This is a quick, easy, delicious, and healthy recipe that I use whenever time is short. I often make it for more than just breakfast! It's pretty basic, so feel free to spice it up a bit - add some spinach, a little Parmesan cheese, whatever you want! :-)

2 slices light whole wheat bread
4 egg whites
4 slices roma tomatoes
1 -2 teaspoon balsamic vinegar

Steps:

  • Put bread in the toaster.
  • Cook the eggs whites via skillet or covered in the microwave for about 2-2:30 minutes.
  • Once the toast is done, sprinkle the balsamic vinegar on one slice.
  • Top that slice with the tomato slices, cooked egg whites, and the final slice of bread.
  • Enjoy!

8 oz breakfast sausage patties (or breakfast links, casings removed)
4 English Muffins
4 slices cheddar cheese
4 egg (cooked according to your preferences)

Steps:

  • Line a rimmed baking sheet with foil and spray it with nonstick cooking spray. Preheat the oven to 375°.
  • Lay the sausage patties out on the sheet pan and bake until cooked through, about 15 minutes. If using breakfast links, form patties by combining two links together and patting very thin. There will be a lot of shrinkage, so make them as thin and wide as you can.
  • Assemble the sandwiches by layering one sausage patty, slice of cheese, and cooked egg between two halves of an English muffin. Serve immediately.

2 slices of toast (using the bread of your choice)
1 slice cheddar cheese ((I am using Sargento extra thin))
1/4 medium avocado
Salt and pepper (to taste)
Sriracha to taste (optional)

Steps:

  • Toast two pieces of bread.
  • Cook the egg, using my no flip perfect egg method.
  • Once these are both done, you are ready to assemble.
  • I put the cheese on the bottom, and place the cooked egg on top. The heat from the egg melts the cheese.
  • Press the avocado slices on the other slice of bread.
  • Add salt and pepper to taste.
  • Top with Sriracha, if desired.

10 Large Eggs
1/2 Roll Taylor Ham (Pork Roll) (*You can switch out your meat for whichever type you prefer)
Pepper to taste
/4 Cup Shredded Sharp Cheddar Cheese
Sliced Sharp White Cheddar Cheese (*You can change the cheese for whichever flavor you prefer)
Sliced Bread of your choosing

Steps:

  • In a large skillet over medium high heat scramble your eggs. While your eggs are cooking add 1/4 cup of shredded sharp cheddar cheese and your cracked black pepper.
  • In a separate skillet, cook and chop your meat (if needed).
  • Once everything is cooked, Portion out the eggs, meat and cheese slices onto the separate bread slices. Wrap in tin foil (or place i tupperware containers and place in the fridge.
  • When you are ready to eat, unwrap the sandwich from the foil and put on a microwaveable plate. Cook on high for 1 minute and 15 seconds or until the sandwich is no longer frozen.
