to let these cookies cool. I still make these mouthwatering morsels for my "boys" today. -Ardys Smith, Palo Alto, California

1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups quick-cooking oats
1 cup sweetened shredded coconut
5 milk chocolate candy bars (1.55 ounces each)

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture and mix well. Beat in oats and coconut. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly. Bake until lightly browned, 10-12 minutes. , Break each candy bar into 12 pieces; press a chocolate piece into the center of each warm cookie. Remove to wire racks.

I have played around with this old family recipe adding nuts, chips etc. and it always turns out really good and if made ahead is really quick when you need cookies in a hurry.

1 cup butter
1 tablespoon vanilla extract
1 cup packed brown sugar
1 teaspoon salt
1 cup white sugar
1 teaspoon baking soda
3 ½ cups all-purpose flour
2 eggs
1 cup chopped walnuts

Steps:

  • Cream together butter or margarine, brown sugar, and white sugar. Beat in eggs and vanilla. Mix in flour, salt and baking soda.
  • Roll dough into 2 inch diameter logs. Wrap in waxed paper and freeze.
  • Slice and bake anytime at 325 degrees F (165 degrees C) until light brown.

MY FAVORITE ROYAL ICING



My Favorite Royal Icing image

Here is my classic easy royal icing made with meringue powder. It's easy to work with, sets quickly, and won't break your teeth when it dries. It has the most delicious taste and texture and makes decorating sugar cookies fun and simple. Use this traditional royal icing recipe for both flooding and outlining your sugar cookies.

4 cups (480g) confectioners' sugar, sifted (I use and recommend Domino brand)
3 Tablespoons meringue powder (not plain egg white powder)
9-10 Tablespoons room temperature water
optional for decorating: gel food coloring (I love this food coloring kit)

Steps:

  • Watch the video of the icing above so you get an idea of what the final consistency should be.
  • Pour confectioners' sugar, meringue powder, and 9 Tablespoons of water into a large bowl. Using a hand mixer or a stand mixer fitted with a whisk attachment, beat icing ingredients together on high speed for 1.5 - 2 minutes. When lifting the whisk up off the icing, the icing should drizzle down and smooth out within 5-10 seconds. If it's too thick, beat in more water 1 Tablespoon at a time. I usually need 10 Tablespoons but on particularly dry days, I use up to 12-14 Tablespoons. Keep in mind that the longer you beat the royal icing, the thicker it becomes. If your royal icing is too thin, just keep beating it to introduce more air OR you can add more confectioners' sugar.
  • When applied to cookies or confections in a thin layer, icing completely dries in about 2 hours at room temperature. If icing consistency is too thin and runny, it will take longer to dry. If the icing is applied very thick on cookies, it will also take longer to dry. If you're layering royal icing onto cookies for specific designs and need it to set quickly, place cookies in the refrigerator to help speed it up. Crispy, buttery chocolate chip cookie recipe! These are buttery perfection!

2 1/2 cups of flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter (softened)
1 1/4 cups white sugar
1/4 cup brown sugar (packed)
1 1/2 teaspoons vanilla
1 egg
2 cups chocolate chips

Steps:

  • Kick the tires and light the fires to 375 degrees.
  • Cream together your butter and sugar until it's light and fluffy.
  • Add in the egg and vanilla, mixing thoroughly.
  • Beat in the flour, baking soda and salt.When that is done, fold in the two cups of chocolate chips by hand, and prepare to put them on some parchment paper lined cookie sheets.
  • Roll a heaping tablespoon of cookie dough into a ball, 12 per cookie sheet.
  • Take a glass and using the bottom, flatten out each cookie. If the cookie sticks, start wetting the bottom of the glass with water, they will come right off.
  • This is a dry dough - no sticky chewiness going on here- but it's just wet enough to make perfect little flat cookie patties.
  • Bake at 375 for 9-11 minutes, until golden brown.
  • Cool on the sheets completely.These turned out to be wonderfully crispy, crunchy and were surprisingly a hit with everyone. The butter flavor really is apparent in these ones due to the lack of flavor that comes with brown sugar, but that isn't a bad thing at all. Buttery, crispy little bites of chocolate heaven!

Chewy Oatmeal Chocolate Chip Coconut Cookies {My Favorite Cookie} image

Number Of Ingredients 11

1 cup old-fashioned rolled oats
2 1/4 cups all-purpose flour (I use unbleached all-purpose flour)
1 teaspoon baking soda
3/4 teaspoon salt
1 cup salted butter (softened)
1 1/4 cups packed light brown sugar
1/2 cup packed dark brown sugar
2 large eggs
1 tablespoon vanilla
1 cup sweetened or unsweetened coconut flakes
2 cups semisweet or bittersweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F. Add the oats, flour, baking soda, and salt to a food processor or blender and process for about 30 seconds until coarsely blended. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with a handheld electric mixer, add the butter and brown sugars and mix until light in color, 1-2 minutes. Add the eggs and vanilla and mix for another 1-2 minutes until light and fluffy, scraping down the sides of the bowl as needed.
  • Add the blended dry ingredients and mix once or twice (not all the flour will be fully combined). Add the coconut and chocolate chips and mix until no dry streaks remain.
  • Shape the cookie dough into balls (I use a #40 cookie scoop) and place several inches apart on parchment lined cookie sheets. Bake for 10-12 minutes. Let the cookies cool slightly before removing them from the pan to a wire rack.

  • In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the brown sugar and molasses and beat on medium high speed until combined and creamy-looking. Scrape down the sides and bottom of the bowl as needed. Next, beat in egg and vanilla on high speed for 2 full minutes. Scrape down the sides and bottom of the bowl as needed. The butter may separate; that’s ok.
  • In a separate bowl, whisk the flour, baking soda, salt, ginger, cinnamon, allspice, and cloves together until combined. On low speed, slowly mix into the wet ingredients until combined. The cookie dough will be quite thick and slightly sticky. Divide dough in half and place each onto a large piece of plastic wrap. Wrap each up tightly and pat down to create a disc shape. Please see photo and description above in my post. Chill discs for at least 3 hours and up to 3 days. Chilling is mandatory for this cookie dough. I always chill mine overnight.
  • Preheat oven to 350°F (177°C). Line 2-3 large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Remove 1 disc of chilled cookie dough from the refrigerator. Generously flour a work surface, as well as your hands and the rolling pin. Roll out disc until 1/4-inch thick. Tips for rolling– the dough may crack and be crumbly as you roll. What’s helpful is picking it up and rotating it as you go. Additionally, you can use your fingers to help meld the cracking edges back together. The first few rolls are always the hardest since the dough is so stiff, but re-rolling the scraps is much easier. Cut into shapes. Place shapes 1 inch apart on prepared baking sheets. Re-roll dough scraps until all the dough is shaped. Repeat with remaining disc of dough.
