THE BEST STUFFING RECIPE

The Best Stuffing Recipe image

An Old Fashioned Bread Stuffing is a classic recipe for stuffing made with bread cubes, sauteed onions, celery, and butter.

Provided by Kristen Chidsey

Categories     Side Dish

Time 1h20m

Number Of Ingredients 8

1/4 cup butter (plus more for greasing pan)
1 large onion (diced)
3 celery stalks (chopped)
3 sprigs fresh thyme leaves (stems discarded)
1 pound bread (cubed)
2 cups chicken stock
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Cut the bread into 1-inch cubes and arrange it onto a baking sheet. Allow the bread to dry out for 3-12 hours.
  • Grease an 8x8 or 2-quart baking dish with butter. Preheat oven to 350 degrees F.
  • Melt 1/4 cup (or 1/2 stick) butter in a large heavy-bottomed skillet, over medium-low heat.
  • Add onions, celery, and fresh thyme leaves to the skillet. Season with a pinch of salt and pepper. Saute veggies until softened slightly, about 7 minutes.
  • Place the bread cubes in a large mixing bowl. Add in the sauteed veggies and another pinch of salt and pepper. Toss well.
  • Add in the chicken stock, 1 cup at a time, and toss until bread cubes are moistened completely. You want the bread to be wet and softened, but not drenched in liquid or soggy. You may not use all the liquid.
  • Pour the prepared stuffing into the prepared baking dish and cover with foil.
  • Bake at 350 degrees for 40 minutes covered. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden.

MY FAMILY'S OLD FASHIONED BREAD STUFFING

My Family's Old Fashioned Bread Stuffing image

When my parent's married in 1949, my grandma Frieda gave mom her stuffing recipe. It is plain, and simple, very basic, but for 64 years we have been eating this version stuffing for Thanksgiving. Once or twice I tried adding sausage, or tweaking the recipe, but I have always gone back to the original. Here is the original...

3 c finely chopped celery
fresh parsley or dried parsley, to taste
1 Tbsp salt
1 Tbsp poultry seasoning
1 tsp paprika
1/2 tsp black pepper

NOTE: DO NOT STUFF THE TURKEY OVERNIGHT. IF MAKING STUFFING THE DAY BEFORE, REFRIGERATE OVERNIGHT, THEN STUFF THE TURKEY IN THE MORNING. ALSO; DON'T ADD THE EGGS TO THE STUFFING UNTIL RIGHT BEFORE BAKING IT, OR STUFFING THE TURKEY.

Steps:

  • 1. Toast your bread, then slice it into bite sized cubes and put in a large mixing bowl.
  • 2. Add the seasonings to cubed bread and toss lightly.
  • 3. Add butter to a large saute pan, add onions and celery, and cook until vegetables are tender, about 5 minutes. Add to the bread mixture, and mix well.
  • 4. If baking right away, add egg to bread mixture, then put all of the stuffing into a 3 qt. baking dish, and cook for 1 hour, covered, until hot. (If you like crispy stuffing, remove cover for the last 15 minutes of cooking. NOTE: If baking the stuffing set your oven at 350 degrees.

  • Add dry bread cubes to the crockpot (see BODY OF POST for instructions re: How To Dry Bread), top with pats of butter then season with salt and pepper.
  • Next top with chopped parsley, thyme and sage then add the (raw) onions and celery. Crumble the sausage over the top then pour in the turkey (or chicken) stock.
  • Next cover the crockpot with a dishtowel then top with the lid. This will keep the condensation off the stuffing so that it can have the crispy bits outside but stay moist inside.
