2 cups cooked black beans
⅓ cup coconut oil
3 eggs
½ cup maple syrup
⅓ cup cocoa powder
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon baking powder
¼ cup chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square glass pan with cooking spray.
  • Place black beans and coconut oil in a saucepan. Cook over medium-low heat until the beans are warmed through and the coconut oil is melted, about 5 minutes. Mix in eggs, maple syrup, cocoa powder, vanilla extract, salt, and baking powder.
  • Transfer black bean mixture to a blender. Cover and blend into a smooth batter, 1 to 2 minutes. Pour into greased pan and sprinkle chocolate chips on top.
  • Bake in the preheated oven until batter pulls away from the sides of the pan, about 30 minutes. Allow to cool before cutting, about 30 minutes.

1 14 oz canned low-sodium black beans, rinsed and drained
2 large eggs
1/2 cup cocoa powder
3/4 cup sugar
1/2 teaspoon oil
1 tablespoon unsweetened almond milk (or dairy, skim)
1 teaspoon balsamic vinegar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon of freshly ground coffee or instant coffee
1 cup semisweet chocolate chips (divided (Hershey's))

Steps:

  • Preheat the oven to 350° F.
  • Grease a nonstick 9 x 9-inch square baking pan with baking spray and line with parchment paper, leaving a 2-inch overhang on all sides.
  • Blend the black beans, eggs, cocoa powder, sugar, oil, almond milk, balsamic, baking soda, baking powder and coffee in the blender until smooth and pour into a bowl.
  • Fold in 1/2 cup chocolate chips until combined.
  • Pour the brownie batter into the prepared pan. Sprinkle the remaining chocolate chips evenly over the top of the brownies.
  • Bake the brownies until a toothpick comes out clean, about 30 to 32 minutes.
  • Allow the brownies to cool completely before slicing them into squares.

I was given a pamphlet on recipes that use beans and the original recipe for these brownies was included. I switched the sugar to Splenda, the eggs to egg substitute (or the same amount of liquid egg whites) and the vegetable oil to canola oil. They're just as good as a traditional brownie but you won't feel bad letting your kids eat them (and eat them they will)!

1 (15 1/2 ounce) can no salt added black beans, rinsed and drained
3/4 cup egg substitute
3 tablespoons canola oil
1/2 cup cocoa powder
1 pinch salt
1 teaspoon vanilla extract
1/2 cup Splenda sugar substitute
1 teaspoon instant coffee granules (optional)

Steps:

  • Preheat oven to 350.
  • Spray an 8x8 square baking dish with cooking spray.
  • Combine the black beans, egg substitute, canola oil, cocoa powder, salt, vanilla extract, Splenda and instant coffee granules (if using) in a blender; blend until smooth.
  • Pour the mixture into the prepared dish. At this point, you can also sprinkle chocolate chips over the top of the mixture, if you're not watching your calories.
  • Bake in the preheated oven until the top is dry and the edges start to pull away from the side of the pan, about 30 minutes.
  • I've also noticed that the texture gets better after being refrigerated.

My Black Bean Brownies (Low Fat, Low Sugar) image

You can add a small or medium banana (very ripe) that you puree with the other liquid ingredients. You can also add up to 1/2 cup melted butter if desired, and as much sweetener as you like. Sometimes I use pinto beans, which make a lighter colored brownie. For a Mexican chocolate taste, add 1/4 to 1/2 tsp. cinnamon.

1 (15 ounce) can organic black beans or 1 (15 ounce) can pinto beans
3 large eggs (or 2 jumbo eggs)
1/4 cup almond milk
2 -3 teaspoons vanilla extract
3 drops liquid stevia (to taste)
1 tablespoon agave nectar (to taste)
2 -3 tablespoons unsweetened cocoa powder (I usually use 2 T., can also sub carob powder)
1 teaspoon baking powder
1/4 teaspoon ground cinnamon or 1/4 teaspoon cardamom

Steps:

  • Preheat oven to 350 degrees F.
  • Pour beans into a colander and rinse very, very, very well.
  • Place drained beans in the large cup of the NutriBullet (or use a blender or food processor).
  • Add eggs, almond milk, vanilla and stevia.
  • Whiz in NutriBullet, blender, etc. until beans are pureed and mixture is smoothly blended.
  • Pour into a mixing bowl.
  • Add dry ingredients, mix.
  • Add agave, mix, taste and add more if desired.
  • Pour into a greased 8 inch square baking pan.
  • Bake about 18 to 20 minutes or until a knife inserted near the center comes out clean. (Adjust baking time if using a different size pan.
  • Immediately place the pan in the freezer to cool quickly (about 10-15 minutes - do not try this with a glass baking pan - only metal is safe for this). Alternatively you can just let them cool in the pan on a rack, but this will take much longer.
  • Cut into squares. Can refrigerate remaining brownies by covering them with plastic wrap.

1 cup rolled / quick oats (( use gluten-free oats if necessary ))
2 15 oz can black beans (drained and rinsed ( about 3 cups cooked ))
1 1/2 cups dates (( about 260 g ))
1/4 cup cocoa powder
1/2 cup peanut butter (( or other nut / seed butter )*)
2 teaspoons baking powder
1/2 cup plant based milk
1 teaspoon vanilla extract (optional)
chocolate chips (to top)

Steps:

  • If your dates are dry, start by soaking them in boiling hot water for 20 minutes to soften them up. Skip this if your dates are fresher and moist.
  • Preheat oven to 180 c / 300 F. Lightly grease or line a 8x8 square baking pan.
  • In a food processor, place in rolled oats and blend until a flour like consistency forms, about 30 seconds.
  • Place the rest of the ingredients and blend until a smooth batter forms. Feel free to stir in some chocolate chips.
  • Transfer the batter to the baking pan. Using the back of a spoon or spatula, smooth out the batter. Optionally, top it with more chocolate chips.
  • Bake it in the oven for 25-30 minutes, or until a toothpick comes out fairly clean. A few crumbs left is generally ok.
  • Let the vegan black bean brownies cool to room temperature in the pan before slicing into it and enjoy !

  • Preheat an oven to 350°F (177°C) and lightly spray an 8x8 metal square pan with nonstick spray. I found these to cook much better in a metal pan than a stoneware dish.
  • Add the beans, syrup, applesauce, baking powder, vanilla and salt to a food processor and blend for a minute. Scrape the top and sides and then add the cocoa powder and oat flour. Process for a minute or so. Scrape down the sides very well and process again for another 1-2 minutes. Walk away and let it run until completely smooth. It should be smooth and thick, like the consistency of a nut butter. Don't judge the result by the taste of the batter (if you try it) because it tastes slightly beany, but not at all once baked! Add the chocolate chips and give it a good stir around the bowl with a spoon to incorporate them, but don't blend them.
  • Spread the batter into the pan, making sure to scrape out ALL of the batter from the processor, including underneath the blade. I used a skinny rubber spatula to get it all out and spread the top of the batter flat and out to the corners of the pan. Dampen the spatula with water to help if necessary, as it will be thick and sticky. Sprinkle extra chocolate chips all over the top and make sure to gently press them into the batter, so they remain in tact while baking.
  • Bake for 25-30 minutes when they are slightly puffed up and the top is firm. I removed mine at 27 minutes. Do 25 minutes for a more fudgy brownie and closer to 30 for a more dry/firm brownie. I felt 27 mins was perfect. Fudgy, moist and firm. They will seem a bit undercooked at removal but will continue cooking and firm up as they cool, trust me. Let them cool at least 20 minutes before slicing them. If not avoiding fat intake, then serve with my Vanilla Cheesecake Ice Cream!
