My Dad Swears My Sister Makes the Best Pork Chops in the World image

My sister learned the basic flour mix from her former mother-in-law, who grew up in Carruthersville, Missouri. My sister kept hearing Emeril say how well garlic went with pork, so she added it to her seasoning mix. My dad still swears that my maternal grandmother (his former mother-in-law) made the best fried chicken ever. Born in 1919, she was the eldest daughter, and second of ten children, raised on a farm outside the town of Black Oak, Arkansas. Even after my parents divorced, Dad was occasionally invited to eat Grandmommy's fried chicken. He always relished those meals, and still talks about them today. My grandmother never told anyone, except my grandfather, her secret to breading her chicken, but she did tell my sister her trick to frying it. My sister has incorporated that method into her pork chop recipe.

1 lb pork chop
1 1/2 cups flour
1 tablespoon garlic powder
1/2 tablespoon salt
1 teaspoon pepper
1 teaspoon seasoning salt
water (Milk, Buttermilk or Egg Wash can be substituted)
oil, for frying

Steps:

  • Mix dry ingredients in a resealable bag (Ziplock).
  • Rinse pork chops under running water. Toss them into a ziplock bag and shake, to coat well.
  • In a cast iron skillet, cook chops in enough oil to come 1/2 way up the side of the chops, for example - 1 inch chops need 1/2 an inch of oil, on medium high heat for approximately 4 minutes each side, until golden brown.
  • For the last 30 seconds of cooking the second side, increase heat to high, to "cook the grease out of it" (Grandmommy's secret for fried chicken).
  • Blot on paper towels before serving.

My husband always says that I cook a "mean" pork chop! I will have to admit they do turn out great every time. I thought I would share my tips with you. I always cook the bone-in center cut chops because there is more flavor near the bone. I find them packaged as regular cut or thin cut...either is fine. I always use canola oil for frying. This recipe is for two pork chops. It is best not to crowd them in the pan even if you have to start again with another batch. The biggest secret is the temperature and to keep turning the chops over. In the directions you will find some other important tips.

2 center-cut pork chops (bone-in)
2/3 cup vegetable oil (canola)
1/2 cup self-rising flour
salt
black pepper
paprika

Steps:

  • Generously coat salt, pepper and paprika on both sides of chops.
  • Place flour into a plastic bag.
  • Shake chops in bag to coat flour and then set aside in a plate for 5 to 10 minutes. Then shake and flour in bag a second time.
  • Pour oil into a 10 inch frying skillet. Turn burner on to medium high. (On my stove top there are numbers 1-10) I use 6 as medium high to begin.
  • Once a piece of flour dropped into oil and it sizzles, place chops in and turn down to 5 which would be considered medium.
  • Let chops fry just a few seconds then turn over -- then again for a few seconds. This will be repeated approximately 3 times for turning to each side.
  • Once you see oil begins to stop sizzling, they are done and should be a golden brown. Do not get too dark brown or they will be tough.

I have been searching for years for a foolproof method of cooking pork chops and finally found it. These are wonderfully moist and very tasty. This is a Bon Appetit recipe and I found it on the Epicurious web site.

1/2 cup all-purpose flour
1/4 cup cornstarch
1/2 teaspoon garlic salt
4 center-cut pork chops, apprx 3/4 inch thick
vegetable oil (for frying)

Steps:

  • Mix flour, cornstarch and garlic salt.
  • Sprinkle pork chops with salt and pepper.
  • Dredge chops in flour mixture and shake off excess.
  • Pour enough oil into large skillet to reach depth of 1/2" to 1".
  • Heat oil to 350 degrees.
  • Fry chops in oil until golden about 5 minutes per side.
  • Note: I found they cooked much quicker.
  • Avoid overcooking or they will be dry.

8 bone-in pork chops
seasoned salt to taste
3 onions, sliced
¼ cup water

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Season the pork chops with seasoned salt and place in a glass baking dish. Arrange onion slices on top of pork chops, then pour the water into the pan. Cover with aluminum foil.
  • Bake for 1 hour in the preheated oven, then reduce the oven temperature to 300 degrees F (150 degrees C). Continue to cook until an instant-read thermometer inserted into the center reaches 145 degrees F (63 degrees C), about another 30 minutes.
