Chipotle Lime Grilled Flank Steak is marinated for hours and then grilled to perfection. The steak has so much flavor from a marinade of lime juice, cilantro, chipotle peppers, garlic, and a little honey.

1/2 cup olive oil or vegetable oil
1/4 cup lime juice
1/3 cup loosely packed cilantro leaves
4 chipotle peppers in adobo sauce, (chopped)
2 tablespoons adobo sauce
1 1/2 tablespoons honey
1 tablespoon white vinegar
2 cloves garlic
1 (2-pound) flank steak
salt and pepper

Steps:

  • Add first 8 ingredients to a blender and blend until smooth.
  • Pour into a large ziptop bag. Add flank steak, coating it well. Seal and refrigerate for at least 8 hours and up to 24 hours.
  • Let flank steak sit at room temperature for 30 minutes before grilling.
  • Pour marinade into a small saucepan. Boil for 5 minutes, stirring occasionally so it doesn't burn on the bottom.
  • Season flank steak with salt and pepper. Grill for about 8 minutes per side, or until desired degree of doneness. Drizzle marinade over steak and let it rest for 10 minutes. Slice thinly against the grain.

2 Tbsp adobo sauce ((with chopped chipotle peppers))
2 Tbsp olive oil ((extra virgin))
1 Tbsp lime juice
1/2 tsp cumin
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp each, salt & pepper

Steps:

  • Combine adobo sauce, olive oil, lime juice, cumin, onion powder, garlic powder, salt, and pepper in a small mixing bowl. Stir together.
  • Pour marinade in a Ziplock bag.
  • Add the chicken and press out any air in the bag and seal.
  • Massage the marinade into the chicken through the bag.
  • Refrigerate for at least 4 hours before use. A 24-hour marinade will yield the best results for marinade flavor.

½ cup orange juice, fresh squeezed
¼ cup lime juice, fresh squeezed
zest from 1 lime
¼ cup honey
2 tsp kosher salt
1 tsp garlic powder
1½ tsp ground cumin
2 tsp dried oregano
1 chipotle chile, chopped
1 Tbsp adobo sauce, from canned chipotles
1 (1-lb) pork tenderloin, trimmed of fat
1 Tbsp vegetable oil
cilantro, chopped, for garnish

Steps:

  • Put the orange juice, lime juice, zest, honey, salt, garlic powder, cumin, oregano, chipotles and adobo in a blender or large food processor, and pulse a few times to make sure it's well blended. Put the tenderloin in a large zip lock bag and pour in about half of the marinade. Make sure the pork is completely surrounded by marinade by removing as much air as possible from the bag, then put it in the fridge to marinate for at least 2 hours, up to 24. Put the remaining marinade in a sealed container in the fridge. Remove the tenderloin and reserved marinade about 30 minutes before you're ready to cook it and allow it to come to room temperature. Preheat the oven to 425°F (225°C). Heat the oil in a cast iron (or oven safe) skillet over medium high heat. Place the tenderloin in the skillet and sear on all sides; about 2 - 3 minutes per side, then place the skillet in the oven and continue to roast the tenderloin for about 15 more minutes. Remove the tenderloin from the skillet to a plate, and cover with a foil tent while you make the sauce. Put the skillet (with juices in it) back over a high flame, and pour in the reserved marinade. Stir and cook until the sauce thickens. After letting the tenderloin rest for about 10 minutes under the foil, place it on a cutting board and slice into medallions. Serve topped with the sauce and sprinkled with chopped cilantro.

1 1/2 pounds skirt or flank steak
Lime wedges (for serving)

Steps:

  • Blend chile, adobo sauce, 1 tsp. lime zest, lime juice, oil, 1 1/2 tsp. salt, and 1 tsp. pepper in a blender until smooth. Place steak in a large resealable plastic bag, pour marinade over, and toss to coat. Marinate, tossing occasionally, at least 30 minutes at room temperature, or chill overnight.
  • If chilled, let steak sit at room temperature 30 minutes. Prepare a grill or grill pan for medium-high heat. Remove steak from marinade; discard marinade. Grill steak until an instant-read thermometer inserted into the center of steak registers 120-125°F for medium-rare, 2-3 minutes per side for skirt; 3-4 minutes per side for flank. Let rest 10 minutes before thinly slicing against the grain (to make slicing easier for skirt steak, cut into 5-6" segments, then slice against the grain).
  • Transfer to a platter and top with remaining 1/2 tsp. lime zest; season with salt and pepper. Serve with lime wedges alongside.

2 - 2.5 lbs. (1 kg-1.2 kg) skin on chicken thighs, deboned
1/2 cup fresh lime juice
1 teaspoon fresh lime zest
1/4 cup olive oil
3 tablespoons fresh cilantro leaves, roughly chopped
1 jalapeño, chopped finely
2 teaspoons chipotle chili powder, or more to taste
5 garlic cloves, minced
1 1/2 tablespoons honey
2 teaspoons salt or to taste
Lime wedges, for serving

Steps:

  • Leave the skin on the chicken thighs but remove the bones by cutting two slits along the sides of the bone. Rinse the chicken with cold water and pat dry with paper towels. Set aside.
  • In a big bowl, whisk all the Marinade ingredients until well combined. Save some of the Marinade for basting. Add chicken to the Marinade, make sure to stir and coat the chicken evenly. Marinate for at least 2 hours.
  • Fire up the grill, brush a little bit of the Marinade plus the garlic, cilantro and jalapeno on top of the chicken and grill them until they turn golden brown and charred on both sides. Serve immediately with some fresh lime wedges.

Recipe from package of pork chops.Prep time does not include marinating time. You can alternately use dried chipotle, just rehydrate in hot water for about 15 mins and then chop. I actually like this better as a marinade for pork tenderloin.

1 canned chipotle chile in adobo, chopped
2 teaspoons oregano
2 garlic cloves, chopped
1/4 cup olive oil

1/2 teaspoon salt

Steps:

  • Place chops in large self-sealing plastic bag; combine remaining ingredients in a small bowl and pour over chops.

2 tablespoons olive oil
1 tablespoon white wine vinegar
1 teaspoon lime zest plus 3 tablespoons lime juice

2 cups cubed watermelon
1/2 cup very thinly sliced red onion
1 large mango, peeled, pitted and chopped
1/2 English cucumber, cut into half-moons
1/2 cup fresh mint leaves

Steps:

  • For the spicy chipotle-lime vinaigrette: Whisk together the honey, olive oil, vinegar, lime zest and juice and chipotle chile powder in a small bowl. Season with salt to taste.
  • For the watermelon salad: Combine the watermelon, red onion, mango and cucumber in a medium bowl.
  • Pour the vinaigrette over the mixture and toss to coat. Cover and refrigerate for 30 minutes or until ready to serve. Just before serving, add the mint and toss to combine.
