Coffee and Vinegar Pot Roast image

Improbably delicious pot roast made with "burned" meat and strong black coffee. You won't taste the coffee in this fork tender dish. It's made with a vinegar marinade, so allow 24-48 hours to marinate. From Rozanne Gold, a favorite cookbook author.

Number Of Ingredients 7

3 -5 lbs chuck roast or 3 -5 lbs boneless bottom round roast
1 cup white wine vinegar
2 cups strong hot black coffee
1 cup water
2 bay leaves
2 tablespoons whole black peppercorns (or combination of white and black)
1/2 tablespoon salt

Steps:

  • Refrigerate and marinate roast in plastic bag with vinegar, 24-48 hours; remove meat and set marinade aside; pat dry with paper towels.
  • Brown the roast in a heavy pot until nearly burned on both sides; add the coffee and water and scrape up any browned bits; add bay leaves, peppercorns and salt.
  • Simmer until tender, about 3 1/2 hours, turning several times; remove meat from pot; add reserved marinade and reduce to about 3 cups; season with salt and pepper to taste; thinly slice the roast and return it to the pot; reduce heat to low and cook another 30 minutes.

2 medium onions, thinly sliced
2 garlic cloves, minced
1 boneless beef chuck roast (3-1/2 to 4 pounds), quartered
1 cup brewed coffee
1/4 cup soy sauce
1/4 cup cornstarch
6 tablespoons cold water

Steps:

  • Place half of the onions in a 5-qt. slow cooker. Top with garlic and half of the beef. Top with remaining onion and beef. Combine coffee and soy sauce; pour over beef. Cover and cook on low until meat is tender, 9-10 hours. , Combine cornstarch and water until smooth; stir into cooking juices. Cover and cook on high until gravy is thickened, 30 minutes.

Found this in a Slow Cooker Classic's magazine. The marinade really brings out a great flavor in the meat. It comes out so tender that you won't even need a knife! You can also add potatoes and carrots in the last hour of cooking if you like. Is also great over noodles.

1 cup dry white wine or 1 cup beef broth
1/3 cup low sodium soy sauce
1 tablespoon olive oil
4 garlic cloves, minced
2 green onions, thinly sliced
1 1/2 teaspoons ground ginger
1/4 teaspoon black pepper
4 whole cloves
1 four pound bottom round beef roast
5 teaspoons cornstarch
5 teaspoons cold water

Steps:

  • In a gallon size ziplock bag, combine the first eight ingredients.
  • Cut the roast in half add it to the marinade and coat all sides.Refrigerate over night.
  • Place roast and marinade in slow cooker,cover,and cook on low for 8 to 10 hours or until meat is tender.
  • Remove roast to a serving platter or cutting board and cover to keep warm.
  • In a sauce pan combine cornstarch and cold water and stir till smooth.
  • Add 1 1/2 cups of the cooking juices discarding the whole cloves first.
  • Bring to a boil and stir and cook for two minutes or until thickened.Serve with roast.

Pour cooking juices into a 2-cup measuring cup; discard whole cloves, In a saucepan, combine cornstarch and cold water until smooth; stir in 1-1/2 cups cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with the roast.

1 beef sirloin tip roast (2-1/2 pounds), cut in half
2 teaspoons canola oil
1-1/2 cups sliced fresh mushrooms
1/3 cup sliced green onions
2 garlic cloves, minced
1-1/2 cups brewed coffee
1 teaspoon liquid smoke, optional
1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon pepper
1/4 cup cornstarch
1/3 cup cold water

Steps:

  • In a large nonstick skillet, brown roast on all sides in oil over medium-high heat. Place in a 5-qt. slow cooker. In the same skillet, saute mushrooms, onions and garlic until tender; stir in the coffee, liquid smoke if desired, salt, chili powder and pepper. Pour over roast. , Cover and cook on low for 8-10 hours or until meat is tender. Remove roast and keep warm.
